Mt Horrocks have established a cult following, due in no small part to excellence of husbandry in the vineyard and an uncompromising attention to detail in the winemaking. Mt Horrocks make a quality of Watervale Shiraz that just dances across the palate, such is the freshness of the fruit and brightness of tannin, all supported by lively acidity. Clare Valley charisma in abundance, with a twist of mint and a lick of nutty oak. Drink now, with or without food, tapas works very well, so does anythong with bearnaise sauce or Italian pork and fennel sausage.

With the emphasis on natural farming principles and environmentally sustainable organic practices, Mount Horrocks has vineyards at three sites totalling ten hectares in Clare Valley. Vines are hand nurtured and painstakingly managed to yield trim crops of the most intensely flavoured berries. A totally wholistic approach to viticulture is matched by a respect for traditional winemaking fundamentals. The specialty of the house is in the construct of what are essentially hand made food wines with the emphasis on structure and generosity. All grapes are hand picked and only the finest French oak is used.

Deep violet red colour. Fragrant, vibrant aromas of plum and red berries with distinct anise and bramble notes. Dark fruits combine earthy, forest floor notes that deliver an alluring sweet savoury edge to this powerful, richly flavoured yet elegant wine. Bright, chalky tannins add texture alongside delicious spice elements from both the varietal shiraz fruit and sophisticated French oak. This is a lively, joyous Shiraz, showing vitality and the hallmarks of development.

A collation of parcels grown to good vineyards in the Eden and Barossa Valleys. The elegance of Cabernet picked off estate vines on the cooler ripening elevated aspects of Valley Eden, coalesce handsomely with the richness of parcels harvested from lower elevations. Open canopy management and moderate yields translate into a generously flavoured wine with lovely fragrances and sleek tannins. Mountadam were amongst the first to recognize Eden Valley as a superior mesoclime for Cabernet Sauvignon, now fully mature, they are now the finest cool climate vines in the land.

$2499each $299DOZEN EACH DOZEN Parcels of Cabernet Sauvignon are vinified for a fortnight in open top fermenters while being gently pumped over to treat the fermenting juices back into the skins, extracting flavour and just the right amount of tannins. Upon completion, components are matured in a selection of fine oak barrels to integrate fruit characters and tame the firm Cabernet tannins.

Purple coloured with darker hues. Currants, strawberries and plum seasoned by varietal green leaf characters behind the deep blue berry fragrances. A well integrated palate of lively varietal fruit flavours, black cherry, cassis, cocoa and plums supported by subtle hints of vanillin, tobacco and fennel. A dry, lingering finish with fine cleansing acidity makes Mountadam the perfect match to braised beef and wide ribbon tomato pasta.

Established 1972, with a view to being one of the nation's pre eminent Chardonnay specialists, Mountadam was founded by the great David Wynn, one of the most significant contributors to the Australian wine industry and an important part of the Mountadam story. Mountadam today enjoy extensive resources for the production of Chardonnay through varied clones, ages and aspects. In assembling the finished wine, a balance of the most intense fruit aromas and flavours is sought, capturing the exquisite characteristics of fine Chardonnay without the influence of oak.

Chardonnay is sourced from the Mountadam estate property near the historic Boehm Springs Reserve, a nesting ground for Wedge Tail Eagles, the Mountadam logo. Sitting at an altitude of over 400 metres above sea level the vines grow in quartz rich sandy loams formed from the underlying schist bedrock. Picking grapes throughout the cool of early morning followed by a gentle pressing and a long cool four weeks of fermentation with natural cultured yeast helps retain maximum grape flavours. Parcels are selected which can best display the intensity of Chardonnay within the context of a vibrantly unoaked wine.

A pale green colour. Aromas of tropical fruit, rich apricot and ripe nectarine, layered with the complexity associated from a traditional vinification. Intense lively aromas of ripe peach and melon carry through on the palate with distinctly fresh acidity typical of cool climate Chardonnay. A long finish with lingering fruit characters and racy acidity. To accompany chicken caesar or grilled fresh water fishes.
