Ten blocks of Cabernet Sauvignon are grown at Penley, the best from each block will make it into the final cut, to construct a complex, traditional style of Coonawarra Cabernet. Striking the perfect balance is a key consideration for the Penley team. Components of various clonal selection, soil type, canopy management, yield and irrigation all contribute to the wine. Careful ageing in oak are the final touches to enhance the quality of fruit. Cabernet Sauvignon off fully mature vines yielding a mere 2 t/A are treated to a temperature controlled, open vinification in headed down fermenters, followed by a lavish twenty months maturation in exclusively new, mostly Troncais French oak barriques.
 
Bright with deep crimson purple hues. The aroma has a striking berry character and richness of fruit, smoky oak notes, highlighting intensity of the Penley style. The palate is rich with sweet berry flavours, controlled oak and grape tannins, to balance and meld with the solid weight of fruit. The key elements are its rich varietal flavours and choice of oak, finely tuned acid and judicious astringency.

Pennys Hill Edwards Road Cabernet

The Edwards are a well established family of agriculturalists with a long history of farming McLaren Vale for generations. Their eponymous road runs along the valley foothills, the land on the north side of the road is now established to fully mature vines which are the source of Cabernet Sauvignon for Penny's Hill. A generously proportioned, single vineyard wine with a real sense of place, articulating the uniqueness of site, enhanced by extended maturation in a good measure of new oak, McLaren Vale Cabernet at its finest.

The loam over clay soils at Edwards Road were established to Cabernet vines in 1993. The five acres site is surrounded by a rich diversity of flourishing native flora and fauna, all supported by the ecologically sustainable land management of the vineyard. Fruit is harvested off hand tended, low yielding narrow planted rows of vine which run north to south down the sloping site. Grapes are destemmed and crushed, parcels are separately fermented on skins for a week at temperatures peaking to 30C. Batches are pressed and returned with the free run juices, into a high proportion of new French and American oak barrels for sixteen months maturation, before assembling into the finished wine.
 
Deep bright red colour. Rich, red fruit nose, spices and savoury earth bouquet. Hints of black cherry, plum and a caramel sweetness are embedded within the many layers of complexity. An extraordinary weight of fruit on the palate, Edwards Road exudes McLaren Vale Cabernet vegetal fruit flavours, finishing on a generous length of exquisitely drying tannins.

Pepper Tree have applied their principles of dedicated vineyard management and uncompromising standards of vinification, in the pursuit of a compelling yet accessible Cabernet Sauvignon. Wrattonbully adjoins Coonawarra, the prominent viticultural feature is a series of ancient beach ridges and dunes which run north to south. These are made up of soft crumbly limestone which weathers to produce the red and brown Terra rossa clay loam soils that are so highly prized for growing outstanding Cabernet. Components harvested from good vineyards are treated to a week's vinification on skins at 18C to 20C, followed by an extended term of age in a selection of French oak barrels.
 
Deep, dark scarlet in colour. Complex nose of cassis and blackberry fruits with a heady mix of lifted spice notes integrated well with subtle French oak. Rich and concentrated, displaying a sweet mid palate, long fruit with complex spice flavours. The nicely structured finish is balanced well by subtle ripe tannins.

Pertaringa Rifle Hunt Cabernet Sauvignon

Pertaringa was established during the early 1980s at the intersection of Rifle Range and Hunt Roads. It was a rough time for the Australian wine industry and growers were ripping up their vineyards, some of them old and invaluable, to qualify for government grants. Pertaringa founder Geoff Hardy came from a long line of McLaren Vale winemakers and welcomed the challenge. Hunt & Rifle is a stately Cabernet wine of beautifully fragrant fruit characters and refined, graceful tannins, a suitable match to braised beef cheek sous glaze or succulent sticky pork.

Exquisitely balanced palate brimming with cassis and dark bramble flavours, dark currants and green varietal herbaceous notes, supported by broad, grippy licorice tannins. Exclusively estate grown Cabernet Sauvignon from the Peter Dennis Nindethana vineyard at McLaren Flat on the eastern side of McLaren Vale. The beautifull property is fortuitously situated at the base of Mount Lofty Ranges where the soil, climate and rainfall are a bliss for viticulture. Fruit is vinified in traditional open fermenters followed by an old fashioned basket press and fifteen months oak maturation. An intense Cabernet nose of currant, sweet violets and cassis resolves on a mouth filling McLaren Vale palate, layered with lozenge and dark berry fruit characters.

The elevated northern districts of Barossa Valley make a perfumed and delicate style of Cabernet Sauvignon. Vines planted to drier, cooler climes than the Barossa valley floor, offer much lower yields, translating into rich and powerful Cabernet wines of great intensity and structure. Peter Lehmann retain access to some of the oldest and very best Cabernet sites in the region. The choicest parcels are selected on the basis of juicy berry fruit flavours and fragrant minty violet characters. Fruit is crushed into fermenters for a term of cold soak followed by a week of vinification. Upon completion, batches are pressed, clarified and filled to a selection of French and American oak hogsheads for a year's maturation.
 
Deeply coloured garnet red. Initial black cherry notes precede a redolent bouquet of currants and mint, violets and cassis. A richly endowed, solidly structured palate, offering great length of flavour, blackberries and cocoa, inky fruits and Barossa chocolate fruit characters, before a soft, fined grained tannin finish. Drinking beautifully, a superb accompaniment to beef, wild game or ripe, pungent cheese.

Peter Lehmann's finest of vintage Cabernet Sauvignon, collated from exceptional, low yielding sites in the Ebenezer and Light Pass, Rosedale, Vinevale and Tanunda sub-regions of Barossa. Over the years, an elite tally of superior vineyards which produce the best Cabernet wine have been identified, many planted over sixty years ago. These older, low yielding sites grow fruit that displays classic lifted cassis and violet characters of great Cabernet Sauvignon. Components are vinified and macerated on skins for up to a fortnight with some partial barrel ferments, followed by pressing and clarification, before maturation in French oak hogsheads for fifteen months.

The palate shows defined Cabernet cassis, chocolates and vanilla, a superb integration of oak and fruit, before a firm, fine grained tannin finish. Mentor is designed to soften and increase in complexity, emerging as a wine of immense power and richness. Great depth of flavour and richness, the ideal accompaniment to goose or game, superb with braised lamb or a fine aged cheddar.
