From a small precious block, atop the wonderful Fire Block parcel of dry grown vines, planted way back in 1926, a salient example of old Clare Valley Shiraz. An unirrigated and hand pruned site, the vineyard practices, trellising methods and control of yields, are determined by only one criterion‚ to preserve the integrity of fruit each and every vintage. Concentration of elegant flavours, powerfully intense, yet exhibiting real elegance and charm. Pepper and plum, a touch of leather and spice, a lively palate expressing toasty berries, vinosity, spices and stalk supported by long gritty tannins.

Fire Block Old Vine Shiraz

The historic Fire Block vineyard was named for its dangerous proximity to the passing, flame powered railway engines of yesteryear, imperilled by the sparks of the locomotives that often ignited bushfires. Biodynamically grown Shiraz is vinified in the traditional old world way, fermented in four tonne batches, lovingly basket pressed, aged in a combination of French oak barriques and American oak hogsheads. Vibrant bouquet with plum, spice and currant characters, generously flavoured and richly proportioned, showing very well in its youth, a long, illustrious future is assured.

William Formby was among the early ardent pioneers of Langhorne Creek, he planted his first acreages of vine in 1891. Today his progeny still husband vines, the Adams of Langhorne Creek, are at the cutting edge of regional viticulture. Fruit is harvested from some of the most noble blocks on the Metala estate, to be fashioned into the enduring style of Aussie Cabernet Shiraz, a suitable match to roasts, stir frys or grills.

Legendary winemaker Brian Dolan won the inaugural Jimmy Watson Trophy in 1962 with the 1961 Metala Vineyard Shiraz Cabernet. The best fruit from the historic Metala property is now reserved for the estate's own Brothers in Arms and Formby/ Adams, as well as a number of well known labels and smaller boutique wineries such as Oddfellows and Killibinbin. Cutting Edge is a mostly Cabernet wine with a portion of Shiraz, grown and vinified to a mix of traditional and modern vineyard management and winemaking practices that produce the best possible wine from the famous Metal Vineyard. Matured for fifteen months in a combination of one to four year old French and American oak barrels.
 
Deep purple colour. Savoury biscuit, vanilla and spice aromas with menthol uplift. Huge berry fruit, pepper and cedar spice with a touch of rhubarb. A mouthfiling wine with superb textures, sublime integration and quenching mineral. The persistent length and fine grained, juicy tannins ensure this is a wine to be enjoyed with good food and fine company.

Formby Adams Leading Horse Cabernet

In 1891 William Formby wielded his leading team of Clydesdale horses into action, planting the first two acres of Cabernet Sauvignon at Metala. Today his great, great grandson continues the family tradition. Guy Adams grows fruit for some of Australia's most esteemed labels. The pick of the crop however, from four individual plantings on the eminent Metala property, is held back for Formby & Adams, the Cabernet contingent from Brothers in Arms.

Although Metala was settled in the 1850s and is a fifth generation vineyard with a long and proud family history, it is the Brothers In Arms who made it what it is today. Guy Adams is very close to the land worked by his forefathers, he consistently leads the way through a mix of traditional and modern viticultural practices which enable him to extract yields of the finest fruit from his famous vineyard. Cabernet Sauvignon is treated to a traditional vinification followed by eighteen months maturation in a combination of seasoned French oak barriques. Leading Horse Cabernet is bottled without filtration and may form a crust, a decant is recommended.
 
Deep crimson colour with garnet hues. Intense aromas of blackberry, mulberry and dark cherry with hints of fennel and leather supported by spice and tar notes. A generous, structured palate exhibits blackberry and blackcurrant fruit, a touch of mint and an earthy texture. Chewy, textured tannins ensure a finish of balance and great length, Leading Horse drinks beautifully on release.

Fox Creek Chardonnay

McLaren Vale yields a generously proportioned yet gentler style of Chardonnay, Fox Creek is made more complex by treatments of battonage, a course of lees resting and luxurious barrel ferments. Grapes are harvested throughout the cool of early morning, retaining all the crisp, clean charm of McLaren Vale Chardonnay. The peachy varietal stonefruit characters becomes prominent, together with a noticeable mineral quality and the beginnings of honey toast as it evolves. Wonderful upon release, expect Fox Creek to be at its very best alongside fine food.

