The modern style of Australian Chardonnay, drawing on Penfolds extensive vineyard resources, Max's guarantees the drinker a thoroughly enjoyable taste of Adelaide Hills Chardonnay at its very finest. Exacting standards of viticultural management throughout the growing season ensures the winemaking team receive a quality of fruit that's worthy of the Penfold label. Careful vinification techniques are employed to ensure the wine retains all the virtue of the vineyard, while adding a measure of complexity through a regimen of lees stirring and a term of maturation in a high proportion of new French oak barriques.
 
Pale straw hues. Inimitably Adelaide Hills, white stone fruits, nectarine and peach, figs and lithe spice, the clove aromatics of French oak barrique. Stone fruits persist on the palate, pistachio nougat creaminess, from extended time on yeast lees, cedaryness and almond oak tannins, long, lingering acidity, an enticing phenolic grip in support of the overall structure of palate.

Kym Tolley takes aim at crafting a crisp, young wine with soft fruit flavours to be consumed without the need for any bottle age. A stylish and elegant cool climate style of Coonawarra, the finely tuned acids achieve a crispness of palate that many new world Chardonnays lack. Quality new French oak, rich barrel ferments and partial lees stirring, all contribute to the style, the fruit flavour is not shrouded, but enhanced by the judicious use of oak, a key feature in all Penley wines.

Aradia was a mythical goddess, daughter of the sun and the moon, two important elements in Penley wine. Chardonnay is hand picked and whole bunch pressed, conserving the delicacy of fruit, adding rich soft textures and palate roundness, lingering flavours and superior length. Components are barrel fermented in new and seasoned French oak puncheons and hogsheads, essential for integrating the subtle flavours and textural tannins. Choice components are treated to wild indigenous yeast vinification and a course of malolactic. Barrels are matured several months on gross yeast lees, stirred regularly to maintain yeast in suspension, enriching the palate while protecting against oxidaization.
 
Medium yellow with hues of grapey green. Melon and fresh citrus bouquet, a hint of biscuit and nutty complexity achieved by aging on yeast lees in quality French oak. A finely layered palate of harmonious and sensuous flavours, grapefruits and melon. The subtle oak enhances bright varietal Chardonnay flavours without overpowering them, all leading to a silky soft finish.

Hunter Valley is one of the world's great white wine growing districts. Pepper Tree's vineyard is in the Mount View area of Lower Hunter, within the sheltered foothills of Brokenback Range. Alluvial loams along the vineyard's creek flats are ideal for Semillon. Pepper Tree's vineyard sits in a small subvalley protected on three sides and grows the most intense Sauvignon Blanc. The higher elevations at Orange make a major contribution to Australia's most exciting new viticultural precinct, favoured for its sensational long growing season and extended cool ripening. Fruit is all hand picked and gently pressed to preserve delicate fruit aromas, effecting an elegance and finesse on the palate. Alcohol 13.0%
 
Pale, lemon straw hue. Intense aromas of passionfruit and gooseberry followed by a citrus lift. A lively palate combining perfectly the tropical high notes of Sauvignon Blanc with the wonderful length and definition of Semillon, vibrant and superbly balanced before with a long, crisp finish.

Sauvignon Blanc is the first grape variety of vintage to ripen. Local fauna have a naturally sweet tooth and find the juicy, sugar filled berries irresistible. Scarecrows are an old solution to a timeless problem but the delinquent criiters have never learned to distinguish the artfully stuffed rags from the real thing. Those grapes which survive the pilferage are crafted by the Pertaringa team into an engagingly aromatic wine with clean, crisp palate, the ideal choice for service alongside moreton bay bug tails dressed in paprika butter.

From an almost perfect Riesling vineyard, careful pruning, sorting and selection, ensures that only the healthiest grapes are included. One of Australia's perennially feted Riesling, from fruit picked off old vines on Petaluma's Hanlin Hill Vineyard, planted in 1968 to the most easterly slope and highest aspects in all of Valley Clare. Late picked for optimal flavour development, yet paradoxically elegant and dry, the ideal choice to accompany grilled whiting, cornish hen or the traditional Coquilles St Jacques.

Established by Brian Croser in 1976, Petaluma are one of Australia's most eminent labels and artisanal crafters of flagship white wines. Hand picked grapes are transported to the Petaluma winery in Piccadilly Valley and processed immediately. Bunches are de-stemmed, the berries gently crushed, chilled to less than 5C and treated to a Willmes tank press. The free run juices are cold settled in tank and clarified without filtration. This bright, clear juice is then racked into fermenters and inoculated to a choice Petaluma yeast. A cool fermentation at 10C to 13C ensues over the next several weeks, at sugar dryness, the finished Hanlin Hill is chilled before a gentle filtration to bottle.
 
Light, pale straw in colour. Lovely bright floral aromas of lemon blossom and passionfruit are backed up on the palate by pristine, intense lemon/ limes, with some crunchy apple thrown in. Slatey minerality, a hallmark of the Hanlin Hill Vineyard for three decades, combined with high natural acidity to produce a wine that is very drinkable in its youth, while offering all the qualities of a great, long lived Clare Valley Riesling.

One of the new world's most distinguished Riesling, a sophisticated effort, floral and delicate and poised, Petaluma displays refreshing lemon and lime characters coupled with a wonderful balance which has been the hallmark of this elite vineyard since the inaugural 1979 vintage. At 1670 feet above sea level, Hanlin Hill is magnificent for its higher elevation and superior exposure to the cooling afternoon sea breezes. Another great edition in a long succession of superb Clare Valley Rieslings from the distinguished Vineyard at Hanlin Hill.

Hand picked Riesling is delivered to Petaluma for immediate processing. The bunches are de-stemmed, crushed and chilled to less than 5C then treated to Willmes tank presses. The free run juice is cold settled for a natural clarification then racked to fermentation tanks and inoculated. Fermentation is monitored over several weeks at temperatures of 10C to 13C rising to 17C over the last few grams of sugar. The wine is chilled to below 0C and the yeast allowed to settle. A gentle filtration retains all the fruit, dulcet aromas and lavish flavours.
 
Pale golden straw. A delicate, floral wine displaying minerality and lemon lime perfumes. Forward, mouth filling and generous, exceptional depth of layered fruit and distinctive characters abound, a seductive mouthful of bosc pear and white peaches, lime and green tea flavours. The passionfruit, pear and apple expressions are backed up by lovely intense lemon-limes with a slatey, minerality that lingers long and dry upon a highly polished finish.
