Coppermine Road is named after an avenue, very near the d'Arenberg property which runs parallel to the finest block of Cabernet Sauvignon vines to be found anywhere in McLaren Vale. The precious grapes are descended largely from a curious and near extinct unnamed clone which yields no more than a single tonne per acre because of its very poor setting ability and tiny berries. The quality of the fruit however is far superior, with wonderful violet and blackcurrant aromas, great acidity and long but intense, finely grained tannins.

$7099each $851DOZEN EACH DOZEN Walking the vineyards and tasting grapes, Chester Osborn determines the ideal picking time for each individual row. Small amounts are passed through the Demoisy open mouthed, rubber toothed crusher before transfer to five tonnes headed down open fermenters. The vats are treated to a course of foot treading, boots on, two thirds of the way through fermentation. When tannin extraction is just right the wine is basket pressed and transferred to a mixture of seasoned and new French and American oak barriques for the completion of primary and malolactic. Barrel ferments are aged eighteen months on lees to keep the wine fresh while also reducing oak influence.

Deep dark, almost black. Black currant leaf, violets and cigar box with an interesting twist of cooking spice and mustard seed. A palate of sweet blackcurrant and mulberry fruitiness that builds as the wine continues to evolve in your glass. The initially cedary tannins, start early and give the wine an incredible line. An intriguing fennel note accompanies the chalky tannins that are picked up on the finish, lingering and long.

The High Trellis paddock has been yielding the most splendid vintages of wine since the late 19th century, so nicknamed as the vines were the first to be trained above knee height following acquisition of the property by dArenberg. For decades, High Trellis Cabernet Sauvignon has been released to unanimous critical acclaim by the wine industry press and international cognoscente. Indeed, the inaugural 1968 vintage earned a place in history when it claimed Australia's most prestigious accolade, the highly coveted Jimmy Watson Trophy.

$2199each $263DOZEN EACH DOZEN Small batches are crushed in the Demoisy open mouthed, rubber toothed crusher and transferred to five tonne headed down open fermenters, parcels are vinified separately. Foot treading is undertaken followed by gentle basket pressing. Transferred to a mixture of oak casks to complete primary and secondary fermentation. The barrel fermented component is aged on lees for added complexity with no racking until final blending. Chester and the winemaking team undertake an extensive barrel tasting process to determine the final assemblage. High Trellis is unexposed to fining or filtration, aged up to twenty months in a combination of new and older French and American oak barriques and large casks.

Deep, bright red. Lifted nose, fresh and full of violets, blackcurrant and leafy notes, oak supplies a touch of cedar, adding complexity to the soulful earthiness. The palate is textured and lithe, coated by lacy tannins around a core of cassis, licorice and plum fruit mixed with earth and graphite before a mineral tail. It's well weighted, fresh and balanced, inviting now, like all d'Arenberg wines, decanting will help show its best.

A superb construct of Yarra Valley Cabernet Sauvignon, crafted from three estate parcels of fully mature, low yielding vines, planted 1987 to 1991 at Dixon's Creek. A highly regional expression of Cabernet, exhibiting profound varietal definition, bursting with dark bramble berry flavours, seasoned by a dusting of cedar and garnish of bushvine leaf. The Victorian of choice to accompany dry aged sirloin with grilled marrow, truffled mash and morelles.

$2599each $311DOZEN EACH DOZEN Vines are all cane pruned to twenty five bunches per vine, further shoot thinned at the 10cm to 15cm stage to eighteen bunches per vine. The hand picked berries are placed in 8kg buckets and transported promptly to the De Bortoli wineworks. Bunches are destemmed, crushed and tipped into fourteen tonnes fermenters. Upon completion of ferments, batches are kept at a minimum of 25C and left on skins for two to three weeks. Batches are pressed, settled overnight and gravity filled to a selection of oak casks for a year's maturation at 16C. Components are then racked and gently aerated every three to four months throughout the course of age.

Deep vibrant red with purple hues. Complex aromas with tobacco and macerated pommace like fruit. Aromas of blueberry and bramble with underlying clove and leather characters. A fine, detailed, full bodied wine, plump and flavoursome with blackcurrant and spicy oak flavours, meaty mid-palate fruit flavours, fine grained tannins, structure, balance and excellent length of flavour.

Not too distant from the site, the vineyards of Devils Lair are stimulated by a strongly maritime influenced climate, not dissimilar to Bordeaux, hence the stellar quality of Cabernet Sauvignon. The viticultural team source a significant proportion of outstanding quality fruit from Wilyabrup in the north, where the warmer influence of the Indian Ocean consistently produces elegant and beautifully ripe Cabernet Sauvignon with the finest, genteel tannins.

Dark, deep magenta red. Blueberries and bramble nose, violets and dusty herb, Crème de Cerise and cassis. The Yarra Valley component is sourced off twenty year old vines, planted to propitious clay and broken rock soils, contributing mid palate flesh and freshness. An essential part of Andre's excellence is the exacting work over the sorting line, entirely eliminating green stalks and grapes which can be borderline over or under ripe. Winemaking is highly traditional, fruit is destemmed, gently crushed and treated to four weeks on skins, where it develops splendid softness and remarkable complexity, followed by a course of eighteen months in an extravagantly high proportion of new French oak.

