Grapes are sourced from exceptional Barossa vineyards which Grant Burge sanctions as worthy of his estate flagship, hand picked parcels exhibiting a rare intensity of character, structure and finesse. A solid backbone of Cabernet grown to Burge's own Corryton Park property in Eden Valley, flows seamlessly with the pick of fruit grown to superior vineyards lower down the Barossa hills, all characterized by their concentration of rich flavours. A Barossa Cabernet of rare virtue, to be decanted before service and treated to the alchemy of a judicious breathing.

Grant Burge's Corryton Park vineyard, one of the highest and coolest in the greater Barossa region, contributes most of the fruit. The balance is sourced from the finest Cabernet sites on the Barossa Valley floor. Harvest commences when the grapes achieve the ripest and most optimal Baume. Shadrach is treated to a traditional vinification in open static fermenters for a week, a portion of fruit is left on skins for an extended maceration developing structure and longevity. The balance completes primary and malolactic ferments in a selection of seasoned and new French oak barrels for twenty one months, followed by a term of two or three years in bottle before release.
 
Dark plum colour. Concentrated aromas of blackberry, liquorice and eucalypt with hints of choc-mint and vanilla bean. The palate is full bodied with complex bramble characters, plum and blueberry, cassis and the delicacy of mint, all spice and tobacco notes. A rich middle palate is followed by fine tannins and exceptional length. The epitome of grand Barossa Cabernet Sauvignon, to accompany the finest gourmandise.

New South Wales Hilltops breed a very special style of Cabernet, structured and well endowed, a slightly more savoury palate with brooding bouquets, ripe and ready for early appreciation. Grove Estate played an important role in the development of Hilltops as a significant Cabernet Sauvignon growing region, supplying much of the finest fruit to esteemed national brands before establishing their own label. Fragrant of cocoa curls and melty Swiss chocolate around currants and black bramble, exquisitely balanced along a long line of refined, affable tannins.

HRB Reserve Blend is sourced from the pick of Hardy vineyards, precious sites which yield harvests of world class Cabernet Sauvignon. Coonawarra brings plum and red cherry fruit to the mix, stealthy tannins and textural richness. Margaret River adds bold bramble and blackcurrant characters, a beautifully perfumed blueberry nose and penetrating fruit driven palate. Cabernet Sauvignon is assembled from a canon of vineyards which share a synergy, mature vines up to twenty years of age which can provide the quality of fruit worthy of the HRB label. Small, constricted berries with an intensity of flavour and grape tannins and model tannins are selectively harvested off vines planted to a combination of Terra rosa Coonawarra terroir and gravelly Margaret River sandy loams. Fruit is vinified through a combination of old and new world fermenters, followed by a course of full malolactic to soften the tannins. Upon completion, the wines are sent for an extended maturation into a selection of new and seasoned French oak barriques, crafted by the finest Bordeaux coopers.
 
Rich ruby red colour. Complex and aromatic nose, exhibiting chocolate mint and cassis notes, ripe berries, bay leaf and perfumed French oak. A continuity of fruit character, herb and fragrant savouryness on the full bodied, richly textured palate, chocolateyness, plums and red/black cherry notes are supported by fine tannins and an exceptional length of flavour. Match with lamb shanks or beef ragu with baby potato and parsnip mash.

The reason behind it's runaway success is no big secret to anybody who has ever enjoyed Oomoo, a splendid wine with superb fruit character and an affable structure that's fashioned to be a joy to drink. Oomoo comes to Coonawarra in search of the finest Cabernet Sauvignon, the nose is highly appealing with requisite violet and cassis perfumes, the palate is brimming with melt in the mouth cherry bramble flavours, the oak is stylish, the tannins inseparable and judiciously firm.

The story of Oomoo begins as Thomas Hardy's first wine venture at Bankside, a property on the banks of River Torrens just west of Adelaide. Hardy's now retain the finest Cabernet vineyards in Coonawarra and beyond. Fruit is harvested and taken to the Hardy wineworks for crushing, followed by a term of cold soak maceration. Exacting techniques are employed to manage the amount of contact between pulp, juices and skin for optimal extraction of flavour and tannin. Parcels are treated to a combination of new and old world winemaking techniques, inoculated in a combination of fermenters and vinified at controlled temperatures. The finished wine is matured for a year in a selection of fine French oak barriques.
 
