Bird In Hand Syrah
Adelaide Hills
Available by the dozen
The pick of crop Adelaide Hills Shiraz, albeit in a very Cote du Rhone kind of way. Hand picked and gently destemmed into small open top vats, a fifth of the harvest remains as whole bunches, tipped over top of the ferments and treated to a minimalist, long, cool temperature vinification, minimal pump overs and gentle pigeage, followed by eighteen months in a mix of seasoned and new French oak barriques. Vivid purple, lifted aromatics, blackberry, violets and herb, juicy fruit weight, silky, slightly chalky tannins underpinning the bright acidity, Syrah of structure and superior length.

The Galvanized Wine Group is a mob of Aussies with plenty of passion and good creds. The intrepid Ben Riggs makes the wines but all stakeholders, growers and staff get in on the act. To make a Black Chook, selection of site is central to the finished style of wine. The Tomich vineyard yields fruit with exceptional quality and balance. The unequivocally cool climate, very old, low to moderately fertile podsolic over schitz quartz soils yield outstanding Sauvignon Blanc. Parcels of grapes from Block J and Block L are destemmed straight into the press. A regimen of skin contact is employed to extract maximum flavours before inoculation and controlled, low temperature fermentation.

Light, bright straw colour. Freshly cut spring grass and sage on the nose, paired nicely with citrus and a touch of passionfruit sweetness to the mid palate. Call this a wine of many adjectives, fragrant and full of flavour, redolent of fresh herbs and cool climate fruit, stimulating, just perfect with food.

A collaboration between Ben Riggs and Tony Parkinson of Penny’s Hill, Black Chook is the bigger sibling from the Woop Woop wineworks. The backbone of Shiraz is sourced from good vineyards in McLaren Vale, sites that are nourished by a Mediterranean climate, winter dominant rainfall, warm, dry summers and low humidity. Further components from choice vineyards along the Limestone Coast infuse the palate with exciting blackcurrant and eucalypt characters. Vinified in a combination of fermenters, a period of maceration on skins intensifies the colour and extracts sleek tannins. Maturation in a selection of fine oak barrels serves to soften and integrate the palate, developing velvety mouthfeel.

The palate is smooth and layered with rich flavours supported by supple vanilla oak and firm tannins, culminating in a long lingering finish of soft varietal plum and cherry characters, but not without the varietal punch of ground pepper and spice. Bleasdale Adelaide Hills Chardonnay
Adelaide Hills
Available by the dozen
Adelaide Hills are but an hour's drive from Bleasdale but the style of Chardonnay grown to the cool ripening aspects of elevated, undulating hillsides is a world away from that grown to the Bleasdale property at Langhorne Creek. The Adelaide Hills style is distinctly crisper and more aromatic, one could say it even tastes chilled at room temperature. An extravagant course of barrel ferments, wild yeast vinification and lees exposure makes a richly textured Chardonnay wine with good colour, savoury vanillan aromatics and solid palate structure.

Sauvignon Blanc grapes are hand picked from choice Adelaide Hills sites and gently whole bunch pressed directly to French oak barrels. Fermentations are inititated by wild indigenous yeasts from the vineyard still present on the skins, followed by a regimen of lees stirring battonage and nine months maturation before bottling.

A creamy palate with layers of melon, nectarine and golden delicious flavours, a touch of biscuit and lemon/ almond notes before a crisp, drying and savoury fruit filled finish. A revitalizing style for contemporary palates, the Chardonnay of choice to enjoy alongside prawns or shitake chicken tortelli.

Grapes are whole bunch pressed into a combination of fermenters and seasoned French oak puncheons for a brisk vinification and course of lees stirring battonage, followed by a brief spell of maturation. A timely bottling captures and locks in all the fresh, brightly lit, pear and spice characters of Pinot Gris.
