Palliser Estate enjoys a microclimate and terrain like no other. Harvests of Sauvignon Blanc grown to warmer Martinborough terroirs are generally more fruit forward, round and silkier than the racier South Island siblings. The unique maritime climes deliver harvests of exceptional quality fruit, low cropping levels translate into the essential ingredients of power and concentration, Martinborough is one of the few areas where this is naturally imposed by the weather. A backbone of estate grown Sauvignon Blanc is vinified in chilled fermenters alongside parcels from good local growers, followed by several months on sedimentery lees to build complexity.
 
Pale straw colour with youthful green hues. Full nose with voluminous aromas of pungent passionfruits, gooseberry and lime, lifted with some fermentation esters. Dry to taste, flavours of passionfruit, tropical fruits and English gooseberries, a little restrained and tight in expression. Bright and fresh, leading to a dry, minerally finish. This delicious and succulent wine is great drinking alongside Mediterranean and Middle Eastern faire.

Paracombe vineyard is nestled on a plateau 425 metres above sea level. Soil is lean with ironstone, buckshot gravel and quartz, an interesting remnant from an ancient riverbed. These characters along with minimal irrigation contribute a strong influence in wine style and flavour. Vines on the Paracombe estate are meticulously cared for, taking advantage of the morning sun for optimum fruit ripening, most are planted facing east. Fruit is harvested over four separate picks, predominately from the Drogemuller's Paracombe vineyard and specialist Adelaide Hills growers. Special aromatic yeasts achieve a wine of good flavour, balance and definition, with excellent natural acidity.

Chardonnay is a wine that Mornington does exceedingly well, the cooling maritime breezes of Port Philip Bay encourage vines to yield fruit with complex, crisp and intense varietal flavours. Lindsay McCall is gifted at constructing the most auspicious efforts across a range of styles. Estate Chardonnay is vinified entirely from fruit grown to a half hectare of the choicest plantings grown to three estate managed vineyards at Red Hill. An effusive Mornington wine with a presence of savouryness and layers of fruit, to accompany richly cooked shellfish or escalope of veal.

Paringa Estate wines regularly enjoy an unmatched level of success in as many trade shows and national competitions as they are entered, the only limitation being a relatively small size of production. Chardonnay is had picked off a single block of vines on the north side of Callanans Road Vineyard at Red Hill South. Whole bunches are passed through an air bag press to obtain the highest quality free run juices. Parcels are barrel fermented in a high proportion of new Vosges and Allier French oak barriques. Paringa spends almost a year maturing on sedimentery yeasts, whilst being treated to a course of monthly lees battonage for complexity and palate richness.
 
Medium yellow green in colour. Savoury bouquet of grilled nuts, lemon and mineral. The palate displays citrus and stonefruit, nectarine and peach, along with the creamy nutty characteristics introduced by barrel fermentation. The mouthfeel is long and rich, finishing with subtle malolactic caramel/ butterscotch flavours and good natural acidity.

An accord of choice Chardonnay harvests from four estate managed vineyards within the Red Hill subregion of Mornington. Paringa has renewed its focus on Peninsula grown fruit and have earmarked an inventory of fruit from the finest sites. Delightfully fruit driven after a brisk vinification and timely bottling, its ripe stonefruit and mandarin nose is beautiful almond milk flavours and nutty barrel ferment characters. Fine, elegant and intense, all the hallmarks of Paringa Estate.

The early success at Paringa Estate wines is a testimony to founder Lindsay McCall's passion and intuitive feel. Lindsay managed the ten acre vineyard and made wine, while maintaining a full time teaching job. The inaugural vintage was a mere three tonnes of fruit, it involved a very steep learning curve. Chardonnay is sourced from Paringa Estate paladin vineyards, including the Thacore property on Callanans Road and the Sea Vista site at Paringa Road. The winemaking process is almost identical to that of the Paringa flagships. Whole bunches are pressed to seasoned French oak barrels and treated to a partial wild yeast vinification on gross solids, followed by nine months maturation.
 
