Crafted without compromise by the highly accomplished Rymill viticultural winemaking team. Coonawarra's reputation as a producer of weighty Cabernet wines belies it's capacity to produce fully ripe early drinkers. Yearling has been subject to the same adroit vinification techniques lavished on the Rymill flagships. An exclusively estate grown wine with fresh aromatics by virtue of cool maceration and expeditious ferments. The soft, supple and approachable structure has been achieved by an early, gentle pressing. Designed to be forward drinking and fruit driven, components have been treated to minimal maturation in French oak barriques.
 
Dark cherry red. Blackberry and currants, tomato leaf and rhubarb, mint and strawberry nose. Spicy and herbaceous palate, velvety and round. Yearling is finely structured and well integrated, dusty tannins matching the dash of fruit and spice. The finish is deliciously refreshing with elements of mint and plenty of fresh, juicy fruit. Generous with good weight behind it, a highly approachable Cabernet to enjoy upon release.

The warm sunny days and crisp, cool nights at Sandalford make for ideal ripening conditions. The growing seasons achieve harvests of disease free fruit, flavour and acidity levels always at optimal levels. After crushing and destemming, fruit is vinified in small ten tonnes static fermenters. A traditional regimen of pumpovers are employed to optimise colour, flavour and tannin extraction. Upon completion, batches are rested for a fortnight on sedimentery soilds, the musts are returned to the free runs and inoculated for malolactic with select bacteria. Components are racked into a selection of new and one year old French oak barrels for a year's maturation and the final assemblage.
 
Dark cherry with a magenta hue. Classic Margaret River nose with savoury notes of bay leaf, rosemary and sage. Primary fruit of violet and blackcurrant can be sensed along with seamless cedar/ vanillin oak nuances poking through. A magnificent full bodied wine with silky tannins and bags of dark briary fruit flavours, toasty oak elements woven through the mix. Long, persistent finish, subtle oak, the quality is outstanding.

Scarpantoni Brothers Block Cabernet Sauvignon

From two blocks of superior vines grown to the McLaren Flat estate, hand planted by the Scarpantoni brothers in the early 1970s. Brothers Block claimed Australia's most illustrious award, the highly coveted Jimmy Watson trophy in 2007. A tremendously well received wine throughout the years, claiming a multitude of prestigious awards. A luscious full bodied Cabernet wine which exudes intense bouquets of blackcurrant and mint, exhibiting a richer more layered style, showing strong regionality and compelling varietal definition.

Domenico Scarpantoni worked for Thomas Hardy at Tintara, later becoming vineyard manager for Seaview in McLaren Vale. He was responsible for the contoured vineyards that Seaview were renowned for in the 1960s. Vines on Brothers Block are grown to a terroir of deep, free draining sandy soil over ironstone subsoils which impart a luscious red fruit character and distinctive Cabernet expression to the wine. At harvest the grapes are picked based on their developing flavour profiles and fermented in four tonne batches. All parcels are kept separate throughout vinification, barrel fermented and matured up to sixteen months in a combination of new and seasoned French oak hogsheads until assemblage.
 
Deep, ferrous red. A complex bouquet of blackcurrant, mint and spice with hints of sweet, toasty vanillin oak. The palate is soft and round with elegant, well integrated fruit and oak leading to a long, persistent finish. It's big and fruity, stylish and dry, with rich berry fruit flavours, cedary spicy French oak and plush lined tannins. A McLaren Vale Cabernet like no other, the perfect accompaniment to meats and fine cheese.

The founder was William John Seabrook, born of Tasmania to a family of builders, his thirst for wine drew him to Victoria where he learned the craft of the merchant and established W.J. Seabrook & Son in 1878. Parcels of Cabernet Sauvignon are crushed and destemmed to open top fermenters for a warmish vinification, aimed at extracting bright red fruit characters and a judicious measure of sweet berry tannins. Brambles and mulberry leap from the glass, aniseed and liquorice on waves of flavour, subtle oak and tactile structure, a soft, silky finish of astonishing length.

Inigo is made from fruit grown to a vineyard with gentle north facing slope directly behind Sevenhill's St Aloysius Church. The soils are predominantly red to brown loam over weathering slate or siltstone, the well drained qualities contribute to naturally consistent low cropping levels and fruit of great integrity. Grapes are picked in seperate blocks, crushed and treated to vinification in a collection of open slate vats over the course of a fortnight. A carefully managed series of regular pumpovers is vital to capturing flavour and colour. Upon completion, batches are pressed into a selection of seasoned and new French oak barrels for eighteen months matuation. Alcohol 14.0%
 
Dark, black cherry hues. Prominent bramble berry notes, violets and cassis to the bouquet, cedar and dark blue fruits. Powerful red currant and mocha/ spice carry through the palate, intense blackberries and black olive flavours, soft tannins allow the prominent fruit to shine, a lingering finish of evolving sweet berry flavours on a length of pliant licorice tannins.

