For those who like their Pinot Noir to be long, savoury and lean, with oodles of fruit to wax lyrical about. A collation of harvests from the Sexton and Tarraford vineyards, with contributions from a fraternity of superior local growers. The uncrushed grapes are wild yeast fermented and treated to a light carbonic maceration in the manner of a Beaujolais, achieving a vigorously fruit driven Pinot Noir with crisp acids and stirring aromas. Innocent Bystander seek Pinot Noir grapes with perfect ripeness and sugar balance. Vineyards are selected for their high diurnal temperature range, to achieve wines with high natural acidity and low pH. All grapes are hand picked, a large portion of the fruit is included as whole bunches, uncrushed and unstemmed into open top fermenters. A term of cold soak at lower temperatures is followed by inoculation, mainly through the action of wild, indigenous yeasts. Variations of pigeage and remontage are applied. The major part is treated to malolactic and several months in French oak barriques to enhance complexity while infusing mouthfeel and texture.
 
Medium purple hues. Nose of dark cocoa and poached cherry, hints of truffle oil and tobacco leaves, wet earth and berries of the forest. Ripe cherry and mixed fruit compotes, bramble with a hint of tar and seasoned grilled meats. A round fresh palate showing rhubarb and radicchio over the twang of chalky tannins before a slippery, rich and slightly tart finish.

Irrewarra vineyard was established to the eastern environs of Lake Colac by the Calvert family in 2001, predominantly six acres of a mixture Pinot Noir clones on own rootstock. A magical place defined by an eloquent expression of terroir, its long, fruitful growing season extends to mid April, as the closely packed bunches of Pinot Noir ripen fully into juicy treasure chests of flavour, adroitly lined by the finest, satin sheen tannins. Its bucolic splendour of animate pasteurs, wild cherries and sun dried spice, resonate long and lovely on an elegantly structured, texturally mineral palate.

The story of Jacobs Creek as a brand began not very far from Adelaide Hills, it has evolved over time to represent a timeless narrative of the nation's rich and enduring traditions in viticulture. Sparkling wines call for cooler, slow ripening mesoclimes, the chilly altitudes and undulating aspects of Adelaide Hills deliver an exceptional quality of fruit that's ideal for the sparkling style. Chardonnay and Pinot Noir are separately treated to vinification and a course of malolactic to achieve a creamy mouthfeel. Secondary ferments in bottle, exposure to seasoned French oak hogsheads and a term of maturation in contact with yeast lees, builds richness and texture while infusing complexity.

Jacobs Creek are well resourced for the production of fashionable, stylish of Rose sparklers. Parcels of fruit from cooler districts achieve acid structure and length, whereas the warmer regions contribute richness and depth of varietal fruit characters. Gentle pressing in the winery produces juices of elegance, finesse and soft flavour, essential for the making of quality Rose sparkling wine. Following full malolactic fermentation, which adds palate richness and creamy complexity, the base wines undergo a secondary fermentation within their own bottle. A degree of natural pink colour is retained through the winemaking process to achieve the sparkling Rose style.
 
Soft pink colour with a fine and persistent mousse. The lemon citrus aromas of Chardonnay are in harmony with the cut strawberry and red currant characters of Pinot Noir. Generous red berry and citrus fruit flavours enrich the palate with creamy yeast autolysis providing depth and flavour. In 1986, Heemskerk was joined by the noble House of Louis Roederer in a pursuit of the definitive Australian sparkling. Louis Roederer shared in the belief that the climate and soils of Tasmania, so similar to those of the great winegrowing appellations in Burgundy and Champagne, were ideal for the production of finely structured Methode traditionelle. The essential Chardonnay characters of citrus and stonefruits, mingle with the rich autolysis of almonds and brioche, to build a rich and creamy, textural weight of fruit on the generous palate.

The Heemskerk Vineyard was established in 1975 at the heart of the Pipers River district, the birthplace of Jansz Tasmania. The diligence of the team that tends the vines is rewarded by parcels of the highest quality fruit. Attention to detail in the vineyard, with crop thinning and disease monitoring, are essential to great winemaking. Every block of the Jansz vineyard is individually harvested by hand and treated to a gentle vinification, batch by batch, before a well considered assemblage. Four years ageing in bottle on yeast lees achieves classical yeast complexity in the final wine. Much of the finished wine is fermented and aged in French oak hogsheads for nine months.
 
Pale gold hue, a delicate bead and gentle persistent mousse. The nose is greeted by lemon curd, white flowers, creamy notes and brioche. The palate exhibits aromatic strawberry flavours, delicate rose petals, crème brûlée and candied lemon peel characters. Elegantly layered, powerful with mouthfilling richness, Jansz finishes to a mouth watering natural acidity.

The pick of Pipers Brook fruit, hand chosen off the most superior blocks within the finest Tasmanian vineyards. All batches are kept separate throughout the winemaking process to encourage articulation of seasson and terroir, while enhance the complexity of the final Cuvée. A rich course of vinification in French oak barriques, components are treated to secondary ferment in bottle, followed by an extravagnat two and a half years on sedimentery yeast lees before disgorgement, liqueue doseage and reseal. A dash of fine tannin from barrel fermentation complements the luscious, creamy layers of an effusive, expansive wine.
 
Argyle pink hues. Fragrant and indulgent nose, rose et cerise, quince blossom and strawberry, overlaid by truffle, boulangerie and notes of sweet brioche. Rich and elegant palate, a delightfully pure expression of Pinot Noir articulating the masculinity of delicious red fruit, turkish delights and the savouryness of fine gourmandise. Fine natural acidity delivers a refreshing mouth watering finish.
