Francois Coueslant was a pioneering viticulturalist who made a major contribution to bringing Australian wines to the world. Winemaker manager at Tahbilk from 1877 to 1886, described in the Australasian at the time as a practical vigneron from France, a gentleman of progressive ideas, ever ready to adopt new and improved methods. Coueslant successfully lead the fight against the vine killing phylloxera louse, built the iconic estate tower and added Chateau to the Tahbilk label, a moniker which remained in use until 2000.

Single vineyard winemaking and Pinot Noir go hand in hand, such is this noble varietals faculty for translating terroir into taste. This tempermental grape demands utmost sensitivity and care, the savoury, brooding characters of Martinborough Pinot Noir are revered and preserved by an artisanal winemaking team obsessed with quality. Eight clones of Pinot Noir, picked off more than forty different parcels on stony soils of the higher terraces at Te Muna Road Vineyard, are woven into a deep dark wine, unravelling layers of fruit and wrapped in silken textures.

Te Muna Road Vineyard is located seven kilometres outside the Martinborough township, at a higher elevation which delays harvest by a week. Stylistically the Pinot Noir here exhibits profound complexity, a reserved intellectual mouthfeel and impressive length on the palate. The vineyard consists of two distinct terraces, one comprised of very old stony soils at a higher altitude, producing exceptional Pinot Noir. Hand picked grapes are gently destemmed, a small amount of whole bunches are included. Fruit is inoculated to a mixture of wild and cultured yeasts, vinified in a mix of open top fermenters and small oak cuves, followed by ten months in a selection of French oak barriques.
 
Bright cherry, crimson hues. Bright aromas of cherry, raspberries and dried sage with a hint of smoke for an enticing nose. The palate is well structured with layered fine tannins giving a texture of silk and rose petals. Flavours of black fruits and floral, backed by mushroom and bark, fennels and spice. Dense yet elegant and poised, the taut, focused fruit tannins sit seamlessly on the silky savoury finish.
Croser Late Disgorged

Croser is only disgorged after ten years repose in bottle under the Petaluma wineworks, ensuring extended contact on yeast lees, which contributes to the extravagance and luxurious palate weight. Fashioned from elite parcels of fruit grown to the finest vineyards in Piccadilly Valley, Croser is at once bigger in colour and more intense in flavour, dominated by the ripe jonathon apple of Pinot Noir. Grapes grown to the cooler south and west facing slopes contribute impressive natural fruit acids which infuse the wine with exquisite flavours and dazzling aromas.

A stylistic evolution after many semi annual releases, the aim being to refine and advance the unique flair while remaining true to the magnificent aperitif style of classic Croser.

The cool ripening seasons and adequate dirunial rainfalls of Piccadilly Valley are ideally suited for growing elegant Chardonnay and Pinot Noir. Hand picked fruit is either whole bunch pressed or crushed and pressed. The free run juices are inoculated using Petaluma's special strains of yeast and fermented in barrique and tank. The tiraged sparkling wine is left to age on yeast lees for eighteen months and disgorged on demand, ensuring the wine retains exhibits freshness and vitality upon release.

An exclusively South Island Pinot Noir, sourced from a number of small growers in the esoteric and bohemian quarter of vineyards around Nelson River, with components drawn from good sites in Marlborough. A variety of clones, as well as some diverse microclimes, have provided a great spectrum of flavours to craft an elegant, distinctively varietal, engagingly complex wine. An exemplary, regionally focused Pinot Noir with gentle spice and ample cherry fruit, clearly planned with good food in mind. Raise a glass to all those dedicated, independent growers.

The quality of fruit is central to Crowded House, sourcing the finest possible from the best growers is fundamental. New Zealand's best vineyards form the foundations of Crowded House, translating into wines that are balanced first and foremost. Parcels from Marlborough, Central Otago and Nelson River have been woven into a tapestry of charming pinosity, robed in gentle tannins and cradled within a basket of lithe oak. Fermented in small batch open top fermenters, a long cold soak is followed by several days of vinification. Some batches are treated to extended skin contact before being pressed to oak. Others are fermented to wild indigenous yeasts before ageing in a mix of new and prior use oak.
 
Bright ruby red with hues of brick. Raspberries, pomegranates and cherry bouquet, dark chocolate, spices and toast. Long fine tannins intertwine seductively with dark cherries, vanilla, cinnamon and earth, complimented by a generous and silky mouth feel. The palate is fleshy and balanced by fine tannins before a pleasant, lingering finish. The flavours and textures persist long after the last sip.

The story begins with the wedding of Nicholas Francois Billecart and Elizabeth Salmon, out of which was born the Maison Billecart-Salmon, established 1818 near the present site at Mareuil-sur-Ay. Two centuries later, the seventh generation takes charge of crafting the noble wines, maintaining the spirit of Champagne and passion for the grape. Most noteworthy of Cuvee Elisabeth Salmon, is the harmony of expression within the selection of parcels Chardonnay and Pinot Noir, a timeless accord between Billecart-Salmon and the legacy of ancient grower families.

Nicholas and Elizabeth reclaimed the coat of arms of their ancestor Pierre Billecart, a councilor to the King of France. A tribute to the co-founder Elisabeth Salmon, this Cuvee is fashioned from an equal blend of Pinot Noir and Chardonnay, vinified as white wine, to which some Pinot Noir from Mareuil-sur-Aÿ, vinified as a red wine, has been added. Billecart-Salmon operates approximately thirty hectares of it's own estate vineyards, but the bulk of the grapes arrive from a total area of a hundred and forty hectares, grown by some of Chapmagne's most ancient winegrowing families. Closest to the heart of Billecart-Salmon lie the three core values of balance, elegance and finesse.
 
Coppery pink hues, an outstanding perlage, a lasting mousse. Delicate hazelnut nose, crisp red berries, citrus peel and stone fruits, herbaceousness, marzipan, vinosity, boulangere and spice. A finely complex palate, nectarines and peach parfait, softly spiced and aromaticness, creamyness, layers of chiffon fruit, will accompany the most superb cuisine, a hedonistic joy.

Cuvee Nicolas Francois established it's reputation during a blind tasting of over one hundred and fifty of Champagne's greatest vintage wines. Organized by the highly esteemed Champagne consultant Richard Juhlin and attended by a panel of international experts, Cuvee Nicolas Francois was selected as the most outstanding Champagne. Paradoxically, Nicolas Francois claimed second place as well!. A few weeks later at a Sotheby's auction, a magnum of Cuvee Nicolas Francois made world headlines when it established the world record price.

The exceptional Cuvee Nicolas Francois was created in 1964 as a tribute to the House's founder. It results from the blending of Grands crus from the classified Cote des Blancs Chardonnay vineyards and the Montagne de Reims Pinot Noir. Its vinification, partially in traditional casks, underpins the generous character of this elegant wine.

The freshness of Cuvee Nicolas François Billecart develops all its aromatic complexity, aromas of white flowers mixed with subtle notes of brioche. The balance between richness and persistence is the hallmark of this accomplished wine. Dalrymple Cottage Block Pinot Noir
Pipers Brook
Available in cartons of six
Cottage Block is well sheltered from the cool north westerly winds of Pipers River, a slightly warmer microclime which produces small yields of intensely flavoured berries. Most of the harvest is destemmed, macerated and hand plunged, racked to a high proportion of new French oak barriques for malolactic and ten months maturation. The best barrels are treated to a further sixteen months before release. Darkly spiced beetroot and rhubarb, a firm tannin framework underpins refined acidity, a conspicuous freshness and vibrant lift to the finish and magnificent length.
