On a highland farm, the array of barns, stables and outbuildings is known as a steading. Steading GSM has long been David Powell's favourite wine within the Torbreck stable because of the old, gnarled bush vines that produce its core. Grenache, Mataro and Shiraz grown to ancient sites at Moppa and Marananga, Seppeltsfield and Ebenezer, Gomersal and Greenock, perform brilliantly in their own right. When assembled however, their strengths coalesce into a wine of remarkable structure and bucolic grace.

There are still ancient Barossa vineyards planted to Grenache, Mataro and Shiraz, brought over from Europe on original pre-phyloxera rootstock. Share farming agreements with the Barossa's best growers ensures access to these precious sites. There are over forty different parcels, all vinified and matured separately. Grapes are destemmed into open top wooden and concrete vats, gently pumped over for a week, basket pressed and treated to malolactic, racked into seasoned French oak hogsheads for two years maturation, followed by assemblage and bottling without fining or filtration.

Deep ruby red, violet hues. Delicate aromas of truffle, five spice and spring flowers, supported by a rich core of licorice, saddle leather and herbes de Provence. Burgundian in style, the palate is elegant and pure with subtle notes of crushed cherries, cedar and earth, all neatly wound by a taut spine of acidity over a length of ripe supple tannins. A wine of amazing complexity and integration, which will continue to evolve and unfold.

Inspired by the lusciously rich, mineral scented dry whites of La Vallée Rhône, Torbreck have assembled the essential cépage of Marsanne, Viognier and Roussanne, sourced entirely from the distinguished Descendant Vineyard at Roennfeldt Road in Marananga. Five rows each of superior vine, set aside every year for the construct of full bodied whites to rival the classics of the old world. A seamless experience in silken texture, to accompany anything seafood, west coast marron or moreton bay bug, brewed mussels or deftly prepared abalone.

After a day of rest, the Roussanne component is racked to fermenters, Marsanne and Viognier are filled to a selection of seasoned French oak barriques, for a rich barrel vinification in the traditional Rhone Valley way. Each parcel is treated to a slow indigenous fermentation, followed by a term of seven months maturation on fine lees prior to assemblage.

Bright yellow hues. Fragrant aromas of acacia flowers roasted nuts and buttered citrus, neatly balanced by underlying hints of bees wax and mineral, fino and chalk. The ripe, fleshy barrel fermented Viognier and Marsanne contribute extraordinary richness to the palate, Roussanne brings flintyness and mineral, savouryness and chiselled, austere personality.

The view from Struie down towards Dornoch Firth, is as inspiring as the panorama across Barossa's Valley floor from atop the elevated ranges. David Powell assembles Shiraz from ancient, isolated little Barossa vineyards, some are well over a century of age. Sourced from several elevated sites throughout the Barossa and Eden Valleys, Struie reflects the cooler side of the region and showcases the subtle nuances which can be gained from hillside viticulture, for a full bodied and powerful, rich red wine of purity, focus and intensity.

$5599each $671DOZEN EACH DOZEN Named after a hill which rises above Glenmorangie distillery, Struie is the home of a pub called Altman Arms, where David Powell first heard a band called Run Rig. Sourced from several elevated sites along the Barossa floor, sixty+ year old vines, assembled with forty+ year old vines from Valley Eden. Grapes grown to the Eden's higher altitudes ripen slower and later than their cousins down in the Barossa, resulting in distinctive quality of fruit with a lower pH and higher natural acidity, elegant, tightly structured and highly prized by winemakers. Batches are separately fermented and treated to an extended maturation in a selection of mostly seasoned French oak barriques.

Dense, opaque red. Aromas of black raspberry, creme de cacao and star anise around a fragrant core of braised meat, earth and olive tapenade. Full bodied and tightly structured, the palate exhibits perfect ripeness and brooding richness along with a spine of beautifully integrated acidity and fine tannin that will greatly reward. Beautifully weighted, with an extra dimension of rum and raisin throughout, a Shiraz of remarkable concentration.

