Balgownie's Yarra Valley vineyards were planted in 2003 to Chardonnay and Pinot Noir, with a view to exploiting the slow ripening temperate climes and rich soils of the region for the creation of exquisite and stylish sparkling wines. Vinified to a combination of new and old world winemaking techniques, the tradtional cepage of Chardonnay and Pinot Noir is partially barrel fermented in seasoned oak before being treated to a term of extended lees contact, infusing the palate with rich yeasty brioche characters and refined textural creaminess.

The emergence of Balgownie Estate as a preminent winemaker in the 1970s led to the rapid expansion of the central goldfields wine growing region and was a significant player in the rebirth of the Victorian wine industry as a whole. In 1999, fine wine enthusiasts Des and Rod Forrester assumed proprietorship of Balgownie and set about updating the vineyards and winery. The Forresters embarked on a search for the idyllic Chardonnay and Pinot Noir site, eventually identifying a property in the Yarra Valley where they established seven hectares of closely managed vines. Crafted to Methode traditionelle, Balgownie Brut is rested on sediments before completing secondary fermentation in bottle.
 
Pale golden colour with clear, sparkling bead. Bright and lifted aromas of citrus and new seasons apple with hints of guava and passionfruit. Lovely fine palate showing cut stonefruit, lemon and biscuit complexity, light tangy citrus acids and a hint of red berry fruit characters before an elegant crisp finish. The aperitif wine of choice, choose Balgownie to accompany hors d'oeuvres, appetizers and nibbles.

There are very few vineyards which take sparkling wine so seriously as to plant Pinot Meunier, the third grape variety in the holy trinity of the noble Methode Champenoise. Fruit is selectively whole bunch pressed for creamyness and complexity, mollified by malolactic, stirred for palate richness and filled to sediments bottle for three full years yeast lees maturation. Brimming with brioche, apricots and apple flan, its largess of indulgent fruit charactors and beguling perfumes, undulate and evolve along a long, fine bead of crunchy stonefruit flavours, creme fondant and crisp minerality.

The Bay of Fires vineyards normally experience a growing season quite similar to Reims, Burgundy and Alsace. Roughly equal proportions of Pinot Noir and Chardonnay, with a smaller component of Pinot Meunier, are hand picked and whole bunch pressed, to ensure freshness and elegance of structure. After fining, the individual batches are vinified on light grape solids and treated to malolactic on primary ferment lees. Once clarified, the wines are assembled to style and prepared for tirage. Extended maturation on yeast lees builds additional complexity and depth of character, while the expedition liqueur and inclusion of aged reserve wines contributes to the overall depth and dimension of palate.
 
Crystal clear, persistent bead, light straw gold hue. A very complex wine exhibiting toast, lanolin and sea brine characters, honeycomb, yoghurt and oyster. The palate is finely structured, long, powerful and complex. Multiple layers of oyster shell, truffle and apricot brandy build in this intriguing wine. A great depth of character from extended ageing, retaining freshness and vibrancy. A solid, natural acid backbone, biscuit and citrus follow the palate all the way to a crisp, dry finish.

Champagne Billecart Salmon fashions the most exquisite wines from choice parcels of fruit grown to twenty five acres of distinguished sites around its headquarters in the village of Mareuil-sur-Ay. Unlike many better known marques, the noble House of Billecart Salmon has elected to remain small in size and limit their production, focussing on quality and consistency over quantity. A cooler, temperature controlled fermentation, inoculated to finely aromatic yeasts, serves to preserve the freshness in the final wine and infuse the bouquet with the most exquisite expressions. Various components are treated to lees batonnage, malolactic fermentation and a spell in Burgundian oak barrels.
 
Honeyed in colour and bouquet, distinct for the finesse of it's slowly rising bubbles and persistent mousse. Maturation has not robbed it of an amazing floral freshness, it exhibits lovely aromas of ripe pear. Characters of brioche, sweet citrus and almond, exemplary for it's sophistication and flavours of plush lined fruit. A wine of the finest balance.
