St Hallett are an auspicious commune of ancient Barossa grower families and leading, accomplished winemakers. Established by the Lindner family during the closing days of the second world war, industrious pastoralists who would fill a horse drawn cart with daily cuts of meat for the local markets. Sourced from a coterie of superior Barossa vineyards, the Butcher's opaque purple hues hint at the generosity within, a solid and tightly structured wine, much adored for its distinctive mint and blueberry aromaticness.

Grapes are harvested throughout the warmth of day, brought to the winery, crushed into fermenters and inoculated with neutral strains of yeast. Following a regime of several pumpovers daily, batches are lightly racked, retaining a measure of the fluffier lees which add weight, texture and savouryness. Following completion of malolactic, components are assembled and treated to extended maturation in a selection of seasoned and new French and American oak barrels.

$2699each $323DOZEN EACH DOZEN A pure Eden Valley Riesling, collated from vineyards planted to higher altitudes, where the chilly nights and mild sunny days are ideal for producing delicately complex Riesling wines with juicy citrus acidity. The rocky outcrops and generally shallow soils make grape growing a challenge, it demands diligence to achieve Riesling wines of stature. The St Hallett philosophy is tried and true, take minimum intervention but give maximum attention. Each vineyard is separately vinified for a month, ferments are kept cool to retain the delicate Riesling fruit characters. Upon completion, batches are fined and individual parcels are assessed, the best components are identified and assembled into the finished wine.

Light luminescent straw hue. A pretty nose with hints of rose petal and citrus blossom, the fresh lime notes expected of fine Eden Valley Riesling. A palate of remarkable elegance and harmony, aromatic citrus flavours are carried on a silky textural mouthfeel, lined with fruit sherbet flavours. The Grenache from low vielding west and north western areas of Gomersal and Greenock where the vines truly struggle to survive, producing intensely flavoured low yielding crops. St Hallett have carried out extensive trial work to find yeast strains that suit this wine. The aim is to highlight the fresh berry, floral, spicy, earthy aromas contributed by the Grenache and Touriga, while the richness and pepper spice of the Shiraz builds palate weight and structure. Contact with yeast lees post ferment, gives the wine an appealing texture and earthiness, completely fruit driven.

Fruit is delivered to the winery, immediately crushed into fermenters and inoculated with neutral yeasts. Each block of Shiraz is separately vinified on skins for eight to ten days. A regimen of daily pumpovers, allowing the colour, flavour and tannins to be gently extracted from skins, contribute to the overall complexity of the finished wine. Upon completion of primary ferments, batches are drained, pressed and seeded with bacteria for malolactic. Components of are sent to mature several months in a selection of seasoned French and American oak barrels before the final assemblage.

Vibrant plum red with purple hues. A fresh and lifted nose of dark cherry, plum and acai berry complimented by a subtle secondary aroma of spice. Flavours of dark cherries and red fruit flow across the mouth with dark blueberry fruit and white pepper. The style is all about elegance and generosity of flavours over chocolate and blackberry framework, a seamless expression of poised new world Shiraz.

A national flagship wine, articulating the concordance between the Barossa and Eden Valleys, derived from low yielding vines up to a hundred years of age. The meticulous nurture and respect for these Old Vines demands that parcels are culled throughout the winemaking, from pruning in the vineyard until the final stage of sampling the ageing stocks, to determine the best barrels. Old sites in the warm nether parts of the Barossa establish the rich foundation, whilst higher, cooler aspects of the Eden Valley contribute lifted aromatics and seamless tannins.

$17699each $2123DOZEN EACH DOZEN Each parcel is crushed into a fermenter and inoculated by select cultures. Each batch is vinified separately at controlled temperatures of 20C to 24C. Ferments are managed with pumpovers and drain returns to aerate as much as possible during the early stages, enhancing colour, flavour and tannin extraction. Parcels are pressed off skins into oak before beeing seeded with malolactic, a bacterial culture which converts natural malic acid to lactic acid, softening and stabilising the wine microbiologically. Each parcel is then assigned the most appropriate selection of seasoned and new, ancient French oak forest barrels. After twenty months maturation, the aged stocks are sampled to determine the final assemblage.

