Wicks Estate take Sauvignon Blanc very previously. Heading up the winemaking team is long time family friend Tim Knappstein. After many years experience with Sauvignon Blanc, Knappstein made a move to the Adelaide Hills where he played a major role in pioneering it as a premiere cool climate region. Knappstein's efforts are set to further Wicks Estate's reputation as one of the icon producers of Sauvignon Blanc in the Adelaide Hills. A charmingly perfumed effort maintaining the punch and lifted varietal character of the finest Sauvignon Blanc.

Fruit is harvested in the cool early mornings to capture and retain all the characteristics of premium Sauvignon Blanc displaying a wonderful array of flavours, ranging from sweet tropical fruits through to the fine crisp expression of snow peas. Parcels are individually destemmed and crushed, chilled and treated to a gentle airbag pressing with the free run fractions kept separate to highlight the quality of fruit. All fermentations are run cool, with strict temperature control enabling the retention of freshness and vitality. After extensive trials, the final wine is assembled on the basis of flavour profile and outstanding varietal character.

Light citrus straw in colour. An enticing bouquet of lemongrass and tropical fruits backed by greener vegetable elements. A fine textural mouthfeel with crisp minerality, pure and refreshing. Aromas of tropical fruits and attractive varietal flavours are balanced by an elegant, lively palate finishing clean and crisp. Match with fresh king george whiting.

The Adelaide Hills make elegant yet solidly structured Shiraz. A number of individual parcels and rows on the Wicks estate vineyard are separately picked according to ripeness, treated to the rigors of hand plunging and pumpover, followed by a gentle press into a selection of seasoned and new French oak barriques for a term of age before the final, artful assemblage. A beautifully proportioned style of Shiraz, fleshy of red currants and dark indigo plum, juicy and plump yet chiselled and refined, wrapped around a framework of nimble brambleberry tannins and lithely spiced, nutmeg cedar oak.

A small Barossa site was planted to Shiraz vines and named Bonesetter Block in the 1960s. Peter Scholz selects choice parcels of fruit from this mature vineyard, carefully handling the wine before ageing in tightly grained French oak hogsheads for a little more than two years. Bonesetter exhibits the most voluptuous palate, great richness and solid structure, intense and powerful ripe fruit characters as supported by splendid tannins and stylish savoury oak. A multi layered powerhouse of a wine that will reward all lovers of grand Barossa Shiraz.

The Willows Vineyard ranges from deep alluvial soils, ideal for root development, to red brown loam over clay and tough sandy soils where old vines struggle to sire their fruit. The Bonesetter Block is endowed by the most favourable ripening conditions, Shiraz can be harvested at the intense end of the flavour spectrum, exhibiting deep colours and the ripest tannins. Fruit is treated to open fermenters and the traditional hand operated basket press. Two years maturation in French oak has enhances the complexity and complements the robust flesh.

Dense, vibrant colour. Very ripe nose, sweet fruit, reminiscent of plum, blackberries and pepper. The palate is generously mouthfilling, exhibiting berry and cinnamon spice flavours, along with oak derived mocha overtones and harmonious, soft yet well defined, flattering tannins. The vineyard grows along the banks of the North Para River and the fruit is harvested late in the season when the flavours are fully developed, tannins are ripe and sugar levels high. Vineyard specific fruit characters of mint and a touch of Eucalypt are the hallmarks of this Barossa Cabernet. Exhibiting the richness and warmth of fruit one would expect from the region, this is a wine of great varietal flavour, combining stylish fruit characters along with rich chocolate hints which are typically associated with good Barossa reds.

G7 for seven generations of Barossa viticulture by the Scholz family. Establishing a mixed farm of livestock and orchards in 1845, Johann Scholz planted one of the first Barossa vineyards along the alluvial banks of Para River. Established 1970, the Mataro block grows on a gentle, east facing slope, away from North Para River. An ideal site, invigorated by gully winds for a slow ripening of intense berry spice flavours in the grapes. Mourverdre of merit, magnificence and mark, a big bucolic nose, earthyness, savouryness, currants and strawberry, olives, marketgarden and mint.

$2699each $323DOZEN EACH DOZEN Peter and Michael Scholz's Australian story began in 1845 when forty year old Johann Gottfried joined his neighbours to flee the religious persecution of his Silesian homeland, emigrating to a fertile valley on the other side of the world. Planted in 1936, Willows Vineyard is located on the banks of Para River near the village of Light Pass, a site enivigorated by cooling gully breezes during vintage, providing slow ripening and a clearer expression of spicey berry flavours in the Shiraz. Treated to a regimen of taditional winemaking techniques, the powerful fruit has been tamed by two years maturation in American oak hogsheads, bringing structure to the palate and endowing the wine with soft, ripe tannins.

Daniel James Wilson would write DJW rules on school book covers, desks, garden edgings and wet concrete whenever the opportunity arose. In 1997 DJW established a small 5½ acre plot of Riesling in the highest and most fertile corner of the family property. From inaugural vintage it became apparent that the fruit from DJW block was quite different. The hand picked harvest from this supreme site was kept separate and DJW Riesling went on to claim a string of prestigious trophies.

$2199each $263DOZEN EACH DOZEN The larger vines of DJW block yield bigger bunches and berries than its siblings at Polish Hill River, distinctive grapes with a vibrant juicy fruit chewing gum character and bright citrus flavours. The grapes from DJW Vineyard are predominately hand picked and chilled, passed as whole bunches through the 30 year old Diemme press press and treated to a long cool fermentation. A synthetic fining agent known as Polyclar and course of filtration are employed to finish the wine crystal clear. Residual sugar levels are carefully controlled favouring a slightly higher level in the DJW Riesling to complement the bigger fruit typically found in DJW wine.

Pale gold colour. Aromas of citrus lemon tart and grapefruit with garden herbs. Lively upfront lemon zest with a slatey minerality not normally seen from this vineyard. Unmistakable Polish Hill River power on the palate, this vintage will be one for the long haul. There's enough mouthfeel to balance the sharpness of the acidity, great balance and structure, a slight weightyness, the dry finish hangs and hangs.
