The first Train Trak vines were planted in the 1990s and nurtured thereafter by the superior viticultural practices of John Evans. The vineyard's name relates to a train track which runs through the property over a quaint trestle bridge. Built in the 1800s, it was an important link to the Yarra Valley and is still a significant landmark traversing the local vineyards and pasture. Parcels of intensely ripe hand picked, estate grown Yarra Glen grapes are crafted into an exceptionally balanced Cabernet wine with well integrated French oak and fine, drying tannins.

$2699each $323DOZEN EACH DOZEN The winemaking at Train Trak is a modern adaptation of traditional techniques. Barrel treatments in French oak and gentle plunging of open top ferments are old world techniques which ensure all the intense Yarra Valley flavours and characters are extracted. A state of the art temperature control and wholistic viticulture all contribute to the intensity and balance in the wine. Following destemming and the crush, fruit is treated to a warm fermentation followed by a spell of maceration to enhance flavours and build texture. Components are pressed off skins, settled and racked to a selection of new and seasoned French oak barrels for an extended maturation.

Deep ruby colour. Lifted bouquets of bramble and raspberry, mulberries and subtle vanilla oak. A fine and elegant palate, medium bodied and layered with dark fruit, a concentration of brambleberry and cassis over savoury briar and earth notes. Seamless balance, structure and length, over a course of silky, finely grained tannins which run the length of palate right to the long, lingering finish.

A pure, flagship Cabernet Sauvignon from a mature single vineyard on Radford Road in the Seppeltsfield sub-district of the Barossa Valley. The Two Hands wineworks at Marananga was designed specifically for small batch production of the very best parcels of fruit. Very occasionally, the Two Hands isolate a block of vines that are earmarked to be handled separately, and vinified into a tremendous Barossa Cabernet. Length of palate and great persistence balanced by excellent depth is the hallmark to the subtle but complex Aphrodite.

$20999each $2519DOZEN EACH DOZEN A highly specialised Shiraz producer, Two Hands are inspired by a tiny quantity of the most superlative Barossa Cabernet to create an extremely limited small batch wine. Crushed and fermented in five tonne open top fermenters with regular pump overs, three daily during peak fermentation to extract colour and tannin. Following seven to twenty one days of maceration, the dry free run is drained to tank. The skins are then pressed and the pressings transferred to the same tank, the wine is then racked to barrel for malolactic fermentation. Extended maturation for a period of twenty two months in 100% new French oak Taransaud hogsheads. Minimal fining and unfiltered.

Deep, almost impenetrable black in the glass. Fully charged aromas immediately spring from the glass, plum and lavender, mineral and earth, cedar and grilled meats all enveloped around classic cabernet complexity and purity. The palate delivers right from entry with dense and plush red fruit flavours bursting forth amongst polished but fine tannins and refined acidity.

For as long as Margaret River has been famous, it has been famous for Cabernet. Vasse Felix is the region's original winery and protagonist of the stately Cabernet Sauvignon genre. A measure of Merlot and Malbec can be added in varying proportions from vintage to vintage, softening the tannin profile and contributing perfumed, floral lift to the beautifully fragrant nose. The structure is fine and firm with a freshness of acidity that makes the mouth water. Rich, dusty tannins support a wine of great power, persistence and length.

A pioneer of the region, Vasse Felix first released Cabernet in 1972. Intense and statuesque, yet elegantly structured, it is the single most enduring Margaret River wine. Cabernet Sauvignon is a robust varietal that consistently achieves a high quality wine when grown to the Margaret River's temperate ripening conditions and deep, well drained soils. All parcels are vinified separately before eighteen months maturation in a combination of new and older French oak barriques, followed by individual batch selection and the final assemblage.

Deep maroon colour, slight purple hue. Stunningly complex perfume, exhibiting a level of integration that makes the wine difficult to pull apart. Layers of blackberry and blackcurrant mingle seamlessly with hints of dried herbs and candied orange. Fragrant, spicy oak sits beautifully in the background. Succulent blackberry and cassis fruit flavours provide a ripe density to the palate, oak spice adds a savoury edge.