Deep crimson red. Powerful lifted aromas of mocha and dark chocolates, intertwined with soft, underlying dark berry fragrances. The palate oozes classic Old Block fruit, swirling the wine in the glass gives that sense of comfort as the enormous brooding complexity edifies. Rich dark fruits, blackcurrant and boysenberry with smooth chocolate textures, sensual tannins and a persistence of flavour. Decant for two to three hours before serving alongside venison or game.

St Mary's Winery is situated on a strip of Terra rossa soil, some fifteen kilometres west of the township of Penola. Originally a grazing property, the poor topsoils working in combination with rich Terra rossa underneath, yield scant quantities of the most powerfully flavoured wine grapes. Exclusively estate grown Cabernet is harvested for the creation of St Mary's House Block, a wine of overall richness and fine palate structure, dense with varietal fruit character and Coonawarra charm, harmoniously integrated after extended ageing.

$3099each $371DOZEN EACH DOZEN The exclusive little vineyard is sited on part of a grazing propertry that has been owned and operated by the Mulligan family since 1937. The vines are planted on an elevated area of Terra Rossa soil over limestone. The soils are generally very stony. Some of the more austere parts of the vineyard are virtually pure rock. The vines that have survived on these stony areas produce relatively small tonnages compared to local averages. Small batches of hand picked grapes are fermented in open vats, basket pressed and barrel matured in climate controlled storage before being bottled on premises. Treated to an extended maturation in a selection of American and French oak hogsheads.

Black cherry colour with deep ruby hues. The bouquet is an enticing mixture of ripe, blackcurrant fruit characters complemented by gentle integrated French oak. House Block Cabernet demonstrates exquisite balance, fine Coonawarra richness persists, sultry aromatics expressing regional mint along with pepper and new leather over olives and graceful vanillan oak culminate on lingering and supportive tannins.

Established 1985, the Step Rd wineworks are fortuitously positioned to collate harvests of the finest grapes from local vineyards at Langhorne Creek and splendid sites within Adelaide Hills. Sparkling wines are something that Step Rd do particularly well. They have appropriated parcels which can display the requisite qualities of ripeness, acid balance and excellent varietal definition, to be fashioned into a generously flavoured, forward drinking effervescent wine with lively melon, stonefruit and citrus characters, freshness and refined, yeasty complexity.

The philosophy is to act as caretaker of the land, thereby realizing the full potential of the vineyard to yield the finest fruit. Everything about the operation is designed and managed to be mindful of the health and welfare of staff and the environment. Liquid waste is purified and recycled as irrigation. Solid waste of skins, stalks and seeds are mulched and returned to the vineyard to enhance and improve the soil. Following harvest and sorting, grapes are treated to a temperature controlled vinification in clean fermenters to create a fresh, fruit forward style with fine mousse and clean finish.

Pale straw with green hues, a fine and persistent bead. Fresh apple aromas, gingerbread, lemon curd and hints of yeast. Juices are pressed and inoculated with Saccharomyces cerevisiae followed by a brisk vinification in chilled fermenters and course of malolactic to enhance creaminess and infuse soft textures. Batches are rested on primary yeast lees for several months, enriching the palate and introducing autolysis complexity. Following a natural secondary fermentation, components are assembled, treated to the traditional liqueur tirage, ready for crowning and reseal.

Pale straw hues, persistent bead. Deliciously clean, aromatic nose with a touch of peach, white cherries and a dash of attractive yeast complex. Elegant soft fruit palate in a drier style, newly picked berry flavours, freshly cut strawberries and cream, pineapples and exotic tropical fruits abound, layered and textural before a clean acid finish.
