Hand picked grapes off the estate Home Block on the eastern ridge of Barossa Valley, the frugal vines yield a meagre harvest of small berries exhibiting the most amazing concentration. Bunches are destemmed to fermenters and cold soaked for the magic of wild yeasts, several days of cool vinification are treated to hand plunges and rack returns until completely sugar dry. A good old fashioned basket press and ten weeks of malolactic are followed by twenty four months of age. Succulent tannins and enormous length, Barossa Shiraz that speaks of its provenance, of season and of place.

John Marshall forged his mother’s signature to enlist in the RAAF, he flew Tiger Moths and gained notoriety for his acumen at loop de loops. He is best remembered in vintages of Adelaide Hills Montipulciano, left to the influence of wild yeasts and a course of cold soak, hand plunged until sugar dry on the sixth day of ferment. Batches are pressed off skins to oak barrel for completion of malolactic and a judicious term of age. Unfiltered to bottle, evocative of black cherries, mulberry and redolence of cassis, bursting with the savouryness of sage leaf, olives and delish vinosity.

In 1866, plans to build a new stone cellar were sanctioned by Seppeltsfield's founder John Seppelt. In 1878 the stone cellar was completed by his son Benno. To celebrate, in a gesture considered innovative and inspiring, Benno selected a puncheon of his finest wine and gave instructions that it was not to be bottled for a hundred years. This became a magnificent tradition and Seppeltsfield Wines are now the only winery in the world to have significant stocks of wine laid down over consecutive vintages for more than a century.

Established by Joseph and Johanna Seppelt in 1851, just fifteen years after the settlement of South Australia, Seppeltsfield can be proud of a great heritage and national treasure of Australia's oldest fortified wines. DP116 Aged Flor is crafted from the Palomino grape, renown for its neutral flavour profile and suitability as a dry Apera. A layer of yeast or Flor is encouraged to form a cap on the ageing fortified Palomino wine, building richness and infusing wonderful bread notes into the refreshing dry style.

Seppeltsfield draw inspiration from the traditional Spanish and Portuguese Solero method of aging wines, an ancient system which delivers high quality and style consistency by blending younger barrels into old. After utilising only the very first cut of free run juice and fortification with a neutral spirit, DP116 Aged Flor is matured for an average age of sixteen years. The evolving layers of yeast or Flor are eventually removed from the ageing DP116, prompting oxidative maturation and the development of subtle nutty flavours. Seppeltsfield's historic Solero nurseries are made picturesque by the carefully stacked barrels in which stocks of precious fortified wines gracefully age.
 
Deep golden colour with a light, olive green hue. Mixed fruit peel, aged flor nose, delicate honey and cherry/almond notes. Exquisite balance on the palate between freshness and aged oak characters, resolving on a dry finish of extraordinary length. The classic expression of a Solero style, retaining the vitality and freshness of dry Flor with added rancio complexity.

Para Grand is named after the Para River that flows through the centre of the Barossa Valley. Instantly recognisable in its unique bottle, Para was first released in 1953 and quickly became an Australian legend with a distinctive style, highlighting rich fruit flavours and great aged complexity. Great intensity and rich, ripe fruit flavours, exhibiting the capacity to show all of the aged characteristics associated with the now famous Para style. A classically Australian Tawny that's totally toothsome, offering hedonistic aged rancio complexity.

Para Grand Tawny is an assemblage of a number of exclusively Grenache, Shiraz (Syrah), Mourvedre (Mataro) wines from across many vintages, matured through the traditional Solera system. Component wines are aged individually in small oak casks to ensure only those components that had achieved the desired quality and style entered the final Cuvee. Through a careful selection and blending process at the Seppeltsfield wineworks, the resulting wine is treated to the Solera system for maturation. With ageing the wine has become complex, smooth and mellow. A pronounced rancio character is also evident, derived from the extended oak maturation.
 
Walnut brown colour. Deep mahogany in colour, with olive green tinges. A powerful bouquet displaying an excellent balance of rich fruit, nutty vanillin oak and a hint of chocolate. Further complexity is derived from the aged rancio character and fine brandy spirit, the epitome of the Para liqueur style. Full bodied, rich and luscious, with concentrated lingering flavours. Immensely satisfying, and flavourful, Parra can be served chilled, and is ideally suited to all good cheeses and dessert.