Deeply crimson with garnet hues. Fragrant varietal leaf characters, mints and cassis, liquorice and cedar, blackcurrants and aromatic mocha oak, lifted sage notes. The palate is all about luscious mulberry and blackcurrant flavours, supported by spiced chocolate oak and regional mint, the tannins are seamless, offering terrific line and length. Oomoo will suitably accompany a slow cooked duck or marinated cutlets of lamb.
Hardys Tintara Cabernet Sauvignon

The first Tintara vines were planted by Dr Alexander Kelly in 1862. Thomas Hardy recognised the potential that lay within the rich loamy soils of McLaren Vale and purchased the splendid property. Built against the rolling hills at the foot of Mount Lofty Ranges, the ancient Mortlock Flour Mill has been converted into the present day operating winery, its ingenious sloping design harnesses gravity in the winemaking, translating into a gentler handling of the juices. Tintara is a rarity in every sense, each sip remains a truly memorable experience.

Established 1861, Tintara is a significant part of McLaren Vale history, the region's stateliest founding winery. Nowhere is the long and rich history of the Southern Vales more evident than at Tintara, a testament to quality viniculture. Crafted to old-world techniques and new-world innovation, the ancient basket presses and original slate open fermenting tanks are still used today. Dedicated to the region, Tintara's winemakers source all of the grapes for Tintara exclusively from good vineyards in McLaren Vale, exactly as the founders had intended. When, and only when, tannin ripeness is optimal, the Cabernet is harvested, producing a wine with abundant fruit intensity and soft fine tannin structure.
 
Deep garnet with bright red rim. Intensely perfumed, showing strong varietal fruit of blackcurrant and cassis, a stalk or two of mint, lithely seasoned by spice and cocoa notes. Ripe, red berry fruits of forest, mulberry flavours, cassis and briar notes, a middle palate of richness and good structure, supported by elegant tannins and culminating on a long, persistent finish.
Hay Shed Hill Block 2 Cabernet Sauvignon

Block 2 was planted to the renowned Houghton clone of Cabernet on a steep northerly slope of optimal sunlight in the early 1970s. The old, dry grown vines have sunk deep roots into the gravelly loam soils and yield a harvest of superlative fruit with each vintage. Grapes are de stemmed into open top fermenters, treated to hand pumpovers and maceration on skins for optimal extraction, followed by eighteen months maturation in French oak barriques. A voluminous palate, substantial by Margaret River standards, driven by fleshy dark fruit and underpinned by the ripest tannins.

Hay Shed Hill is a mature old vineyard at the heart of Willyabrup Valley, the premier sub region where Margaret River's first vines were planted and the great local traditions of Cabernet Sauvignon established. The mission is to produce world class wines which reflect the place of origin, wines of depth and flavour that are true to the season and mesoclime. The vines were originally planted right, the right varieties on the right slopes to the right soils. The Hay Shed Hill property produces low yields of outstanding quality fruit from fully mature vines which were sown in 1973 during the pioneer days of the local wine industry. Cabernet Sauvignon is harvested only when the fruit achieves optimum ripeness. Grapes are de-stemmed into open topped vessels for fermentation on skins, whilst treated to traditional pump overs and cap management. Upon completion, the wine remains on skins for a further ten days maximizing development of ripe, mature tannins. Maturation in French oak barriques for year adds further complexity and structure, enhancing the wine and softening tannins without dominating the fruit.
 
Dense dark red to black colour. An intense and rich bouquet led by the ripest cassis and berry fruits, rich and opulent but brooding in its youth, over distinctive vineyard characters of dark chocolate and mint. The oak shows background cedar which will recede further as the fruits emerge. An intense fleshy, full mid palate, massive fruit weight, dark cherry and blackcurrant flavours.

Cabernet Sauvignon has always been a speciality of Helm. A trip to Bordeaux inspired winemaker Ken Helm and grower Al Lustenburger to perfect the most profound constructs of Cabernet Sauvignon. The Canberra district is perfectly suited to growing this noble grape, as the mesoclimes, so similar to those of Bordeaux, are influenced by trade winds during summer which carry a whiff of sea salt and stimulate the vines. Helm's inaugural vintage immediately attracted praise from the industry press and claimed significant wine show awards.

Helm is a family owned operation, one of the first commercial wineries within the Canberra district. Ken Helm and daughter Stephanie are a father and daughter team, the fourth and fifth generation descendants of migrants from the Rhineland who established vineyards near Albury and Rutherglen in the 1860s. Papa Helm has been involved in the development of the National Wine Show, Cool Climate Wine Show, Wine Press Club of Canberra and numerous promotional events for the Canberra region. Helm craft their Cabernet Sauvignon in the statuesque style of the great Medoc growths. The finished wine is released after two years maturation in a selection of seasoned and new oak casks.
 
Deep garnet red colour. Bramble bouquet with hints of loganberry, violets and licorice over lightly smoked oak. A finely balanced and elegant wine with the richness of berry fruits and butterscotch flavours deriving from two years maturation in oak casks. Fine tannins provide another dimension to the wine. A long, dark fruited finish with lingering notes of savouryness, cassis and dusty Medoc oak.