Fox Creek own and operate three estate vineyards, planted to choice terroir and clime, very near the village of Willunga. Chardonnay is harvested at ripe and healthy baumes, grapes are crushed and two thirds of the juices are vinified in a mix of new and one year old French oak barrels, a moderate proportion is wild yeast fermented for greater complexity. Barrel components are matured on yeast lees for several months, developing a rich creamy palate. The balance is vinified in fermenters at moderate temperatures to retain maximum fruit character. Components are assembled and the final wine is returned to oak for a spell of integration, integrating flavours and enhancing the structure prior to bottling.
 
Pale golden hue. Golden peach, nectarine and honey notes over creamy yeast and subtle biscuity oak for a rich complex bouquet. A rich fruity palate showing golden peach, apricot and pineapple flavours. The textural oak frame surrounds dollops of creamy butter, honey and toast, a crisp mandarine finish completing a complex, restrained and balanced wine. Fully integrated oak coupled with crisp acidity gives zing, persistence and length.

Fox Creek began to flow when a group of medicos decided to realize a lifelong passion and create the best possible wines out of bare earth and sunshine. The Fox Creek vineyards were established from the ground up to be the most environmentally friendly, whilst the vines themselves are spoiled with attention. Dr Jim Watts writes the recipe for a whole that's greater than the sum of parts, Merlot for elegance and plummy fruit, the silk of Cabernet tannins, aromaticness of Cabernet Franc, Petit Verdot for titillating spice and dazzling blueberry fruit.

The essential cépage of Medoc, half of Cabernet and third of Merlot, the balance in Cabernet Franc and Petit Verdot. The superlative quality of Fox Creek begins with an exacting pruning of vines to achieve smaller yields of the most intense fruit. Batches are open fermented for a week and a half on skins before pressing off. The Cabernet component is vinified in a selection of prior use French and American oak barrels, Merlot, Petit Verdot and Cabernet Franc are treated to the finest seasoned French. Alcohol 14.5%
 
Deep purple red. Fresh leafy and minty lift, hints of perfume, chocolates and cigar box, blueberries and blackcurrant, nutmegs and clove. Raspberries, black cherry and blackberry, coffee and mocha, hints of toast, brown spices and roasted nuts, Jim's fine silky tannins cosset the palate, delivering focus, flattering style and splendid length.

James Stanley Malpas, born of Willunga, served with the 27th Infantry Battalion AIF during World War I in Gallipoli and France, decorated with the distinguished Military Cross, he returned to McLaren Vale and cleared the land known as Fox Creek. Three quarters old vine Shiraz, a fifth of Cabernet and soupçon of Franc, JSM makes a wine of complexity, substance and panache, it's all luscious fruit, framed by long textural Cabernet tannins, fully integrated and balanced by the patience of nineteen months in the pick of well seasoned oak.

Deep red, purple hues. An enticing array of black cherries and blood plum, liquorice and smoky toasts, vanilla bean, notes of charcuterie and herbal spearmint lift. Black cardamom on the effusive palate, cinnamons and clove, the nutmeg oak of barrel ferments. Cabernet Sauvignon for ripe round tannins and length and the Cabernet Franc batches were selected for aromatic lift and fruit weight.

Mostly Grenache, a third of Shiraz, the balance of Mourverdre. Grapes are grown to a trellis system called Scott-henry and the vines are trained to two cordons. Selective hand pruning yields a harvest of small, concentrated berries full of colour and flavour. The precious parcels of distinguished, sixty to eighty years old McLaren Vale vines are treated to an old fashioned maceration and vinification in traditional open fermenters, followed by a press and fill to a selection of seasoned French and American oak puncheons, purposely chosen for the task on the basis of spicey oaken characters and sweet tannin profiles.
 
Bright cherry red. Perfumed confectionary lift of raspberry and cerise, mulberries and hints of musk, ginger nut biscuits, cinnamon, nutmegs and clove. An expansive berry palate, hints of chocolate éclair, well integrated oak, focussed and elegant tannins before a silky persistent finish. The red wine of choice to match with venison pie and gourmet bangers.