On a highland trail, the place to stop and rest when weary is known as a Bothie. Torbreck have been tinkering away at a sweet wine since 2001, the idea was always to construct something that's just a little bit different. This sweeter style of Frontignac exhibits lifted fruit aromatics, lifted perfumes of rosewater and honeydew melon, geraniums and lime, very characteristic of it's Barossa provenance. Bothie is a very versatile wine that can be enjoyed either at the start of a meal or nicely chilled at the end, alongside fresh fruits and cheese, ice creams or sorbet.

$1999each $239DOZEN EACH DOZEN Torbreck's owner operator David Powell has always been a huge fan of France's Muscat Beaumes de Venise. Muscat à Petits Grains (Brown Frontignac) grapes are harvested from Helbig Vineyard at Marananga in several stages to acheive different levels of ripeness, creating a myriad of potential flavours. Grapes are gently crushed and pressed with as little skin contact as possible to minimize phenolics. Fruit is treated to a slow vinification in fermenters, halted mid way by the addition of a neutral spirit to arrest yeasts against further acivity and raise alcohol level to around fourteen percent, retaining Brown Frontignac's natural sweetness.

A vibrant, straw/ peach yellow colour. Beautifully fragrant aromas of fresh pine/ lime, melon and lychees are accompanied by extraordinary floral notes. The subtle, clean flavours of lemon sorbet, lemon tart and orange rind balance perfectly with the residual sugar to achieve a full, lush, round palate. A sweet but substantial wine, equally enjoyable as aperitif or dessert.

In the early 1980s, due to lack of demand, the government paid incentives to growers to rip out their vines and gut some of Australia's most precious old vineyards. The movement to cool climate viticulture made the Barossa, of all places, look rather irrelevant. The Factor is Torbreck's salutation to those dedicated growers who stood by their vines and continue to painstakingly produce small harvests of the most splendid Shiraz. A wine of immense concentration and great purity of fruit that only the most meticulous husbanding of vines can achieve.

David Powell took an interest and nursed them back to health, he was rewarded by the proprietors with small parcels of fruit which he made into wine. The formula has served to produce profound efforts which are recognized as some of Australia's most distinguished wines. Parcels of Shiraz on old dry grown vineyards at Gomersal and Kalimna, Rowland Flat, Ebenezer and Marananga are selected for their quality and individual charm, separately vinified and matured up to two years in a selection of new and seasoned French oak barriques, followed by assemblage and bottling without fining or filtration.

Deep scarlet with robes of tawny red. Delicate scents of wild blackberries, pipe smoke and pepper are supported by a dark core of espresso roast, black currants and coal. The nose expresses soil, earth and vinuous tones of vibrant black jelly fruit. The palate offers tremendous texture and combines great richness with subtle notes of olive tapenade, saddle leather and mineral. Brooding and densely packed, this majestic wine continues to slowly unravel its extravagant riches.

A pure, single vineyard wine, from fruit picked off a single plot of Shiraz, planted 1960 and still managed by the same family. The rocky surrounds of Greg and Cynthia Knight’s highly elevated block of vine were so very reminiscent to winemaker David Powell of stone burial grounds on the hills above Torbreck forest. Nestled into the eastern slope of Mt. McKenzie, this cherished site yields a harvest of parched, intensely flavoured berries, brimming with extraordinary character, lined with the most graceful tannins, endowed with remarkable balance, elegance and poise.

$8099each $971DOZEN EACH DOZEN Grapes are all carefully hand picked and passed over the sorting table, bunches are destemmed into two, traditional open cement vats for an extended cold soak maceration and inoculation to wild indigenous or ambient yeasts. Upon completion of ferments, vats are drained and components are treated to a basket press, racked into a selection of seasoned French oak barriques for a course of malolactic and eighteen months maturation, to be bottled unfiltered and unfined.

