While the wood treatment in Wynns Chardonnay has gradually been reduced over the years, the style of oak is refined and plays an important but subtle role, enhancing the varietal characters through the use of techniques which ensure complexity. As a young wine it displays vital expressions of fresh cut melon, figs and citrus fruit finely balanced by vanillin oak. Hints of butterscotch and roasted nuts evolve as the wine ages. The enduring tradition continues at Wynns, a highly attractive Chardonnay that's immediately enjoyable yet ages magnificently.

Wynn's Coonawarra own and operate approximately 70% of the vineyards sited to Terra rossa soils, the lion's share of land and the most of any producer. As a pioneer of the region, they also retain the oldest vines. Wynns Chardonnay has consistently upheld a reputation for superior quality and value. The estate's Coonawarra resources make available parcels of fruit that can be fashioned into wines of classic varietal character and longevity. Grapes are crushed and inoculated in temperature controlled fermenters to retain the vitality and essence of Coonawarra Chardonnay. Components are matured for several months in a selection of French oak barrels to develop complexity.
 
Bright pale straw hue with green edges. Lifted white peach and nectarine fragrances are balanced by subtle cashew nut and nougat aromas. Elegant and crisp palate with distinctive poached pear notes. Nutty French oak barrel ferment characters highlight the gentle creamy palate and add texture. Soft stone fruit and citrus are reined in by the delicate acid , subtle citrus notes add to the seamlessness and length.

Like many of the world's great winegrowing regions, Coonawarra's climate is cool and marginal. This rejuvenating climes ensure a long ripening period that slowly builds up the intensity of flavours in the grape. The Riesling fruit here makes a wine exhibiting richness, intensity and depth of flavour with an excellent capacity for longevity. Wynns Coonawarra Estate constructs a Riesling that captures as much varietal character as possible in a fresh, light bodied, easy drinking wine. The fruit is harvested and inoculated with choice yeasts. Upon completion of ferments, batches are treated to a term of cold settling before assemblage into the final wine, bottled immediately whilst vital and fresh.
 
Pale green hues with hints of light straw. Crisp lemon aromas, the nose leads into white flowers and rich honeysuckle, fresh green apples are complimented by lifted floral notes. Gentle white floral and citrus notes balance out over the palate making a soft, approachable wine. Sherbet acid livens up the palate to give a refreshing finish. Just the right weight and clarity of fruit in this perennial favourite.
Xabregas Artisan Riesling

The Xabregas Mount Barker vineyards enjoy a microclime that's somewhat similar to some of Europe's great winegrowing districts. Riesling is afforded a great deal of respect as a grape and generally the winemaking influence is minimal, to preserve the aromatics. Artisan Riesling is the antithesis. The aim is to interact with the precision of Riesling's acidity and flavour to add complexity and most importantly texture, without overpowering the delicate fruit.

The jewel in the Xabregas crown are three beautiful sites, just ten kilometres south of Mount Barker along the renowned Figtree Lane, Spencer and Narrikup Roads. The three properties behave as idiosyncratically as the four seasons, adding to the dynamic of Mount Barker. Riesling grapes are treated to a substantial pressing to extract optimal flavour. The aim is to construct a wine with brilliant crystalline structure, brisk lime/citrus character and maximum intensity of fruit. Juices are cold settled and barrel fermented through the action of native yeasts and stirred on full sulphured lees for five months. Upon completion the batches are matured eight months during a course of battonage in tank on fine yeast lees. Alcohol 11.9%
 
Bright pale straw hue. Artisan is cut from a different cloth, a mixture of classic citrus, talcum powder and red apple characters with nuances of smoky oak and camembert cheese. A bone dry, savoury palate of citrus marmalade, lime rind and lemon acid, with a creamy mid palate of piquant aged cheddar, followed by a mouth watering brace of acid to finish.
Xanadu Cane Cut Viognier 375ml

Boodjidup Vineyard Viognier, the old growers trick of slicing a cane of bunches off the vine and setting the whole branch aside to dry and shrivel as the berries become engorged with flavour. The deliciously desiccated grapes are crushed and cold soaked to rehydrate the raisined fruit, pressed and sent for a month of vinification at a cool 15°C. Ferments are arrested to retain all the moreish sweetness and extraordinary complexity of cane cut Viognier. Apricot nectars, mango and lychee, her mouth watering lemon honey drop juicyness persists through to a wickedly flavourful finish.

What good is a vintage of the finest fruit if it's harvested on the wrong day? The enduring philosophy at Xanadu is that timing is everything, picking at just the right time and guiding the fruit through to the bottle without too much intervention. Sandy loam soils over coarser ancient gravels encourage vines to yield the most intense fruit. Natural ferments keep the focus on preserving the integrity of Margaret River excellence with precision and depth. The choicest parcels of Gin Gin clone Chardonnay are whole bunch pressed into a selection of seasoned and new French oak barrels for a wild, indigenous yeast vinification, followed by nine months sedimentery lees battonage for textural richness and complexity. Alcohol 13.0%
 
Pale straw with green hues. Bright citrus and white fleshed stone fruit notes over underlying hints of smoky oak, roasted hazelnuts and white flowers. A full bodied palate offering white nectarines, figs and zesty lemony flavours. Lovely complexity with a nutty, mealy texture derived from lees stirring, the taught mineral acidity combines with the bright fruit to focus the wine perfectly to a dry, persistent finish.

On the rolling slopes of Xanadu, vines flourish in the rich, free draining gravel soils, fed by an abundant supply of pristine water and sheltered by forests of magnificent marri trees. The site was chosen for its propensity to experience near perfect ripening conditions, beautiful indian summers with cool nights and clear warm days. The vines deliver an exceptional quality of Chardonnay, which Xanadu have fashioned into a generous, forward drinking wine. Natural ferments are encouraged, lees battonage is essential, infusing added complexity and charm.

Parcels of Gin Gin Chardonnay clone are harvested throughout the cool of night, pressed, crushed and filled into a selection of predominantly older French oak barrels for inoculation by a mix of cultured and wild indigenous yeasts. The balance of the harvest is crushed and destemmed, chilled before pressing and transferred to fermenters. The settled juices are coolly vinified at 15C through the action of aromatic strains of yeast to retain bright varietal characteristics. All components are lees stirred throughout several months of barrel maturation, to be assembled into the finished wine in November, judicious use of oak plays a supporting role.
 
Pale straw hues. Elegant yet powerful, grapefruits and nashi pear, gala apples with underlying hints of nougat and cashew. Medium bodied palate, white fleshed stone fruits and zesty citrus flavours. The taut mineral backbone is complimented by a lovely creamy marshmallow texture derived from lees stirring in oak. Fine and fresh, bright fruit and crisp acidity, a modern style of Chardonnay.

Xanadu were one of the first to choose their ground in Margaret River. Exceptional growing seasons and good ripening conditions are what makes Xanadu's vineyards so special, the vines thrive under the favourable climes. Each parcel of Semillon and Sauvignon Blanc is harvested to a schedule determined by the optimum level of physiological ripeness. Fruit is crushed, destemmed and chilled before pressing. The settled, clean juices are vinified in temperature controlled fermenters through the action of aromatic yeast strains, to retain fresh varietal characteristics. The final components are selected on the basis of synergy, to be assembled and treated to a gentle fining and stabilisation.

Medium bodied, the lively palate offers zesty lemon/ lime flavours combined whith guava and hints of thyme and spice.
