A compilation of parcels Shiraz from McLaren Vale and Langhorne Creek, barrel fermented and matured in a high proportion of new American oak. Cherries and raspberry leap out of the glass, coconut and carob for palate weight, turkish delights, mocha and mint. The engaging and entertaining flavours of Miss Molly make her anything but shy, her fine effervescence releases the flavour of fresh berries, chocolate plummyness and liquorice allsorts enriching the palate. So beguiling and very, very fine, Miss Molly puts the sparkle in McLaren Vale Shiraz.

Morris of Rutherglen Sparkling Shiraz Durif

Rutherglen is possibly the only productive enclave of world class Durif wines anywhere on earth. It also yields a quality of Shiraz that's unique in the world of wine, by virtue of the region's phyloxera and quarantine of vines. The Morris family have been making wine at Rutherglen since 1859. Within thirty years of establishment, their flourishing operations had made Morris the largest wine producer in the southern hemisphere. Introductions aside, Morris make an effervescent red wine of remarkable intensity, profound richness and sheer class.

Morris draw upon barrels of maturing stock from across several vintages to assemble a generously flavoured yet brilliantly integrated red wine, before initiating a secondary bottle fermentation and liqueur doseage. Historically Shiraz has been the variety used in Australian sparkling reds, but by adding components of the world renowned Rutherglen Durif, extra complexity and balance has been imparted to the flavour. A range of older vintages are balanced against younger wines, which are used to provide the fruit lift. After assembling all components, the wine is bottled with an addition of Rutherglen yeast and allowed twelve to eighteen months contact before disgorging and resealing under tirage.
 
Crimson, a generous purple mousse. Rich fruit bouquets, Shiraz spice, yeast complexity and a hint of oak maturation. Rich and full flavoured palate, plum and blackberry and fruit jam flavours, chocolates and dusty carob over gentle, soft tannins. The powerful flavours linger long, complex and rich, a strawberry tang and licorice spice balance the excellent sweetness.
Mr Riggs Battle Axe Sparkling Shiraz

An assemblage of Mr Riggs wines up to ten years of age, enhanced by an older parcel of Grenache for lift and spice, finished off with a tot of fortified Shiraz from the prestigious Piebald Gully Vineyard, contributing subtle sweetness to a richly complex wine. Battle Axe is a tongue in cheek reference to dearest mother in law, she appears formidable with her powerful pink effervescence, ultimately soothing the palate with her generous nature and refined affability but beware the after punch of her dark fruityness and engaging depth of character.

Joe Grilli and David Tait set about crafting this unique Cuvee with Adelaide Hills Shiraz as the predominant base wine, introducing a part of Moda Cabernet Merlot from every vintage since 1991, a hogshead from each year since 1989 also goes in. A sizeable component of the blend consists of a random mixture of very old vintage stocks Australian reds of various wineries and dates, acquired at auction. This imparts a real antique slant to the finished wine. After traditional fermentation in the bottle and resting on sedimentery yeast lees for a year, Joseph is mindfully liqueured to ensure a drier style and to obtain a perfect balance, with a mixture of old Australian ports from the last century.
 
Deeply coloured, a superfine bead. Currant and blackberry bouquets, clove and some rancio, menthol and earth. This is wine of proportion and folklore, a seamless palate, showing some nicely aged characters, oak just discernible, with a drier than average finish. It is creamy fresh, a serious wine, it can also just as easily be served for a lighter entree or as a very special aperitif.

The Schild Estate vineyards sprout Shiraz grown to vines planted by the earliest Barossa settlers. Slightly cooler than its northern neighbour, the southern end of the Barossa Valley is perfect for growing Shiraz vines capable of providing lush, generous fruit, ideal for the production of sparkling Shiraz. A single vineyard wine from a small parcel on the estate Aherns vineyard near Lyndoch, harvested in mid March each year, destemmed and left on skins over several days for extraction. Juices are vinified in open top fermenters and allowed to develop for a year in seasoned French and American oak hogsheads. The wine is then put through a secondary fermentation and doseaged prior to bottling.
 
Dark cherry red, persistent mousse. Rich and inviting aromas of blackberry, dark plums, cherries, chocolate and licorice. Vibrant berry fruits and pepper spice are supported by a soft tannin structure with balanced acid and sweetness giving the wine a fine bead and creamy, elegant mouthfeel. Schild is an ultra fine example of a uniquely Australian winestyle, the finish is fresh, plush and lingering.
