Turkey Flat Shiraz

Excellent Langtons Classification. It was at Turkey Flat, on the banks of Tanunda Creek whence bush turkeys once roamed, that pioneer Silesian settler Johann Friedrich August Fiedler planted the first Shiraz during the 1840s. The maturing vines on Section One, in the Hundred of Moorooroo, were bought in 1865 by Gottlieb Ernst Schulz, a successful butcher who established a thriving business among the vines. The Schulz family are still there and up to a fifth of the grapes in today's Turkey Flat Shiraz are picked off the gnarled old vines of 1847.

Turkey Flat boasts some of the oldest Shiraz vines in the world. These living heirlooms yield wines that are floral, elegant and well structured. Grapes were harvested between March and April at complete ripeness and healthy levels of natural sugar concentration. Inoculated to bespoke strains of yeast and fermented at temperatures of 18C to 26C, juices remain on skins for up to three weeks. Cold soaking and extended macerations achieve a firm tannin structure, ensuring that the wine will continue to evolve handsomely. Turkey Flat completes full malolactic in barrel, followed by eighteen months maturation under a combination of new and prior use French oak hogsheads.
 
Deep purple colour. Black cherry, liquorice and savoury spice bouquet. Bright and generous, concentrated fruit, youthful yet restrained tannins in support, refreshed by lively acidity. French oak adds depth and length of flavour, supporting a palate of blackberries, cedar and nutmeg. A complex and restrained wine which benefits from decanting to reveal great purity of fruit.

Two Hands Aerope Grenache

Aerope is the Two Hands estate flagship, significantly a pure Grenache wine, representing the very finest old vines Barossa Grenache. Aerope is assembled annually from a chosen few of the most exceptional barrels, vinified from grapes that are hand picked off an eighty year old, dry grown vineyard on Radford Road, near the ancient Barossa winegrowing hamlet of Greenock.

Grapes are all hand picked, most are crushed and destemmed into five tonnes open top fermenters, a quarter of the fruit is processed as whole bunches. After several days of cold maceration the musts are allowed to warm for vinification. Throughout the peak of ferment, batches are pumped over a minimum four times daily to extract colour, flavour and tannin. After a fortnight on skins, each fermenter is drained off, skins are pressed and returned to the free run. Batches are then racked to a selection of well seasoned French oak hogsheads for malolactic and seventeen months maturation.
 
Bright red with subtle brick red hues. Fragrant and inviting, full of red berries, bright Asian spice, lavendar, savoury charcuterie and great steely minerality. The palate is highly refined, an extremely attractive entry of red berries, lavendar and creamy rosewater. The juicy mid palate tightens up to the late palate finishing with fine tannins and mouth watering charcuuterie and savoury mint notes.
Two Hands Aphrodite Cabernet Sauvignon

A pure, flagship Cabernet Sauvignon from a mature single vineyard on Radford Road in the Seppeltsfield sub-district of the Barossa Valley. The Two Hands wineworks at Marananga was designed specifically for small batch production of the very best parcels of fruit. Very occasionally, the Two Hands isolate a block of vines that are earmarked to be handled separately, and vinified into a tremendous Barossa Cabernet. Length of palate and great persistence balanced by excellent depth is the hallmark to the subtle but complex Aphrodite.

A highly specialised Shiraz producer, Two Hands are inspired by a tiny quantity of the most superlative Barossa Cabernet to create an extremely limited small batch wine. Crushed and fermented in five tonne open top fermenters with regular pump overs, three daily during peak fermentation to extract colour and tannin. Following seven to twenty one days of maceration, the dry free run is drained to tank. The skins are then pressed and the pressings transferred to the same tank, the wine is then racked to barrel for malolactic fermentation. Extended maturation for a period of twenty two months in 100% new French oak Taransaud hogsheads. Minimal fining and unfiltered.
 
Deep, almost impenetrable black in the glass. Fully charged aromas immediately spring from the glass, plum and lavender, mineral and earth, cedar and grilled meats all enveloped around classic cabernet complexity and purity. The palate delivers right from entry with dense and plush red fruit flavours bursting forth amongst polished but fine tannins and refined acidity.

The best possible Shiraz wine from the most prized vineyards. Crushed, destemmed and fermented in five, seven and ten tonne open top fermenters with regular pump overs up to three times daily during peak fermentation for the extraction of colour and tannin. Following seven to twenty one days of maceration on skins the free run juices are drained to tank as the skins are pressed. Both the free run and pressings are blended to tank and then racked to oak after twenty four hours. Malolactic fermentation takes place in barrel. Ares is treated to a minimal fining and is bottled unfiltered. Ares reposes twenty three months in oak, the final year is spent in completely new French hogsheads.
 
