Langmeil Jackamans Cabernet Sauvignon

Arthur Jackaman was a World War II paratrooper who established a Cabernet vineyard in the 1960s, selling his fruit to the big brands for bottling as port wine. Jackaman chose Langmeil to husband his treasured vines and the property remains productive as one of the Barossa's most stately blocks of Cabernet Sauvignon. Hand pruned, hand sorted and picked, the precious parcels of Jackaman's fruit are treated to a traditional vinification, followed by transfer to a luxurious selection of mostly new French oak hogsheads for an extravagant two years maturation.

Deep crimson, purple hues. Intense blackcurrants and blueberry aromas over biscuity French oak, varietal mintyness and savoury, black olive notes. Classic Clare can be proud of a long history, producing many of Clare Valley's most memorable vintages. Cabernet Sauvignon is selectively sourced off the finest blocks of vine in Valley Clare. Grapes are picked at intense levels of baume and treated to a cold soak for optimal extraction of colour, flavours and tannin. A small batch open top fermentation on skins for several days is followed by transfer to oak for completion of malolactic. Components are lavished by an extended maturation in a selection of high proportion extravagant new oak barrels, before assembling into the finished wine and treating to a further term of bottle age under the historic Leasingham cellars.
 
Deep red crimson hues. Lifted blackcurrant, violets and cassis, spearmint and spice aromas. Concentrated, sweet currant and blackberry flavours abound, hints of black olive and ground spice add complexity. An opulence of fruit as the concentration of flavours persisits on the firm but compliant palate, suppported by well integrated oak and luscious, ripe tannins. The Cabernet of choice to accompany game with rich wine sauces.

Cabernet Sauvignon has been the flagship of Leconfield since the first monumental release in 1977. The aim is to produce a Cabernet wine displaying depth and elegance where oak complexes and enhances the fruit but is not allowed to dominate. Following inoculation to saccharomyces cerevisiae, some components are treated to barrel ferments in predominantly French oak, the balance is held for an extended skin maceration before pressing, achieving the well established statuesque Leconfield style. Following completion of malolactic and a period of exposure to lees in barrel, Leconfield is treated to a year and a half in a high proportion of new French and American oak hogsheads.
 
Deep red, crimson hues. Augmenting the elegant cassis and blackberry fruit aromas, are scented cinnamon, nutmeg and cedar notes. Fine, medium bodied palate, showing the cassis flavours of traditional Coonawarra Cabernet. Fine velvety tannins balance the textured sweetness of fruit. A tight clean finish, approachable as a youthful wine, the elegance will complement continental inspired recipes.

Sydney Hamilton was a highly accomplished oenologist who established the Leconfield brand in 1974, at the ripe old age of 76. His commemorative label is crafted from the top cut of Cabernet Sauvignon, hand picked off the original estate plantings, vinified in Sydney's favourite old fermenter, finished in a luxurious selection of completely new Dargaud Jaeglé French oak hogsheads and aged an extravagant twenty nine months. Dominated by opaque winegum, black cherries and cassis, draped in a robe of satin tannins, Coonawarra Cabernet of the highest order.

Two Gawler high school mates mooted the idea of making Adelaide wine. Vineyards were surveyed, the major requirement being that old vines were essential. They fortuitously secured for themselves supply from some precious old sites which had survived the pullout schemes of the 1980s. Grapes are picked off old to very old vines, grown in auspicious sandy loams, nestled amongst the river red gums of Mt Lofty. Components are cannily assembled to achieve a unique construct of the established Cabernet Sauvignon style.

Great wine begins on the land, the source Adelaide Plains vineyards are all special, remnant plantings which have survived urban expansion and the pursuit of more lucrative agriculture. The small band of Longhop's growers have embraced the ideal of delivering premium grapes in order to showcase the power and rich fruit flavours that the Adelaide region has to offer. Cabernet Sauvignon is sourced from old, low cropping and descendant vines. Whole berries are vinified and hand plunged in traditional open top fermenters before a gentle basket press into barrel for completion. The finished wine is matured in a selection of seasoned French and American oak barriques for a year before bottling without filtration.
 
Deeply coloured, garnet hue. Immediatly recognisable as Cabernet, blackcurrants and mulberry, distinctive earth and spice, lively cocoa, violets and black cherry notes. Well layered with rich currant and bramble flavours, `swooning across the palate, extended tannins draw out the long and savoury lip smacking, gum sucking finish.

Longview is just south of the historic township of Macclesfield in Adelaide Hills. Once a dairy farm, it's been meticulously restored and developed into an award winning estate vineyard, now crafting the most spectacular, regionally articulate wines. Devil’s Elbow is a hairpin turn on the old Adelaide freeway, Longview's oldest vines are planted here, a place of shallow, sandy loams, ironstone and quartz topsoils. The quality of Cabernet is spectacular, in regal Adelaide Hills fashion, its overture of wild cherries, capsicum and fresh herb, resolving on a lengthy, black bramble finish.

Majella Cabernet Sauvignon

Excellent Langtons Classification. One of the Coonawarra's most feted marques in Cabernet Sauvignon. The Majella property was originally acquired for the purpose of grazing lamb. Eric Brand of neighbouring Laira Vineyard offered to buy fruit from Majella if the land was turned over to Cabernet. The site was planted in 1968, much of the vintages that followed went to Wynn's, but it was not until 1993 that Majella vinified and bottled its own estate labelled wine. The inaugural release was enthusiastically received and Majella have never looked back.

The Lynns have lived at Penola for over four generations, a merchant family, they ventured into grazing. They met with success for their prize Merinos before extending the operations to raising lamb on a piece of choice Coonawarra terroir. Viticulture was the last thing on their minds. The site is now one of the most precious Cabernet vineyards in Coonawarra. Grapes are harvested and brought to the Majella estate wineworks. Fruit is treated to a cool fermentation over the course of several days before transfer to a selection of 300 litres French oak hogsheads for completion of primary ferments, a course of full malolactic and an extended maturation of eighteen months.
 
Deep, magenta colour. Cherries, choc mint and blackberries, hints of eucalyptus and vanillin oak. Fruit on the attack, structured with layers of flavour, an elegant, medium bodied style. Rich with ripe dark fruits and well weighted, grainy tannins. As ever the finish is long and lingering, a Coonawarra Cabernet of substance and style that will stand the test of time. Varietal definition is its strong point, the tannins are refined, brains, beauty and style, it's a real winner.
Maxwell Lime Cave Cabernet Sauvignon

From nineteen invaluable rows of Reynella clone Cabernet Sauvignon, the descendants of John Reynell's original import of vine into McLaren Vale circa 1838. Planted to the crest of a cave, excavated 1916 to cultivate mushrooms in the dense limestone bluffs overlooking Maxwell vineyards. Aged twenty months in a high proportion of new French oak hogsheads, the classic Cabernet characters of currant, cherries and cassis, a generously proportioned palate underpinned by soft, chocolatey McLaren Vale tannins and seamlessly integrated cedar vanilla oak.