Dark opaque scarlet. Black fruit nose, perfumed with violets and blueberry, ribena, meat grills and dark cherry jube. The winemaking at Dominique Portet has one foot planted firmly in tradition and the other in the latest developments. Dominique is the ninth recorded generation in a family of vignerons dating back to eighteenth century France. A love of winemaking traditions developed from growing up amongst the vineyards. Arriving in Australia 1976, Portet quickly became an integral part of the Victorian wine industry. For the Porterts, wine is life, it has a cycle from earth to table, it is the first love. Ben Portet has worked under the direction of Brian Croser and Con Moshos at Petaluma, at Taltarni with his father, the Napa Valley and South Africa, in Bordeaux with Philippe Blanc of Chateau Beychevelle, in Reims with Louis Roederer, and the Rhone Valley where he specialised in Hermitage Syrah.

Beet red hues, darker robes. Bouqets of currant and cassis, dark cherry and coffee/ cocoa complexed by light dusty spice and pencil notes. A finely structured Cabernet of solid, savoury yet silky tannins, blackcurrants and bay leaf/ green peppercorn/ spice notes over a backdrop of controlled oak. Unequivocally Yarra Valley in its articulation of Cabernet Sauvignon, drink magnificently on release whilst relatively young.

The first and final word in world class Barossa Cabernet, aged in a luxurious selection of completely new French oak hogsheads. The Ashmead block is so low yielding that it was almost gutted and re established to more productive plantings. The vines suffer from the notorious Dead Arm disease but yields an extraordinary quality of fruit. Fortunately for the world of wine, Ashmead was retained as an Australian Grand Cru Classe. Elderton are not unfamiliar with ultra Cabernet, having claimed significant trophies including the 1993 Jimmy Watson.

$9499each $1139DOZEN EACH DOZEN The Ashmead block has consistently produced small parcels of peerless quality fruit. Traditionally this elite parcel has been blended into the estate range, but in 1998 Lorraine Ashmead was inspired by its excellence to release it under the family name. An unknown clone of Cabernet Sauvignon but most likely G9V3, planted by Samuel Tolley in 1944, is grown to deep alluvial silts over red brown limestone soils. Yields at this precious vineyard are a meagre one to two tonnes per hectare. Grapes are hand picked and teated to a chilled vinification in open top concrete fermenters, before transfer to exclusively new French oak puncheons and hogsheads for completion, malolactic and twenty two months maturation.

Deep purple/ black colour. Sweetly perfumed aromas of blackberries and candied plum, vanilla and oaken spice. Concentrated and lush palate showing dense dark berry fruits and suave baking spice notes, seasoned by savouryness and herb. Ashmead boasts excellent precision, harmony and depth, incredible persistence as the wine lingers on an immeasurably long finish.

Elderton Cabernet was winner of the prestigious Jimmy Watson Memorial Trophy in 1993, the following years it claimed back to back Gold and Trophy at the Barossa Wine Show. The 1994 vintage gave Elderton its first international Gold medal in London, an unbroken tradition of remarkable vintages have embossed the Elderton Estate name as a national champion, being chosen by Qantas for service in first class. The superior quality of fruit grown to Elderton's fifty year old estate Cabernet vines, yield a wine of intensity, opulence and grace.

$2999each $359DOZEN EACH DOZEN Elderton sits atop very old, deep alluvial soils over limestone, the majority of Cabernet vines which contribute grapes are over fifty years of age, the oldest established in 1949. Harvested throughout the cool of night, Cabernet clones 1654, BVRC12 and BVRC30 are crushed into open concrete fermenters and treated to a cold soak. Heading down boards are employed after two days to keep the cap submerged and allow better control of fermentation rate, constant pumpovers percolate oxygen through the skins. Batches are pressed into a selection of seasoned French oak hogsheads and puncheons for completion of malolactic and a series of rackings over twenty two months before assemblage.

Deep purple colour. Blackberries and cassis, beetroot and mint with a touch of cedar on the bouquet. Full bodied palate exhibiting plum and back fruits, classic Barossa varietal characters of cassis, black olives and mint. Medium bodied, a rich, classy palate, for a fully integrated Cabernet wine showing unobtrusive oak and polished tannins.

Parcels of Cabernet Sauvignon are harvested at night and separately cold soaked for several days on skins in small fermenters to maximise colour intensity and bright, fresh fruit characters. Ten days of vinification and a further seventeen of maceration are followed by pressing into a combination of seasoned and new French oak hogsheads and barriques for completion of malolactic. After twelve to fifteen months maturation, components are assembled into the finished wine and bottled unfined for a term of bottle age before release.

Deep purple black with vibrant purple rim. Cool Cabernet characters of redcurrant and tobacco leaf overlay riper characters of cassis, green olive and blood plum. A medium bodied wine with remarkable depth and length of flavour. Underlying notes of cedar, toast and savoury spice from maturation in French oak contributes subtle complexity.
