Voyager Estate North Block Cabernet Sauvignon
Margaret River
Available in cartons of six
Voyager are all about hard work in the vineyard rather than improving the quality of harvest through clever winemaking. Traditional techniques are essential to crafting great wines but the basic principles most common to the world's most memorable vintages are all about what goes on in the vineyard. The highest standards of husbandry and a minimal intervention remain cardinal. A wonderfully aromatic wine, redolent of violets and cassis, the fragrant ripeness of dark bramble berries. High quality French oak for definition and soft tannin structure. The artful articulation of Margaret River Cabernet Sauvignon.

Water Wheel Cabernet Sauvignon
Bendigo
Available by the dozen
The parched, sun exposed vines at Water Wheel are only a slight distance from the shade of giant river gums, which grow along the banks of Loddon River. Ancient eucalypts infuse the grapes with a treasure trove of complex, elegant flavours. A salient Bendigo Cabernet that's warming and generous with intense flavours and long, drying tannins, ideally suited to meat braises and grills, steak and kidney pie or venison bangers.

The proprietors of Water Wheel have farmed locally for many years and place a strong emphasis on sustainable horticulture and vineyard management. Vines are planted to heavy clay soils interspersed by pieces of limestone. Hedge trellising exposes grapes to the sun for maximum ripeness. All vines are irrigated from the nearby Loddon river with ground level mini sprays, all cropped at three tonne per acre. Cabernet Sauvignon is vinified in open fermenters at 20C to 22C, the cap pumped over, plunged and pressed at dryness. Water Wheel has been aged in a combination of new and seasoned, mostly American oak hogsheads, crafted by prestigious European cooperages.

Deep ruby colour. Cassis and regional menthol aromas on the bouquet. Rich, forward drinking fruit characters, complex with savoury ripe berry fruit and cedar oak, lifted by hints of cloves and cinnamon, cherries and mulberry. Full bodied and complex with silky velvet tannins before a long and persistent, satisfying finish.

It is the unique confluence of sun, soil and skill, which makes the wines of West Cape Howe such a personal and moving experience. The estate owns and operates many of the finest vineyards in Great Southern, treating the pick of their fruit to minimal winemaking intervention, capturing the influence of clime on the vintage and harvest. Parcels of Cabernet Sauvignon are treated to ten days of ferment and frequent pumpovers for ideal extraction of rakish colour and sleek tannin. Upon completion, batches are pressed into a selection of seasoned and new French oak barriques for an extravagant eighteen months. The best barrels are assembled into the finished wine and treated to a further year of maturation.

Deep inky red, crimson hue. Ripe dark fruits of plum, cherries and blackberry, undertones of dark chocolate and spice. A rich and elegant palate, displaying blackberry fruit flavours and hints of cassis. A complex and fulfilling Cabernet wine, lined with classic French vanilla oak characters and supported by firm, elegant tannins, before a persistent dark fruit finish.

Wirra Wirra Angelus Cabernet
McLaren Vale
Available in cartons of six
Robert Strangways Wigley was an eccentric South Australian cricketer who established Wirra Wirra in 1894. He produced a highly prized Shiraz which was exported to England and the Empire until he passed away in 1925. The cellars fell into disuse after the 1936 vintage and remained inoperable until Greg and Roger Trott rebuilt the ironstone winery by hand in 1969. Tradition has it that the ¾ tonne Angelus bell which sits atop Wirra Wirra was rung thrice daily from the Jesuit Church at Norwood, calling the faithful to prayer.

McLaren Vale, as well as being home to some of the oldest Shiraz vines in the world, is blessed with soils and climes which are ideal. Vineyards contributing fruit to Angelus are up to sixty five years of age, typically low in vigor, producing modest yields of intensely flavoured berries. Parcels are picked in small batches from superior sites at Seaview and Blewitt Springs, Onkaparinga Hills and McLaren Flat. Grapes are treated to a cold soak, inoculation and cap management throughout the ferments, followed by a traditional basket press to oak for completion of malolactic. Each batch is matured fourteen months in a mix of seasoned and new French oak barriques, rack and returned, before the final assemblage.

Deep violet purple. Fresh and exceptionally varietal with lifted blackcurrant leaf and cedar notes integrated with some toasty oak. The palate is refined and elegant, mouthfilling with plums and mulberry, black cherry fruits and long, persistent fine grained tannins. Aromatic cedary oak with anise and dark chocolate adds layers to the fleshy red fruit. A wine of balance, power and style, to be served alongside the finest gourmandize.