Medium to full yellow green. Bouquet is fruit driven with citrus and stonefruit characteristics, nectarine and peach in particular. The palate has similar tropical and stonefruit flavours combined with subtle nutty barrel ferment characters and good acidity. This is a lovely fresh wine that will provide excellent current drinking whilst continuing to develop.

Domaine Pascal Jolivet is relatively young, founded 1982, its wines can already be found in top Michelin star restaurants across France. Highly specialized at making Sancerre and Pouilly-Fumé of great elegance, balance and finesse, Pascal Jolivet are strong believers in letting nature make the wine, while endeavouring to articulate the suppleness of Loire Valley Sauvignon Blanc. Labelled for many years as Fumé Blanc, the vintages of Pouilly-Fumé are amongst the most charismatic and immediately appealing, refreshing white wines of all France.

The vineyards of Pouilly are 200 kilometres south of Paris, on the right bank of River Loire. Domaine Pascal Jolivet operate eight hectares of Pouilly Fumé around the villages of Tracy and Les Loges. Soil types vary greatly, Les Loges is very chalky, contributing body and length to the wines, Tracy is rich in silica, adding fruit to the palate and bouquet. Grapes are sorted by hand and crushed, each vineyard parcel is separately handled. Juices are treated to a long and slow vinification through the action of wild native yeasts in temperature controlled fermenters. Upon completion, components are left on sedimentery lees for four to six months, infusing complexity while building structure and adding texture.
 
Light straw lime hue. A clean nose of nashi fruits, lemon and thyme enhanced by luscious mineral gunflint notes. Focussed, decidedly mineral palate over layers of piquantly ripe fruit, wet stone and quartz, before a penetrating, acid line finish, resurging minerality and whisp of smoke. Superb as aperitif, a delight alongside good food, crustacea or goat cheese recipes.
Pascal Jolivet Sancerre

Pascal Jolivet are all about the refreshing wines of Valley Loire, from good vineyards in Sancerre and Pouilly Fume, the aim is to allow fruit to speak for itself, while encouraging the suppleness of Sauvignon Blanc to convey its eloquence. The vineyards of Sancerre are planted to hill countryside on the left bank of River Loire, right across the water from Pouilly Fume, where surrounding forests create a mild and favourable mesoclime. A delicious wine with revitalizingly dry fruit character and bracing minerality, to accompany shellfish and goat cheese soufflé.

The philosophy at Pascal Jolivet is to allow nature to take her course and permit the wine to make itself. The estate's three Sancerre vineyards are grown to three different terroirs, Les Caillottes is planted to very chalky soils, Les Terres Blanches is on calcareous soils, atop the highest hill in the west, the vines at Silex are grown to a mixture of limestone and flint. Every parcel from each vineyard is separately handled, wild natural yeasts initiate a long cool vinification in controlled fermenters, to enhance the character and charm of Loire Valley Sauvignon Blanc. Upon completion, components are held on sedimentery lees for several months, infusing complexity while building structure and adding texture.
 
Bright straw hue. Clean, crisp nose of citrus and lemon flower, brine, wet stone and flint. A powerful palate in perfect balance, smooth linear fruit characters are defined by splendid minerality. A Sauvignon Blanc of remarkable richness, elegance and finesse, to match with trout almondine, grilled flounder or coquilles meuniere.

Harvests are collated from fine vineyards across the premiere viticultural precincts of Veneto. Grapes are crushed and treated to a term of cold settling for clarification, followed by inoculation to choice yeasts and controlled ferments at 16C to 18C. Upon completion, batches are assembled into the finished wine and bottled for a term of age before release.
 
Straw yellow hues. Floral bouquets, acacia blossom, mineral notes, slateyness and meal, persimmons and pear. An intense, exquisitely balanced palate, filled with the fruits of the orchard, apples, nashi and pear. Wonderfuly textural and pleasingly dry, its parched citrus intensity makes a wonderful match with white meats, egg recipes or terrines.
