Clare Valley Cabernet at its finest, an elegant wine of power and grace, fully evolved after a spell of bottle age under the Mitchell estate cellars. The Sevenhill property was a pioneering homestead, it has supported orchards and vineyards since the 1860s, ulimately replanted to Cabernet Sauvignon in the early 1980s. These vines are now fully mature and yield the most exquisite fruit. Even in its youth, Sevenhill displays magnificent structure, the palate is brimming with cassis cherry flavours and ripe currant notes, before resolving on a soundly savoury tannin finish.

Andrew Mitchell has worked vintages in Europe to deepen his understanding of the world's great wines. His experiences continue to contribute to the development and refinement of the Mitchell style. Careful land management is nothing new to the Mitchells, who have long known that dry grown fruit makes better wine. Careful soil management, conservative old style farm and biodynamic practices, are essential to a healthy harvest. Cabernet Sauvignon is picked at several different stages of ripeness to capture the full array of varietal fruit characters. The finished wine is matured two full years in a selection of tightly grained French oak barriques, followed by assemblage and an extended term of bottle age before release.
 
Deep dark red colour. A completely mesmerising bouquet, enthusiastic loganberry and bramble perfumes are met by the vanilla caramel richness of new French oak. The palate is full of luscious black, red and blue berry flavours, characteristic Clare Valley violets and mint, a solidly structured Cabernet supported by a firm backbone of fine grained tannins. A wine to decant and to breathe for optimal enjoyment.

Mitchell Watervale Museum Riesling
Clare Valley
Mitchell Watervale shows amazing intensity of flavour, articulate of its Clare Valley provenance, all the winemaking team need do is preserve the character of organically grown fruit as it proceeds through the vinification. Intense with tangy lime characters, citrus florals, thistle milk and talc, a refreshing Riesling of exquisite elegance, divine balance and poise. Wild ferments, lees contact and an extended term of bottle age all serve to soften the palate, its luxurious minerality resolves on a racy, crisp and gratifyingly drying finish.

Mitchell's largest vineyard is located at Watervale, several kilometres south of the estate wineworks. Set on the exposed eastern slopes of undulating hills, with long rows of vine, this can be a very bleak place in the middle of winter at pruning time. The isolation and chills has led to it becoming known among the vineyard workers as Alcatraz, a place to do penance in the cold, wind and rain of a Clare Valley winter. Alcatraz, which only ever yields around two ton per acre, is particularly well suited to Riesling, infusing the fruit with great depth of flavour. The fully mature vines are planted to soils that are rich red brown loam and clay over limestone, at an altitude between 300 and 400 metres.

Lemon hue. Delicate and floral with lightly toasty, buttery hints of lemon rind, beeswax and honey, long lingering fruits are the hallmarks. The flavours evolve into the rich toasty characters for which Watervale is so renowned. An immensely satisfying wine with finesse and a touch of dryness, crisp acidity and long fruit driven finish. Mitchell is suitably mated to garlic prawns, crispy skin chicken or fragrant risotto recipes.

Fashioned from the pick of parcels, a collation of deep, dry farmed old vines grown to deep Blewitt Spring sands, conjoined with harvests from the balmy Biscay clays on the coast of Gulf St Vincent. Grenache plays the leading role, a dark cherry lift with a seductive mid palate, Shiraz contributes juicy mouth feel, dark fruits and earthy olive tapenade characters. Sagrantino, adds beautiful dry earth, cigar box-like savoury lift with those signature tannins giving a drying, snappy finish.

Grenache is picked off parcels of gnarly bush vines at Blewitt Springs in the the northern Vale, Shiraz and Sagrantino parcels are sourced further south from the eminent Lopresti Vineyard, just east of Port Willunga. Varietal components are separately handled, destemmed without crushing and pumped over daily throughout a course of cool temperature ferments, aimed at optimal extractions of flavour and tannin, while preserving the dominance of fruit. Batches are filled to a selection of seasoned French oak barrels for completion of malolactic and eighteen months maturation before assemblage. The final inclusion of Lopresti Vineyard Sagrantino, contributing structure and enhancing complexity.
 
Bright ruby/purple. Bramble herbs and cracked black pepper, underpinned by earthy, dark fruit characters, satsuma plum, black cherries and liquorice. Lifted anise, nutmeg and dark fruit palate, crushed pepper and mixed spice, a dense and multilayered wine that retains freshness, while articulating the savouryness of the mix, richness and vibrant fruit.

From a single parcel of vine at the southern end of McLaren Vale near the seaside town of Willunga, paradoxically known to the vignerons as Sandra. Fruit is gently crushed and pumped over for ten days of ferment, followed by eighteen months in a selection of mostly seasoned French oak, aimed at preserving the feminity of a distinctly supple block of Shiraz. Prettily perfumed of ripe backcurrants, mintyness, espresso and plum, her moreish chocolate box flavours are beautifully balanced by crisp morello acidity and supported by grippy, savoury tannins.

