Parcels of Chardonnay grapes with a slightly larger component of Pinot Noir are hand picked from the most prestigious vineyards within the comprehensive Hardy viticultural portfolio in Tasmania. Following a gentle whole bunch press and fining, individual batches are vinified on light grape solids before the completion of malolactic on primary ferment lees. Once clarified, the base wines are judiciously assembled to style and prepared for secondary fermentation in bottle. Extended maturation on yeast lees builds further complexity and depth of character into the wine. A traditional expedition dosage completes the process, adding the last components of complexity and ensuring precise palate balance. Alcohol 12.4%
 
Crystal clear with an extremely fine bead and persistent mousse, delicate colour of fresh straw with a bright green/ gold hue. On the nose, the wine has an unmistakably inviting and complex melange of aromas with influences of fresh oyster, sour dough yeast as well as the aromas of exotic spices, vanilla bean and nougat. An elegant, mineral palate structure with flavours evolving in the glass around lychee, truffle, cinnamon and lanolin. Exhibits fantastic persistence of flavour, the natural acidity and subtle quality oak tannins are the backbone of this textural wine. Sealed under the highest quality cork available, sublime upon release, Brut Elite will continue to evolve and develop exceptional complexity.

Arras was founded on the vision and spirit of the highly dedicated Hardy winemaking and viticultural team, who believe Tasmania to be the preeminent sparkling wine region of Australia. To this end, Arras seek to identify and capture each individual personality of every varietal grape and every corner of the vineyard, to craft wines which are unique, alluring and distinctively Tasmanian. Cuvee EJ Carr is a noble cepage, predominantly Chardonnay with a third Pinot Noir. After ten years resting on lees, it is the patience to allow the wine to mature at its own pace and the experience to know when it is at its best which has allowed EJ Carr to achieve new heights in richness, complexity and intensity. Crystal clear with a fine and persistent bead, deep straw in colour with a bright yellow gold hue. The nose shows intense mushroom/ butter/ toast characters with lanolin and oyster nuances. On the palate, the wine is rich and flavoursome, whilst very complex and intense. Multi layered flavours of truffle, toast and sea brine combine with a great length of flavour and brightness. A dry style with a refreshing, natural acid finish.

The Arras team retain access to an endowment of the finest sparkling wine vineyards in all Australia. Choice parcels of fruit, hand picked off the best blocks within the finest sites, are gently whole bunch pressed, retaining only the first free run juices, to retain freshness and elegance of structure. After a term of cold settling, the individual batches are vinified on light grape solids, followed by a course of malolactic on primary ferment lees. Once clarified, the wines are judiciously assembled to style and prepared for tirage. Six years maturation on yeast lees has built additional complexity and depth. Degorgement and introduction of expedition liqueur completes the Methode traditionelle.
 
Straw gold hue, crystal clear with fine bead and persistent mousse. Bouquets of orange peel and clove, a sea brine influence, complexed by fresh brioche and pastry yeast aroma. Like the bouquet, lively flavours of sea brine, citrus peel and sweet jasmine flower are complemented on the palate with truffle and butter/ mushroom characters. A racy acid and great persistence of flavour ensure an exciting finish.

The fragrant red fruits of Pinot Noir dominate, the layered complexity of applejack, rhubarb and bakers spice, all supported by a juicy orchard acidity, a modest frame of flattering tannins and the toothsome creamyness of liqueur expedition dosage.

Stephen George established three hectares of dry grown vines in Piccadilly Valley during the early 1980s, yields from this tiny patch of terroir remain extremely scant. A juggling act of no fewer than fifteen different clones to construct the consumate Adelaide Hills Pinot Noir, from a terroir and mesoclime very similar to Burgundy, a labour of love for one of the industry's most accomplished and venerated identities. Blend No.1 is made from fruit grown to Jim Griggs neighbouring Cemetery Block vineyard.

The cool, moist climes which surround the seven acre, steeply sloped Ashton Hill property sublimate into ideal food wines, well proportioned and fully flavoured. Pinot Noir grows well on the Ashton Hill property, coinciding with the proprietor's own love of all good things Pinot Noir. Stephen George grew up amongst the vines at Glenloth near Reynella and nascent Skillogalee in the Clare Valley, which was originally planted to vine by George's father in 1970. He is one of South Australia's most peer respected winemaking viticulturalists, a pioneer of Adelaide Hills Pinot Noir and a consultant to Clare Valley's eminent Wendouree, recipients of the exceptional Langton's classification of Australian wine.
 
Bright scarlet colour. Complex bouquet of currants, cherry and red fruits, spices, earth characters and leaf. Palate exhibits exceptional balance and superb length, luscious, berry flavoured tannins courtesy of bunch stalks in the vinification, all nicely integrated after nine months repose under French oak.

Ata Rangi founder Clive Paton has long been an avid tree planter and has won a number of awards for his significant contribution to the environment. Paton approached the Project Crimson team for advice and support, a charitable conservation trust established for the protection of New Zealand's iconic native red flowering Christmas trees, the pohutukawa, the northern and southern rata. Crimson is sourced primarily from vines between ten and twenty years of age, which yield grapes that express the more aromatic spectrum of Martinborough Terrace.

Project Crimson were keen to have an association with this special wine to help spread word of their work and vision. A close husbanding of the vines to the most exacting standards ripens the Pinot Noir to perfection. Grapes are all hand picked off vines clone 5, 10/5, Abel young Dijon. Bunches are completely de-stemmed keeping as many of the whole berries intact as possible. Parcels are treated to a term of maceration for up to a week before inoculation by indigenous yeast and malo cultures. The batches are hand plunged throughout a fortnight of vinification and complete malolactic in barrel. The finished wines are matured nine months in a selection of new and prior use French oak barrels.
 
Colour of course is crimson. Dark cherry fruit and earth complexity, crushed rose petal, light cherry, brambly notes and a hint of red licorice conspire to create an enchanting, heady fragrance. More savoury than fruity, a faint hint of clove and fresh cardamom adds intrigue to the nose. Easily the most seductive feature of this release is the wonderfully plush, velvety middle palate, the fine, textural spread of tannins and long, tight, spicy finish.

Crafted from the pick of Martinborough Pinot Noir, clones 5 and 10/5, Abel and a suite of younger Dijon, all grown to the elite of New Zealand viticulture. Fashioned to regimens which are very old world, with a view to constructing a wine which would be familiar to the Vignerons du Bourgogne. Wild ferments, hand plunges and French oak, achieve a wine of truffled game complexity, graceful tannins and polished, refined sophistication. Proprietor Clive Paton was made Officer of the NZ Order of Merit, for his contribution to conservation and viticulture.
