Riposte means a quick comeback, reply or retort, in the sport of fencing it is the term for a swift counter stroke. After more than a decade of confusion about the Tim Knappstein name and eponymous wineworks, Riposte was chosen as the appropriate moniker for Knappstein's comeback label. Pinot Noir clones are treated to a minimalist, hands on vinification in the traditional old world way. The Dagger has been finished to a vibrant and rich, earlier drinking style of Adelaide Hills Pinot Noir.

En garde! The illustrious Tim Knappstein has returned with the cut and thrust of Adelaide Hills Pinot Noir. Knappstein hails from a long lineage of great winemakers, he was the first to plant vines at Lenswood in 1981. He still lives amongst the undulating aspects of Adelaide Hills and works with the most dedicated growers. Knappstein has accumulated the experience and skill to put all his efforts to bear on any style of his choosing. Pinot Noir is sourced from some of the eldest and most distinguished sites in the premiere precincts of Lenswood and Piccadilly.

$3399each $407DOZEN EACH DOZEN Of great interest to Knappstein is the spread of ripening between newer clones Pinot Noir, 777, 114 & 115, as opposed to the established MV6, D4V2 and D5V12. The newer clones ripen earlier and are better suited to the cooler, higher aspects of Adelaide Hills. The Knappstein team work closely with growers to produce moderate yields of superior quality fruit, well exposed to sunlight for optimal development of colour, flavour and tannins. The Sabre is made in small batches, all parcels are cold soaked and hand plunged in traditional open fermenters, treated to full malolactic and ten months maturation in a mix of seasoned and new French oak barriques, followed by a minimal filtration.

Scarlet purple colour. A substantive nose of ripe red berry fragrances, garden vegetable, barnyard and game. An opulent palate of earthy dark fruit flavours, currants and black cherry, tomato leaf and piquant bucolic characters, supported by a fine length of firm yet malleable tannins, sheathed within a an inseparable frame of sassafras oak, all providing balance and structure.

The region is now best known for its excellence in viticulture, Robin Brockett takes his pick from the most superior vineyards. Fenwick makes mighty Pinot Noir, a rich and complex style of sweet red rhubarb, strawberries and parched forest fruits, pursing whole bunch notes and savoury stalk, its juicy red berryness over soft well defined tannins, pastoral freshness, sasafras spice and timely oak.

Each and every vintage presents Robin Brockett with a new challenge, no two growing seasons are the same, a truly great vineyard will take the vagaries of vintage and achieve a harvest that's truly unique. Brockett takes the fruit that's most articulate of terroir and clime, there's never very much of such high standards, enough for just a hundred cases of Bellarine's best. The fruit of Swinburn Vineyard is defined by its dark red fruit pectins, thick skinned cherries and dewy bramble, a curl of cedar oak and twist of the spice mill, a seamless ruby tannin finish.

Central Otago is renowned for its stunning scenery of rugged mountains and picturesque lakes. Rockburn is bounded on the west by mountains whose seaward slopes are covered by rain forest, to the east is a barren, moon Iike landscape that receives less than 25mm of rain a year. Situated between these extremes, Rockburn's vines yield a stunning wine, one has only to taste a Gibbston Valley Pinot Noir to be completely won over by its elegantly perfumed nose, lifted violet fragrances and earthy, forest floor sensations on the rich, generous palate.

$4099each $491DOZEN EACH DOZEN Pinot Noir clones 10/5 and 5, 6 and 115, 667 and 777 are harvested off vines trained to vertical shoot position. A mostly Parkburn vineyard wine from fruit grown to a top cover of 10cm to 15cm loam soils over river gravels, a minor component of Gibbston fruit comes from a somewhat similar terroir. Windy climes enjoying plenty of heat and mid summer light yield parcels of well ripened, reduced Pinot Noir berries. Fruit is place into seven tonnes fermenters and treated to several days cold soak followed by a week of plunging and ferments. Upon completion, batches are macerated for a week or two before transfer to a high proportion of new, exclusively French oak barrels for ten months maturation. Alcohol 14.0%

Dark purple. Lifted nose of blue florals and intense raspberry/ cherry fruit, delicate florals enhanced by of dark chocolate notes. A pure expression of Central Otago on the palate, deeply layered with vibrant flavours of red and black cherries, rich mocha characters and forest floor complexity, all supported by a length of supple silky tannins, resolving on a long, lingering, fully aromatic finish. The distinguished and enduring estate vines are treated to a naturally organic, chemical free husbandry, for a quality of wine which speaks for itself. Rymill's auspiciously slow ripening vineyards may be essential to the famous Coonawarra Cabernet, they are also well disposed to yield harvests of Chardonnay, Pinot and Meuniere for the realization of richly flavoured sparkling wines with regional identity and a real sense of place. The traditional old world practice of fermenting in own bottle achieves beautiful texture, creates a delicate bead and contributes to the luxurious mouthfeel.

Pale straw hue with a copper tinge. Beautifully perfumed with complex aromas of white roses, sweet hazelnut and red delicious apples over a vibrant background of fresh cut limes and zesty lemon. Fresh, crisp flavours of citrus fruits and apples linger at the finish alongside notes of pear and freshly baked brioche.
