Cape Barren Native Goose Chardonnay

The generously proportioned, big boned, leesy French oak genre, Dijon Bernard Clones 76 and 95, harvested off fully mature vines, thirty years of age at Charleston in the Adelaide Hills. Grapes are destemmed and pressed for vinification on gross solids before transfer to French oak hogsheads for completion of ferments, in the old world way. Treated to lees stirring and partial malolactic for textural opulence and palate richness, its creamy grapefruit nougat palate will appeal to enthusiasts of the medium to full bodied white meat styles of Chardonnay.

The wine represents the vagaries of climate, individuality of site, the complimentary characters of the two varieties and a restrained yet evocative winemaking approach. Wallcliffe is crafted to evolve and to develop different characters and complexity. Treat Wallcliffe to scallops or sticky belly of pork.

Cape Mentelle enjoy access to some of the Margaret River's most elite vineyard sites, and have long been one of the region's most ardent formulators of classy white wines. The Wallcliffe Vineyard was established on a ridge of free draining lateritic gravel between 1970 and 1972. Sauvignon Blanc and Semillon were grafted onto shiraz vines in the early 1980s and today produce the distinctive fruit. Wallcliffe is a wine that creates itself in the vineyard. Plainly fermenting the different plots individually in French oak barriques helps to build and define individual characters. A selection of the best barrels are then blended to make a wine which best reflects the characters of the season and the vineyard.
 
Aromas of lemongrass, citrus blossom, lychee, coriander and wet slate. The fresh citrus fruit characters of the nose transfer seamlessly to the palate, with some white fleshed nectarine and subtle smoke characters also evident. The palate is tight and focused complementing the creamy texture derived from wild yeast barrel fermentation and leads to long bright and expressive finish.

Originally a coach inn for travellers on the three day journey between Perth and Margaret River, Cape Naturaliste also served as a destination for whale ships taking on supplies of vegetable grown to the valley's rich alluvial soil. A holistic, bio-dynamic philosophy, practised amongst the vines at Cape Naturaliste, yields harvests of grapes which are as natural as those picked off vineyards long ago. A brisk fermentation achieves the clean, fresh palate for which this style is so renowned.

The undulating topography of Cape Naturaliste is an asset for drainage. Sea based fertilisers and a fish head soup are employed to increase the micro- biologic life of soils. Norwegian Kelp is used as a foliant spray and has an immediate effect on the health of plants, contributing to evenness of fruit set. Pruning techniques, cropping levels, canopy treatment and restricted intrusion from vehicles, are just some of the measures taken to ensure that this unique vineyard produces the cleanest and healthiest fruit in Margaret River. Parcels of Semillon grown to rich alluvial flats are vinified alongside Sauvignon Blanc planted to sandy loam over limestone, alluvial flats and quartz gravels, to be bottled promptly upon completion.
 
Very pale grassy green hue. Bouquet shows stonefruit and tropical notes followed by hints of citrus. Fresh herbal flavours add weight to the palate which finishes clean to zippy acidity and a closing impression of freshness. A touch of barrel ferment on occasion is added to the wine, achieving a fuller mouthfeel and contributing to the wonderful depth of palate.

Dutch explorer Gulden Zeepaard was not the first tall ship to chart the coast of Western Australia but she did predate Captain Cook by a century and a half. Today, Gulden Zeepaard's logo adorns the label of West Cape Howe. Headquartered within the grounds of their undulating home vineyard at Mount Barker, the West Cape Howe team collate parcels of Semillon and Sauvignon Blanc from across the finer viticultural precincts of the Australian west, for the construct of an intense wine which would unnerve its laureate siblings from across the Tasman.

Harvests of Semillon and Sauvignon Blanc are selected from vineyards at Pemberton, Great Southern and Margaret River. Fruit is crushed with minimal sulphur and chilled prior to pressing. Free run juices are kept separate and pressings fined to remove phenolic compounds. After a period of cold settling, juices were racked and filtered, followed by inoculation through choice yeasts and cool tank vinification at a steady rate for two to three weeks, the temperatures closely monitored and controlled. Upon completion, the components were racked and the final assemblage determined, promptly followed by an early bottling to retain freshness.
 
Pale straw yellow hues. Highly aromatic style exhibiting tropical notes with subtle citrus and fresh grass aromas. A vibrant and flavoursome palate combining the ripe, textural elements of Semillon with lighter refreshing Sauvignon Blanc characters. Stone fruit flavours, citrus notes and refreshing acidity combine to give the wine a clean, moreish finish.

Semillon and Sauvignon Blanc are harvested at optimum ripeness, crushed and de-stemmed, the musts are chilled and dejuiced. After three days of cold settling, juices are racked off and an aromatic yeast is introduced. Fermentations are halted early to aid in preserving the natural grape sugars and to add body and enhanced fruit character to the finished wine.
 
Pale straw hues. Freshly cut grass aromas, pink grapefruit, passionfruit and gooseberries, Primary fruit in the middle palate maintains interest from start to finish, flavours of lemon and preserved rind, fruit salad and figs. A clean finish with lingering fruit characters. To accompany barbecued prawns, greek salad or goat cheese risotto.

Pemberton sits on the slow ripening southwest coast of Australia, fully blessed by the most appropriate climates and soil to make serious Sauvignon Blanc. The success of Australia's southwest regions are due in no small part to decades of viticulture by Capel Vale. Grapes from the cooler parts of Pemberton are harvested at optimum ripeness, crushed, de-stemmed and chilled. Juices are transferred to fermenters after three days cold settling and introduced to aromatic yeast. Vinifications are halted early to preserve natural grape sugars, adding body and enhancing fruit character in the finished wine.
 
Limpid pale straw green colour. Fine gravelly mineral aromas of Pemberton soils, citrus and cut grass, snap bean and snow pea working against a backdrop of mineral elements, kiwi and herbaceousness. The aromas are carried through to the textured palate, complemented by flavours of honeydew melon, tropical fruits, limes and flint. Match with grilled snapper, sashimi or goats cheese and truffle omelet.