Deep red and black with magenta rim. Bright and intense, volumes of rich berries, plums and maraschino cherry. The aromas are continually evolving, also bringing cedary spice, subtle lavender, bitter chocolate, tar and fudge. A palate with great depth of flavour, a wine of finesse. Juicy plums and blueberry dominate early to mid palate, then underlying cedary chocolate notes emerge carrying the wine through, tightening up again to a focused core of fruit, tannins and spice.

Bella's Garden is assembled after a rigorous determination of the best barrels of maturing Two Hands Barossa Shiraz. Densely coloured, almost black in colour, it exudes powerful bouquets, ripe plum and succulent blackberry flavours, laced by wisps of cedar and spice.

A Mediterranean microclimate surrounds the Two Hands vineyards, forming the perfect conditions for growing and ripening the finest quality fruit, to be vinified into generously flavoured, full bodied, flagship Barossa Shiraz. Grapes are de-stemmed, crushed and vinified in a mix of open top fermenters, pumped over thrice daily during the peak of ferments, to extract colour and tannin. Juices remain a fortnight days on skins before free runs are drained and pressings returned. After a day of rest, batches are filled to barrel for completion of malolactic, racked off lees, tidied up and returned to oak for eighteen months, followed by minimal fining and an unfiltered bottling.
 
Deep red with black/ purple hues. Aromas are vibrant and focused, the characters are continually evolving. Notes of red currant and cherry and subtle lavender, then chocolate and char, hints of creme anglaise, followed by spice, earth and rosemary. Bella's Garden is full of rich red fruits, cloves and earthy notes, supported by fine tannins and elegant oak. Generosity of fruit remains focused as it tightens to a long balanced finish.

The palate is filled with rich flavours of raspberries and black pepper spice, liquorice allsorts and plum. The finished wine is an unctuous Shiraz with striking dark colour and cryptic aromas.

The Two Hands winemaking team can demonstrate an innate capacity to capture the terroir of each vineyard and preserve the vital characteritics in every wine. A number of individual vineyard parcels are crushed into a mix of three and five, seven and ten tonnes open top vessels. Ferments are pumped over thrice daily throughout the peak of activity to extract optimal colour, flavours and tannin. Batches are pressed, the free runs and pressings are all returned and racked to barrel for completion of malolactic. Components are matured eighteen months in a combination of seasoned and new French oak puncheons and hogsheads. All parts are kept separate and assembled just prior to bottling.
 
Deep dark red. Nose of spiced plum, blueberry pie with hits of musk stick, warm vanilla and pain grille. Full bodied palate with lashings of spices and plums, blueberry jam and milk chocolate. Tannins are round, bold and chewy then tighten through the finish. Hedonistic in style with complexing notes of mocha coffee beans, vanilla pod and clove. Incredibly long and persistant through the finish.

An assemblage of fruit grown to several elite Central Otago sites, the estate flagship barrel selection, from the Sam Neill family vineyards, normally a selection picked off Gibbston First Paddock, Bannockburn's Fusilier and Earnscleugh's Red Bank. A charming effort in Burgundian styling, unequivocally world class, artisanally crafted Central Otago Pinot Noir. Each block and clone are picked and fermented separately, the final wine is assembled just before bottling. Small batch? You bet, a mere few hundred dozen are made each year.

The original Sam Neill vineyard at the heart of Gibbston Valley. Low yielding vines allow grapes to slowly ripen in the classic cool climate manner. Vineyards are high density, planted to a range of clonal material and intensively man handled, nearly all vineyard practices are carried out by hand, to the exception of compost spreading. Ferments include a component of whole bunches treated to oak barrel vinification. Musts are cold soaked for several days and hand plunged throughout the ferments. Two Paddocks spends time macerating on skins, extracting tannin, colour and aromatics before being gently drained and pressed to small French oak barriques for a year.

Established 1993 to a unique Burgundian clone of Pinot Noir, meticulously husbanded, First Paddock is one of the eldest blocks of vine in all Central Otago. Vibrant ruby hues, lifted perfumed bouquet of dark cherries and plum, concentrated herbal complexities, depth and persistence before a distinctive lengthy savoury finish. The articulation of Central Otago Pinot Noir complex yet elegant, generously proportioned, brimming with fruit, superbly structured, florals, violets and wild spice.

Two Paddocks Fusilier Pinot Noir
Central Otago
Sam Neill's father was a major in the Royal Irish Fusiliers, he returned to the family wine and liquor business after retirement and inspired his famous son to take up viticulture. There are six hectares of Fusilier under vine, planted to deep alluvial silty gravels, on a steppe of rolling northerly facing terraces at the western end of Felton Road. A mix of stemmed grapes and whole bunches are filled to 3½ tonne wooden cuvee for several days cold soak and wild yeast ferment, followed by transfer to medium and light toast French oak barriques for eleven months maturation.
