Olivers Taranga Shiraz

Established 1841, the McLaren Vale Taranga vineyards are still owned by the founding Oliver family. Even more remarkably, Taranga wines are today crafted by a sixth generation of the original winemaker. For most of the twentieth century, Oliver Taranga sold their precious yields to other wineries, much of it was destined for the nation's most esteemed labels and memorable flagship vintages. Since 1994, the Olivers have been reserving the pick of their low yielding, old vine grapes for bottling under the Oliver Taranga label.

Taranga was the name given to the southern section of the Oliver property in 1841. Sheep and cattle were raised, perfect for viticulture, vineyards were planted and the family prospered. Generations later, Don Oliver sold fruit to Penfolds, where it became one of the primary components to the mighty Grange. Oliver has since taken up the task of processing the pick of his own crop. Produced from vines up to fifty years of age, cropped at three tons of fruit per acre, aged in a mixture of seasoned and new French and American oak barrels for two years. Winemaker Corrina Rayment is McLaren Vale dynasty, daughter of Colin Rayment from the neighbouring heritage Kay Brothers Amery vineyards.
 
Deep, dark maroon in colour. Big powerful mocha, coffee, dark chocolate and spice aromas, rich and briary with vanilla and plum. Dark fruits and cherries on the front palate, long grained tannins and great length. A terrific richness, abundant blackberry, pepper and sweet earthy notions, low acidity and a mature, complex finish.

A parcel of the most pristine Adelaide Hills Cabernet Sauvignon tips the scales of this ambitious but remarkably integrated cépage, a generous inclusion of Cabernet Franc contributes savouryness and luscious berry fruit, Merlot, Malbec and Shiraz add complexity and flesh to achieve a well rounded, profoundly enjoyable red wine. The Adelaide Hills hamlet of Paracombe, settled circa 1840 and now booming with a population of 365, was named after the headwaters of Little Para River. Initially a successful sheep station, the site of Paracombe Vineyard was destroyed by Ash Wednesday's Fire before being established to vine. Hand picked grapes from the Drogemuller property in Adelaide Hill, are vinfied alongside choice parcels harvested by neighbouring, specialist local family growers. Fashioned predominately around a backbone of six different clones Cabernet Sauvignon, the assembled Reuben is matured eighteen months in a selection of seasoned and new French oak hogsheads and barriques.
 
Intense colour, deep ruby tones, bright robes in the glass. Lifted aromas of poached rhubarb and plum, delicate hints of oak, leatherwood and licorice spice. The palate is generous, finely structured with rich, sweet fruit driven flavours, fresh raspberries and loganberry, interspersed by savoury, spicy notes.

Paracombe vineyard is nestled on a plateau 425 metres above sea level. Soil is lean with ironstone, buckshot gravel and quartz, an interesting remnant from an ancient riverbed. These characters along with minimal irrigation contribute a strong influence in wine style and flavour. Vines on the Paracombe estate are meticulously cared for, taking advantage of the morning sun for optimum fruit ripening, most are planted facing east. Fruit is harvested over four separate picks, predominately from the Drogemuller's Paracombe vineyard and specialist Adelaide Hills growers. Special aromatic yeasts achieve a wine of good flavour, balance and definition, with excellent natural acidity.

Coonawarra did not happen by chance, it was established on sound scientific principles after the assessment of extensive feasibility studies. The Parker Estate Vineyards at the southern end of Coonawarra, were established 1985 on rich Terra Rosa over limestone soils. Parker have achieved a remarkable reputation within Australia and throughout the world of wine, wherever great vintages are revered for their integrity and continuity of excellence. Commercial constraints played no part in the development. John Parker was driven by a passion to create the First Growth of Coonawarra Cabernet.

John Parker's long and distinguished career in the industry fuelled a desire to produce a great Australian wine from within the nation's preeminent red wine region, culminating in the release of Terra Rossa First Growth, mostly the Reynella clone of Cabernet Sauvignon with a tenth of Merlot.

Parker Estate was built from the ground up in the right way, with the intention of producing precisely this style of wine. Established in 1985 by an old industry salt, quality winemaking was the only priority and commercial constraints played no part in the development. Integral to the style and structure of First Growth is the seven day warm fermentation and four to six weeks of maceration on skins. Individual parcels are then matured eighteen months in a selection of mostly new, Seguin Moreau Chateau and Taransaud Chateau, 228 litres French oak barriques. The final assemblage is returned to oak before egg fining and bottling.
 
Mid to deep red purple hue. Highly complex nose, showing dark berry fruit and forest floor characters, tobacco and spice notes within a lifted smoky French oak frame. Intense palate with rich ripe black fruit, liquorice notes and firm structured savoury tannins. Medium bodied but with very intense fruit and good perfume, a magnificently proportioned Cabernet Merlot accord.

Parker Estate was built from the ground up in the right way, with the intention of producing precisely this style of wine. Established in 1985 by an old hand within the industry, quality winemaking was the only priority and commercial constraints played no part in the development. A mostly Cabernet wine with small portions of Merlot and Petit Verdot, grown to an exceptional site, ranking as one of South Australia's finest. The fruit is characterised by very dark colours, super ripe flavours, excellent complexity with good alcohol, density and structure.

Vinified from fruit picked off fully mature vines which produce a limited yield of 1½ tonnes/ acre, planted to the Parker Estate's Terra rossa over limestone Coonawarra property. Integral to the style and quality of the finished wine are unique soils and mesoclimes, so favourable to the noble cepage of Cabernet Sauvignon, Merlot and Petit Verdot. Following a warm fermentation, a little over half the grapes are treated to a long maceration of thirty days, the balance receive a shorter ten day maceration. Parcels are matured in a combination of new and prior use 228 litre French oak barriques for twenty two months. The final wine is assembled and returned to oak before an egg white fining and bottling.
 
Deep red tint. Intense deep dark fruit with some dark chocolate, prunes and charry vanillan and coffee oak aromas. The palate is rich and dense with a solid core of dark fruit running along the entire length. Impressively dense and solid structure, but also showing some faint leafy Cabernet notes typical of southern Coonawarra vineyards. To be decanted before service and savoured alongside the finest meats.