From fruit grown to the Chinese Block on Lopresti vineyard in Willunga district at the southern end of McLaren Vale. Soils are heavy grey loam over sandstone intermixed with black Biscay clay, a hungry earth which naturally controls yield. The climate mirrors that of the Mediterranean, warm days and cool nights ensure even ripening and development of rich fruit flavours. GAM is opulent and robust, a Shiraz of great richness that's multilayered with complexity, it nevertheless retains a measure of finesse and the characteristic Mitolo softness.

The quality of Shiraz grown to Mitolo vineyards is the achievement of uncompromising standards in viticulture and the serendipitous confluence of growing conditions. A magnificent maritime climate yields 2â…“ tonnes of grapes per acre from vines aged an average of twenty years. Each parcel of Shiraz is fermented on skins for ten days at cool temperatures to preserve bright fruit characters without extracting hard or bitter tannins from seeds and skins. Upon completion the wines are gently pressed and filled to an extravagantly high proportion of new French and American oak hogsheads for eighteen months, before being considered for inclusion into the final assemblage. Alcohol 14.5%
 
Deep, vibrant crimson red colour. Lifted pure aromatics of darker berry fruits and spice, blackberries and plum, mocha and toasty vanilla oak. The palate is powerful and finely focused with great depth of fruit character, well framed by fine grain tannins and drawn toward a long finish supported by naturally balanced acidity. Decant, breathe and serve alongside good beef with red wine jus and roast root vegetable.

Monarcho was the most eccentric of all jesters at the court of Elizabeth I. He was the only fool ever named by Shakespeare and is featured in Loves Labour Lost. The blue attired Monarcho was more intelligent and politically aware than his behaviour suggested. A fifth of fruit in Jester Cabernet has been treated to the painstaking Amarone technique, drying grapes on open racks to concentrate flavour and soften the tannins. Jester is upfront and approachable for early appreciation, an accessible, mouth filling Cabernet wine.

From the Willunga precinct of McLaren Vale, where the evenly ripening Shiraz develops exemplary flavours and tannins. Jester is upfront in style and approachable, an earlier drinking wine for immediate appreciation. Crafted to an ancient unique process, a component of the grapes are left to dry on ten kilogram drying racks for several weeks in the traditional Amarone manner to concentrate flavour. The fruit is fermented on skins for six days at cool temperatures to enhance the pure berry fruit. Jester is then pressed and treated to partial barrel fermentation, followed by a natural malolactic before racking and a spell of maturation in a selection of well seasoned French oak barrels.
 
Deep crimson with brick red hues. Lifted peppery spice leads into an herbaceous mix of blackberries, currants and clove. Bright, lush and juicy, Jester shows a full bodied palate endowed by mouth filling richness. The Amarone treatment contributes hints of liquorice, tar and leather whilst remaining fresh and vibrant. Youthful tannin structure, soft, supple and smooth, a match to moussaka, osso buco or lasagna.

So ideal for a sunny Mediterranean style of food friendly Rose, the black Biscay soils of Port Willunga yield a generously flavoured Sangiovese. Yer Jester's stimulated into perfect ripening by the cooling afternoon sea breezes of St Vincent's Gulf. Completely hand picked throughout the warmer daylight hours and set aside to chill overnight, grapes are crushed and destemmed, pressed off skins and treated to a long cool ferment until completely dry. Flavourful and stylish, textural and crisp, join a Jester and make merry around a panoply of pink seafoods, nibbles and cheese.

The Jester comes from the Willunga district at the southern end of McLaren Vale. Heavy grey loam soils over sandstone, intermixed by black Biscay clay, combine with a maritime climate, contributing to an even ripening period and the development of rich fruit flavours and ripe tannins. Shiraz grapes show excellent quality. Vines are husbanded to yield around four tonnes to the acre. Grapes are immediately crushed and fermented on skins at cooler temperatures to capture and enhance the bright, pure berry fruit. Components are pressed and treated to partial barrel ferments followed by a natural malolactic, matured eighteen months in a selection of seasoned and new French oak barrels.
 
Opaque dark crimson, deep dark hues. Dark chocolate, anise and all spice dominate the nose, fragrances of bright, vibrant, rich fruit. A revelation of blue and black berries, mocha and a hint of spice on the bouquet. Flavours of plum and liquorice with hints of blackberry and espresso. Exceptional balance, refinement and generousity of flavour, the palate exhibits focused, genuine fruit and subtle, yet structured, tannins in support of an elongated, velvety finish.