Dark black red, inky hues. A stirring nose of graphite smoke, crushed rocks and blackberry liqueur. Velvet palate of perfumed cherry, plum and dark currant flavours, persistent and refined. Heroic in style, while retaining the cooler edge and tighter structure for which the greatest growths and finest wines of Eden Valley are famed.

Rhône Valley grapes seem to flourish in the Barossa, enthused by sunny Mediterranean climes and stimulated by the cooling breezes off Gulf St Vincent. Torbreck retain access to the finest parcels of white Rhône varietals in the entire Valley. Woodcutter is fashioned to be dominated by a larger component of Roussanne, which provides the structure and length, Marsanne adds complexity, texture and palate richness. Viognier contributes pure, floral lift, finishing the wine with a measure of refinement and mark of elegance.

All grapes are hand picked and separately processed by vineyard and variety, bunches are gently pressed and the juices filled into open vats for cold settling. After a day of rest, Roussanne is racked to fermenters, Marsanne and Viognier are transferred to a selection of seasoned French oak barriques. Parcels are treated to a slow, cool fermentation, followed by seven months maturation on light sedimentery lees for palate richness before assembling into the finished wine.

Light straw hues. Wonderfully lifted, floral and fragrant, alluring and complex nose of citrus and mineral, stonefruits, kernel and meal. Solid palate of drying pineapple and banana chip characters, jaffa notes and vanillan, exotic fruit complexities and opulence throughout, its vibrant length of silken textures and minerality resolve on a finish of lingering, orange citrus freshness.

Fashioned with the savoury, food friendly dry whites of southern France in mind, Woodcutter Semillon is the ideal tonic after a long day in the vineyard. The copper hued skins of the characterful and ancient Madeira clone of Semillon, fleshes out the palate markedly, infusing the complexity of pineapples and almond kernel, roasted cashew and ripe white peach. A match to creamy French style curries, yabbles and frog legs almondine or grilled fishes on fragrant rice.

All grapes are hand picked into separate parcels and individually processed, bunches are whole bunch pressed to open vats for a term of cold soak and gross lees settling. After a day of rest, the younger blocks are racked to fermenters, whilst the older more robust parcels are filled to a selection of well seasoned French oak barriques for a long cool vinification. Components are assembled into the finished wine in the November following harvest.

Pristine lemon hues. Delicate notes of cumquats and calamansi, limestone, candle wax and toasted brioche. Medium bodied, youthful palate, suppored by underlying notes of minerals and citrus oil, an exquisite freshness of fruit, preserved by a crisp spine of razor acidity which neatly laces into the finish.

Before David Powell took on the task of raiding Barossa vineyards, he spent several years on the Scottish Highlands as a lumberjack in the Torbreck forest. Woodcutter Shiraz is a highly approachable introduction to the Torbreck range, featuring fruit from some of the up and coming vineyards, rather than the battle hardened old warriors which make up the heart and soul of the Torbreck winelist. This is the kind of red the winemaker himself liked to drink with a hearty meal after a hard day's work in the wood, but you don't have to be a woodcutter to enjoy it.

Low yielding, old, dry grown vines are the cornerstone of Torbreck. Manual winemaking methods and minimal intervention are combined o produce a profound style. The growers have been selected for the uniqueness of their site and spartan approach to viticulture. The focus at Torbreck wines is on the vineyards, not the winery. Woodcutter is fermented in steel, wood and cement vats over the course of a week, basket pressed to well seasoned hogsheads and French oak foudres for a year, bottled without fining or filtration.

Dark scarlet colour. Sweet boysenberry and candied plum, floral oils and cured meat on the nose, a refreshing mineral tone. Blackberry and raspberry, cherry and licorice, peppery aromas soar from the glass of this opulent, voluptuously textured Shiraz. Boasting superb purity, intensity and length, juicy and nicely balanced with an attractive interplay of red and dark berry flavours given focus by crisp but not strident acidity.
