McLaren Vale enjoys an unrivalled reputation in Australia and indeed the world, for Shiraz grapes with fully developed characters, translating into wines of excellent fruit and fine length. The original Penny’s Hill Vineyard is at the very foothills east of McLaren Vale, slightly cooler than the valley floor, a legacy of extremely low yielding vines which produce fruit of amazing richness and complexity. Only the most splendid rows are hand picked for inclusion into the icon Footprint Shiraz. Grapes are open fermented on skins for a fortnight, followed by pressing into an extravagantly high proportion of new French oak barriques for eighteen months maturation before the final assemblage.
 
Dark, black scarlet hues. Blackberry and dark plum fruit bouquets, black olives, cedarwood in support of underlying savouryness. Purity of provenance, elegance, minerality and focused oak, underlying layers of stunningly perfumed opaque fruit, a fully opulent wine of intensity and drive, resolves on a lingering length of black, blue and purple currant fruits.
Pennys Hill Malpas Road Merlot

The Malpas family planted four scant acres of clone D3V14 Merlot vines to an auspicious block of dark, dry Bay of Biscay soils in 1991. The fissures which occur as the soils crack, sever the roots and diminish vigor in the vines, culminating in vintages of the extraordinary intensity and concentration of fruit. Bunches are destemmed, crushed and vinified on skins for a week, followed by a press into seasoned French oak for malolactic and eighteen months maturation. Bright cherry and blueberry fruit, red licorice and savoury spice, supple tannins and soft, lengthy finish.

Penny's Hill is an eighteen acre block, planted to Shiraz by proprietors Susie and Tony Parkinson in 1991. Narrow rows and high density plantings saw a move away from traditional viticultural practices and has contributed to the quality of harvest, year in and year out. Fruit is destemmed and treated to several days of open fermentation on skins prior to pressing. By keeping parcels separate throughout the vinification, a range of styles can be considered from which to assemble the ultimate McLaren Vale Shiraz. Choice batches, free run and pressings complete their ferments in a high proportion of new French oak barriques, followed by eighteen months maturation.
 
Deep, dark crimson red. Sweet red currant and blackberry fruit supported by vanillin spice and a perfumed lift. Rich, ripe dark berry fruit complemented by layers of spice, dried herbs and chocolate. Great length and intensity, all the defining characteristics of a big rich black wine, chocolate and earth combine to create a delicious persistence. Indulged by extended maturation in the finest oak, a McLaren Vale Shiraz of generous flavour, consistency and renown.

Penny Hill's proprietary red blend, the enduring Australian cépage of Cabernet and Shiraz, softened by the genteel plummyness of Merlot, for a wine which defines all the vinous endowments of McLaren Vale. Merlot delineates the concord, moderating the power of Cabernet and piquancy of Shiraz.

Shiraz and Cabernet Sauvignon grapes are harvested from the narrow planted, hand managed, high density vines of Penny's Hill, combined with parcels of Merlot from vines on Malpas Road, grown to unique black, cracking Bay of Biscay and brown loam soils immediately south of Penny's Hill. Fruit is destemmed and crushed, prior to varietal components undergoing separate primary fermentation for seven days on skins. Post pressing, each separate batch is transferred to a combination of new and prior use French and American oak barrels. The wines are assembled after a year, as the integration of fruit, oak and softening of tannins are complete.
 
Deep, dark purple colour. Ripe plum, spice and floral notes with distinctive McLaren Vale earthiness and subtle tobacco/ chocolate qualities. A veritable starburst of fruit, Specialized bursts onto the palate with lively, crunchy, berry flavours, a harmonious balance of tasty oak, acid and tannins, texturally rich with savouryness on a finish of splendid length.

Wrattonbully adjoins the famous Coonawarra and shares many of her sister's viticultural endowments. Fashioned to be a true expression of the terroir whence it originates, Pepper Tree is a generously flavoured Cabernet Sauvignon with all the warmth and charm that defines the natural endowments of Wrattonbully's rich Terra rossa soils.

Pepper Tree have applied their principles of dedicated vineyard management and uncompromising standards of vinification, in the pursuit of a compelling yet accessible Cabernet Sauvignon. Wrattonbully adjoins Coonawarra, the prominent viticultural feature is a series of ancient beach ridges and dunes which run north to south. These are made up of soft crumbly limestone which weathers to produce the red and brown Terra rossa clay loam soils that are so highly prized for growing outstanding Cabernet. Components harvested from good vineyards are treated to a week's vinification on skins at 18C to 20C, followed by an extended term of age in a selection of French oak barrels.

Wrattonbully makes Merlot of exceptional character and flavour, arguably the finest and most consistent annual yields in Australia. The wines are distinctive for their blueberry, plum and mint character, sound structure and velvet tannins. Pepper Tree's Merlot vines are fortuitously planted to heavier clay soils at the toe of the main Wrattonbully dune, as heavy clays have proved to be the best soils for Merlot in its traditional home of Bordeaux. A soft and rich, profoundly fruit driven Merlot wine with more power and weight of varietal flavour than most.

The prominent viticultural feature of Wrattonbully is a series of ancient beach ridges and dunes which run north/ south, made of soft crumbly limestone which weather to produce the red and brown Terra rossa clay loam soils that are so highly prized for growing outstanding quality wine grapes. The higher elevation brings the advantage cold air drainage which reduces the risk of frost throughout the colder months of the growing season. Harvests of Merlot from choice Wrattonbully vineyards are treated to a fortnight on skins in static fermenters, pressed off skins and racked to a selection of fine French oak barrels for eighteen months before assembling into the final wine.
 
Deep purple red colour. An aromatic Merlot nose of black and red fruits with spicy lift and subtle oak. A fully ripe, classically medium bodied palate, packed with sweet berry fruits and spice, balanced by subtle French oak and fine, long velvet tannins, before a lingering complex finish. Enjoy with polpette e papardelle or coq au vin.

Pepper Tree have strayed from their wineworks at Pokolbin to secure harvests of Terra Rossa Shiraz which are second to none. The team know from good fruit and have a good eye for terroir, their splendid vines planted to Wrattonbully's Gravels Block grow a superior quality of Shiraz, characterized by controlled power and stealthy tannins. Flavour maps which have been generated for the vineyard demonstrate considerable variance, assisting the team to isolate individual sections for the production of a wine exhibiting generosity and charm.

Pepper Tree's Wrattonbully vineyard covers a hundred hectares. Individual blocks are given separate canopy management, cropping structure and moisture control according to soil depth which can vary from a few centimetres to over a metre. Shiraz is grown on red soils with gravelly ironstone layers on the lower slopes of the dune. The extra elevation of the Wrattonbully dunes provides a fortuitous cold air drainage which reduces the risk of frost during the growing season. Shiraz grapes are crushed and vinified on skins at controlled temperatures of 18C to 20C for a week, followed by a year's maturation in a selection of choice French oak barrels.
 
Deep scarlet purple hue. Complex nose of dark berry fruits, a heady mix of lifted spice notes integrate well with subtle French oak. Rich and concentrated palate, displaying sweet mid palate fruit seasoned by complex spice flavours. The nicely structured finish is finely balanced and well supported by subtle ripe tannins. The dominant characters of the wine are its spicy white pepper flavours and exceptional palate length.
