Cabernet Sauvignon has been the flagship of Leconfield since the first monumental release in 1977. The aim is to produce a Cabernet wine displaying depth and elegance where oak complexes and enhances the fruit but is not allowed to dominate. Following inoculation to saccharomyces cerevisiae, some components are treated to barrel ferments in predominantly French oak, the balance is held for an extended skin maceration before pressing, achieving the well established statuesque Leconfield style. Following completion of malolactic and a period of exposure to lees in barrel, Leconfield is treated to a year and a half in a high proportion of new French and American oak hogsheads.
 
Deep red, crimson hues. Augmenting the elegant cassis and blackberry fruit aromas, are scented cinnamon, nutmeg and cedar notes. Fine, medium bodied palate, showing the cassis flavours of traditional Coonawarra Cabernet. Fine velvety tannins balance the textured sweetness of fruit. A tight clean finish, approachable as a youthful wine, the elegance will complement continental inspired recipes.

Leconfield take aim each year to construct a fragrant, mouth filling Coonawarra Merlot, from grapes infused by the rich terra rosa soils, layered with great depth of flavour and framed by sound structure, in which oak plays an important but not prominent role. Significantly, the vines are in their third decade of productivity and yield a distinctly elegant Merlot wine of great sophistication and exquisite balance, suitably swathed in a robe of fine, silky tannins.

Since inaugural release, Leconfield have been driven by the philosophy that great wines can only come from great vineyards. Merlot grapes are harvested off exclusively estate grown vines, including clone V3D14, planted 1974, 1982 and 1990 to Coonawarra's reddest Terra rossa soils. After a detailed hand clean up which follows the initial machine pruning, grapes are crushed and juices inoculated, initiating tthe ferments and a term of three weeks resting on sedimentery yeast lees. Following completion of malolactic, Leconfield is treated to fifteen months in a combination of new and prior use French and American oak hogsheads and barriques. Alcohol 14.0%

Leconfield occupies some of the Coonawarra's richest Terra rosa over limestone soils, a composition that's idyllic for vintages of superior new world Shiraz. The aim is to craft a wine endowed with great palate depth and weight of fruit whilst retaining elegance, where oak complexes and enhances the fruit but is not allowed to dominate. Several components of Leconfield complete their fermentations in barrel while the balance is treated to extra time on skins before pressing and filling into the highest quality French oak for an extravagant, extended maturation.

The signature style of Leconfield, from mature adult vines grown to rich Terra rossa soils, the bunches are treated to a detailed hand clean following the initial pruning and harvest. Much of the wine completes fermentation in French oak, assembled with a component that's been treated to extended contact on grape skins for several weeks. Leconfield is matured nineteen months in a selection of seasoned and new French oak hogsheads with several workings to soften the tannins and fill out the flavour, followed by a light egg fining and gentle filtration.
 
Rich red colour. Ripe plum and cassis nose, red cedar, nutmeg and cinnamon. Palate displays an excellent depth of rich dark peppery plum fruit flavours supported by ripe, long tannins, full of flavour while retaining elegance and finesse. Leconfield will develop cedary characters as the lovely primary fruit evolves. A wine to be savoured in a large glass to the accompaniment of the best beef and gourmandise game.

Sydney Hamilton was a highly accomplished oenologist who established the Leconfield brand in 1974, at the ripe old age of 76. His commemorative label is crafted from the top cut of Cabernet Sauvignon, hand picked off the original estate plantings, vinified in Sydney's favourite old fermenter, finished in a luxurious selection of completely new Dargaud Jaeglé French oak hogsheads and aged an extravagant twenty nine months. Dominated by opaque winegum, black cherries and cassis, draped in a robe of satin tannins, Coonawarra Cabernet of the highest order.

Leo Buring graduated as Dux of Oenology at Roseworthy Agricultural College in 1896. He gained practical experience in Europe before settling back at Minchinbury in 1902. Four years later, his wines earned six gold medals at The Brewers and Wine Exhibition in London. Over the years, Leo Buring established an international reputation as Australia's foremost maker of Riesling. The combination of climate, soil, aspect and location all add up to create discernibly different characters in Rieslings from each region. The favourable climes and cool nights up to harvest allow complex flavours to develop. Leo Buring is bottled immediately after vinification to capture and preserve pristine freshness.
