Tahbilk have been one of the nation's most successful purveyors of Australian white wine since well before Federation. Tahbilk are one of Australia's historically significant, grand old winemaking estates. Founded in 1860 and labelled as Chateau Tahbilk until recent years, it is the home of seriously old, white varietal vineyards. Riesling is a style that Tahbilk do extremely well, cleanly fragrant and soft on the palate, with the distinctive presence of Goulburn Valley fruit, its crisp lime acid backbone supports an extended length of flavour, exquisite varietal complexity and graceful arcadian charm.

Pale yellow hues. Lovely nose of penetrating lime and complex citrus bouquets, florals, chalkiness, calico and talc. Juicy palate of citrus flavours, orange kernel and lemon curd, lively lime, minerality and chalk, before a zippy, fresh and lingering, lime acid finish. The stately wineworks, beautiful gardens and scenic finger lakes of Tahbilk, would not look out of place amongst the great vineyards of the old world. Bundles of Viognier cuttings from the distinguished Rhone Valley appellation of Condrieu, were amongst the first vines established at Tahbilk in the 1860s. They continue to outperform, yielding an absorbing white wine with an exquisite mix of nutty, mineral characters, the accompaniement of choice, to match all mussel and shellfish recipes, succulent baked pork with apple dressing or artisanal white meat terrines.

Sauvignon Blanc is harvested throughout the chill of early morning hours to preserve optimal freshness. Harvested early for the zesty citrus characters and slightly later for blackcurrant passionfruit flavours. Fruit is whole bunch pressed to optimal skin contact, batches are fermented at lower temperatures to retain fragrant aromatics. Components are aged on sedimentery yeast lees while treated to regular battonage, infusing elegance and subtle complexity. A short term of age is followed by assemblage into the finished wine.

Located on the western banks of Tamar River, forty kilometres north of Launceston, choice blocks of the Kayena Vineyard are planted to unique clones of Pinot Gris. The site yields fruit of spectacular varietal definition, great purity and refreshing acidity, all are hallmarks of a truly profound cool climate wine. The weight and flavour intensity of this elite vineyard Pinot Gris make it suitable to serve with quite richly flavoured dishes, including veal, turkey or pork.

Employing the latest technology, but with more than a few concessions to the traditional techniques which have served winemakers for centuries, the goal is to harness the pristine fruit and fashion an individual style of wine that speaks boldly about a superior site. The exclusively estate grown, hand picked fruit is crushed and pressed without spending any time on skins. A small component is transferred to French oak for a course of rich barrel ferments. The majority is treated to controlled fermenters and vinified at low temperatures to a mix of wild and cultured yeasts. Upon completion, batches are held on sedimentery lees for two months to build fine textures and enhance palate weight.
 
Bright, pale straw hue. Quite an aromatic nose with ripe pear fruit, touches of green herbs and hints of nuttiness and an intriguing allspice complexity. Excellent palate weight and structure. There is full, soft fruit flavours of ripe pear plus a level of nuttiness derived from time on yeast lees. The finish is clean and dry with good flavour persistence and just enough grip to add interest. innately suited to good cuisine.

An exclusively estate grown Riesling wine, from the superlative Kayena Vineyard on the banks of West Tamar and estate vineyards further afield along the apple isle's east coast. Tamar Ridge's objective is to retain the intense fruit characters developed in the cool climate vineyard. All efforts are aimed at nurturing the vines to achieve yields of Riesling at complete flavour ripeness, to be harvested and handled back at the winery in the soundest possible condition. Parcels are whole bunch pressed and immediately run off skins into fermenters with little or no skin contact. Juices are cold settled to remove any solids and inoculated with a selected aromatic yeast strain prior to vinification under strict temperature controls to maximise retention of lovely Riesling fruit characters. A cool and slow fermentation is followed by a number of weeks on primary yeast lees prior to racking.
 
Bright, pale straw with tinges of green. The nose is refreshingly bright with strong elements of lime juice and citrus blossom supported by hints of minerality and spice. Lean and tight with flavours of lime juice and fresh meyer lemon over a backbone of crunchy acidity which provides an insight into the staying power of the wine. Drinking beautifully alongside prawns, scallops and whiting, would pair very well with French inspired seafood recipes .

Sauvignon Blanc from individual blocks are assigned to pressing and barrel fermentation by merit. A variety of clones are planted, the unique blocks and rows of vine are managed individually to maximise fruit quality at each specific site. Aerial infrared photography is employed to identify variations which require irrigation and nutrition, practices which translate into good harvests in sound condition with full ripeness and excellent varietal definition. Following the crush, juices are run off skins immediately after pressing, then cold settled to remove solids. Components are treated to inoculation and fermentation under strict temperature controls to maximise retention of fruit flavours.
 
Bright, pale lemon with hues of green. Fresh, appealing grassy and floral aromas with attractive riper notes of passionfruit, banana and other tropical fruits. Ripe, mouth filling fruit flavours of lime, passionfruit and gooseberry with plenty of mid-palate weight. A lovely zippy acidity to provide length and freshness on the finish, a fuller style of Sauvignon Blanc with more demanding flavours that are totally enjoyable and very easy to drink.
