One of the great endowments of Forest Hill is the age and maturity of its cool climate vineyard. Home to the Great Southern's eldest Cabernet vines, the original plantings are over forty years of age. These unirrigated vines on their own roots produce concentrated and complete wines, elegant and refined. Fashioned from the estate's very best parcels of select, hand picked Cabernet Sauvignon grapes, Block 5 exhibits splendid concentration of silky, grainy tannins, extraordinary intensity and ripeness of fruit with engrossing overall complexity.

$6699each $803DOZEN EACH DOZEN There is something very special about the wines of Forest Hill. Part of this, of course, comes from the location. The vineyard is located in Mount Barker and the vines date back to original plantings made in 1965. This makes Forest Hill the oldest cool climate winery in Western Australia. Warm daylight hours coupled with the cool nights of the Great Southern harness ideal conditions for the production of slowly ripened wine styles. Harvests of Cabernet Sauvignon, picked of the superior Block 5, are destemmed and crushed into eight tonnes, open fermenters, inoculated and pumped over thrice daily at 25C. Batches are transferred to oak barrel for completion of malolactic and eighteen months maturation.

A deep scarlet colour. Expressions of dark berries, tobacco leaf and subtle earthy notes carry through from the bouquet onto the palate with lingering dark chocolate characters. A long and generous mouthfeel is well supported by a very dense structure of chalky tannins. Approachable now, Block 5 will continue to soften and integrate as it develops into a longer and more complex, mouthfilling wine.

Forest Hill work hard at extracting the best possible Shiraz out of Block 9. Better soil maintenance with no herbicides and more composted material, while leaf plucking is applied earlier in the season and more diligently. The maturity of the vines, management of the property and evolution in the quality of fruit all impact on the excellence of the finished wine. Its long and fine, chewy structure is dominated by bold varietal fruit characters, while the background gamey nuances intensify the palate, along with subtle earthiness and sweet spice undertones.

$6499each $779DOZEN EACH DOZEN The raw Shiraz grapes at vintage feature ripe, fleshy, berry flavours with firm, fine, elegant tannin. Vine health is fastidiously maintained and canopy densities are always optimal as a result of shoot thinning to ensure balanced growth. Grapes are cold soaked in eight-tonne fermenters to extract and retain desirable varietal flavours and aromas. The juices are vinified at around 45C to prevent over extraction of tannins locked in the skins. Macerations are not extended for the same reason. The wine is transferred to barrel for malolactic, softening the palate and completing the integration. Matured eighteen months in a combination of new and seasoned Francois Freres and Sirugue French oak bariques.

Dark red, purple hues. Intense aromas of blueberry and satsuma plum, subtle anise and earthy undertones. Intense flavours of red and black berries over a length of fine silky tannins, perfectly integrated within a long and generous mouthfeel, its palate sweetness and cherry ripe oak will continue to soften and evolve. A suitable match to the finest red meat gourmandise.

Excellent Langtons Classification. An eminent performer on the international wine show circuit, one of the nation's most celebrated Shiraz, the best of McLaren Vale. Fox Creek Reserve is assembled from a ruthless barrel cull of the best parcels to come out of each vintage. Offering great weight of fruit on the palate, an extraordinary range of flavours, the finish is long and legendary. Highly cellarable yet fully approachable when young, a Shiraz of great purity and unequivocally fine acidity, decanting and breathing are a must.

$8699each $1043DOZEN EACH DOZEN Shiraz is sourced from the choicest blocks of McLaren Vale vineyards endowed with a range of terroir contributing structural and flavour complexity. Soils include bay of biscay, grey loam, and red gravels. Grapes are harvested when fruit flavours, tannins and acids are in perfect harmony. Vinified on skins for eight to ten days, all components complete ferments in barrel, developing texture while integrating oak and tannins. Matured twenty one months in a combination of specialized oaks by a range of French, American and Australian coopers. Barrel by barrel selection throughout all stages of fermentation and maturation ensures that only the outstanding parcels are included in the final wine.

Intense dark garnet colour. Red cherries, plums and a hint of herbaceous spearmint lift, meld with the complex aromas of cinnamon, nutmeg and roasted chestnuts. The palate is rich and full showing lashings of plums and cherries, with earthy nutty notes rounding out the mid palate. Power, richness and complexity, the structure is thick and rich, characterised by vibrant textural tannins which soften as the wine evolves, it finishes lingering and long.
