Gapsted have taken the opportunity to acquire superior harvests, grown to the upper and middle reaches of Valley King, constructing a Cabernet Sauvignon of wonderful warmth, integrity and charm. A component of exquisite Barossa fruit contributes comforting chocolatey richness, a precious parcel from a choice site in Heathcote adds palate weight and splendid savouryness. A whole that's greater than the sum of parts, suede textural mouthfeel, generosity of fruit and sound structure, finishing in precisely the right direction.

$2999each $359DOZEN EACH DOZEN Gapsted are owner operated by winemakers and growers who were raised on neighbouring farms. They know King Valley well and settled down with loved ones to plant vines. Cabernet Sauvignon is harvested at night from fine vineyards in Heathcote and Barossa Valley, to be assembled alongside a backbone of cool ripened fruit from the higher aspects of Valley King. Grapes are cold sealed prior to a warm ferment. Batches are pressed off skins after a term of maceration and racked to barrel for completion of malolactic. Components are treated to an extravagant two years maturation in a selection small French and American oak barriques, followed by a light fining for bottling.

Deep black red colour. Dark, ripe, brambleberry and forest floor aromas with hints of spicy cinnamon and earthy beetroot. A rich full flavoured palate brimming with cassis and blackcurrant fruit leading to a lucsious velvety mocha finish. Gapsted fills the whole mouth with fruit weight and finishes on well rounded tannins. Serve Gapsted with rosemary thyme lamb and roast vegetable.

Following traineeship at B Seppelt & Son, a stint in South Africa, tours of duty at Thomas Hardy and Chateau Reynella, Geoff Merrill acquired the beautiful but derelict Mount Hurtle wineworks in 1985. Merrill devoted years of love and hard work to restore the winery vineyard to its former glory. The property yields some of the finest Cabernet in McLaren Vale. An equal part of Cabernet Sauvignon from Graymoor in Coonawarra completes an immaculate wine, matured thirty one months in small oak barrels and assembled after a cull of the most superior stocks.

The best parcels are selected and vinified to a mix of old and new world techniques, to achieve a Cabernet wine with an intensity of flavour in compelling, Margaret River styling.

$1499each $179DOZEN EACH DOZEN Evans & Tate's vineyards produce ripe, intensely coloured Cabernet berries brimming with bright varietal characters and endowed with soft textures. Prior to picking, grapes are tasted twice weekly to monitor flavour, colour and tannin development. Bunches are harvested throughout the cool of night and early morning, gently destemmed, transferred to static fermenter and cold soaked for several days. Parcels are fermented at 22C to 24C as seeds are carefully extracted and batches thoroughly aerated every eight hours. Upon completion, components are pressed to tank and racked clean off yeast lees, a third of Gnangara is matured in French oak.

Deep purple red colour. Pure Cabernet nose exhibiting briar, fresh blackberry and blueberry aromas ahead of a leafy menthol/spearmint lift. French oak maturation has infused delicate cedar and subtle spice notes. Palate is filled with ripe blueberry and plum, fresh, flavoursome and long with perfectly integrated characters of cedar and toast. Bliss alongside roast beef and crisped potatoes.

Vinified from parcels of elite Cabernet grapes grown to Grant's Cameron Vale vineyard, planted in the early 1970s, along a fertile area between Lyndoch and Williamstown. A solid backbone of estate grown fruit is enhanced by a further component of splendid Cabernet Sauvignon from the cooler, slow ripening altitudes of Valley Eden. The maturity of site and devotion of the Grant Burge team to their precious vines make a major contribution, clearly evident in the intensity, seamless integration and controlled power of the finished wine.

$2699each $323DOZEN EACH DOZEN The intensity of fruit in Cameron Vale mark it as being from a very special site. Unique microclimes and soil permit varietal characters to fully develop, yielding grapes of intense concentration and rich flavour. After crushing and de stemming, juices are vinified on skins for a week, temperatures peak at 26C early on in the ferments before being brought down to 22C. A quarter of the components are left on skins for a month, adding structure and enhancing the colour. Following completion and an extended maceration, parcels are treated to full malolactic in barrel. The assembled wine is then transferred into a high proportion of new and seasoned French and American oak barrels for eighteen months maturation.

Inky black in colour with vibrant purple hues. Dark fruits and blackcurrant are dominant on the nose, with hints of savoury spice courtesy of French oak. The palate is generous with dark fruits, ripe plums and a hint of chocolate with the richness of the wine balanced by fine, silken tannins and a refined structure. The rich and complex characters are a delicious match to aged beef or roasted kangaroo.