St Huberts won much fame in Europe during the latter part of the 1800s, for the extraordinary quality of their new world wine. In the twentieth century, this noble estate lead the Yarra Valley's second golden age. The present day property boasts old vines planted in 1966 which generally yield low crops of intense fruit, brimming with rich flavours. A mere twenty one hectares of vine are crafted into one of Victoria's most enduring Cabernets. A tribute to the quality is the assertion by local growers that these vines produce the best Cabernet Sauvignon in Yarra Valley.

The precious St Hubert Cabernet blocks were reclaimed after the property reverted to grazing and dairy in the 1920s. The soil is relatively deficient in some nutrients, thus the vines are not overly vigorous. The scarce winter rainfall is collected in a dam at the vineyard and used for irrigation as required in summer using a trickle irrigation system. Fruit is primarily sourced from St Huberts Block, with the inclusion of parcels from Yarra Valley flats. Individual batches are vinified in open vats and closed static fermenters, each in turn is pressed off and racked into a high proportion of new French oak barriques for fifteen months maturation, developing superb depth and wonderful complexity.
 
Dark red, crimson hues. A brooding example of Yarra Valley Cabernet, intense dark berry fruit notes of blueberry and cassis, violets intertwine with reserved, integrated oak and just a hint of mocha. The palate is medium to full bodied, showing lovely roundness and depth. Tannins from the fruit and oak are ripe and powdery, providing excellent structure and length. A stately wine to be enjoyed alongside aged sirloin and jus.
St Marys House Block Cabernet

St Mary's Winery is situated on a strip of Terra rossa soil, some fifteen kilometres west of the township of Penola. Originally a grazing property, the poor topsoils working in combination with rich Terra rossa underneath, yield scant quantities of the most powerfully flavoured wine grapes. Exclusively estate grown Cabernet is harvested for the creation of St Mary's House Block, a wine of overall richness and fine palate structure, dense with varietal fruit character and Coonawarra charm, harmoniously integrated after extended ageing.

The exclusive little vineyard is sited on part of a grazing propertry that has been owned and operated by the Mulligan family since 1937. The vines are planted on an elevated area of Terra Rossa soil over limestone. The soils are generally very stony. Some of the more austere parts of the vineyard are virtually pure rock. The vines that have survived on these stony areas produce relatively small tonnages compared to local averages. Small batches of hand picked grapes are fermented in open vats, basket pressed and barrel matured in climate controlled storage before being bottled on premises. Treated to an extended maturation in a selection of American and French oak hogsheads.
 
Black cherry colour with deep ruby hues. The bouquet is an enticing mixture of ripe, blackcurrant fruit characters complemented by gentle integrated French oak. House Block Cabernet demonstrates exquisite balance, fine Coonawarra richness persists, sultry aromatics expressing regional mint along with pepper and new leather over olives and graceful vanillan oak culminate on lingering and supportive tannins.

Stone Dwellers Cabernet Sauvignon
Strathbogie
A cool climate Cabernet wine of impeccable integration and exceptional balance. Sourced from the Trevor's Cabernet Block on Fowles Plunkett Whitegate Vineyard in Strathbogie Ranges, where harvesting generally occurs from late February through to early May. The sandy loam soils on the elevated and undulating, gently inclined site stimulate the vines into yielding the most intensely flavoured Cabernet berries with pungent aromatics and toothsome tannins. A very well balanced, full bodied Cabernet Sauvignon with a long flavourful finish.

Following harvest and the crush, fruit is inoculated through the action of Saccharomyces cerevisiae AWRI 796, a relatively neutral yeast originally isolated in South Africa, it allows the richness of Cabernet Sauvignon to express itself. AWRI 796 produces above average amounts of glycerol, which contributes a sweetness and roundness to the mouthfeel. Parcels were treated to vinification in high tech sweep-arm fermenters to maximise colour and flavour intensity. Ferments were kept at a temperature controlled 25ËšC to preserve primary fruit flavours. Stone Dwellers is matured in small one year old, mostly French oak barrels with a smaller percentage of American oaks.
 
Dense, plum red color. The vibrant, varietal bouquet offers chocolate aromas with oak and spice. The palate shows dark fruits and chocolate, supported by a solid structure that finishes long and lingering. Stone Dweller carries no residual sugar, whilst delivering a good balance of alcohol, meaty tannins and refreshing acid. To accompany oxtail pie with roast chestnut and red wine jus.

Streicker make single estate wines of great distinction, from fruit grown to elite sites along Margaret River. Established 2002 by John Streicker after his acquisition of the Yallingup Protea farm and vineyards, the estate now operates two other distinguished sites, the elite Bridgeland and Ironstone Vineyards, with a total of 153 hectares currently under vine. The holy grail of balance of power, balance and finesse in Margaret River Cabernet Sauvignon, the finished Ironstone is treated to eighteen months in a high proportion of the finest new French oak barriques.
