Valmur is an area on the eastern side of the Chablis Cote, very near the centre, between the Grand Crus of Vaudésir to the north, Grenouilles in the west and Les Clos to the south. The topography at Valmur forms a small valley, divided by the Sainte Vaubourg fountain path. The microclimes can vary, somewhat more than neighbouring Crus, yielding a range of styles, characterized by firmer palates. Brooding and austere in its youth, Valmur blooms as it evolves into a fully fragrant, elegant and textural mode of Chablis.

Perfect ripening conditions encourage the retention of aromatics in the fruit while developing good natural sugars. Vines are planted to grey unirrigated loam soils on an east facing slopes just opposite the winery and cellar. Grapes are harvested by hand and treated to a whole bunch press to retain pristine fruit characters and minimise phenolic extraction. Juices are cold settled before a transfer to a combination of new and seasoned French oak barrels for fermentation and eleven months maturation.

Pale straw with green hues. Intense lemon aromas are framed by a complex almond, mineral and subtle oak bouquet. The palate reflects the nose with persistent citrus flavours, balanced by almond meal nuttiness and creamy texture from the lees ageing. Wirra Wirra patriarch Greg Trott venerated cricket as the most noble of pursuits. He even built his very own concrete pitch at the family farm to emulate his heroes. Grapes are shunted up the hill to the Woodland wineworks for immediate pressing, wild indigenous yeast ferments and ten months lees stirring battonage in fine oak. Opulent yet refined, fragrant of chamomile and honeysuckle grapefruits, abundant with orchard characters, roasted hazelnuts and maritime salinity, a pebble and oyster shell minerality which conjures up tradewinds and briny tropical seas.

The Wilyabrup subregion of Margaret River is widely acclaimed by industry pundits as the source of Australia's finest Chardonnay. Woodland's consuming ambition is to create wines which emulate the great vineyards of the world. There is less than a hectare of low yielding Chardonnay at Woodlands and output is highly limited. Woodlands is produced exclusively from Mendoza, the clone that made Margaret River famous for Chardonnay. A luxurious regimen of lees stirring and new oak fermentation adds mouth filling textures and rich complexity.

The Gingin/ Mendoza clone was first choice, famous for it's hen and chicken bunchset, delivering low yields with higher levels of acidity and great intensity of flavour. Grapes are hand picked at ripe and healthy baumes, each batch is separately destemmed through an advanced vibrating hopper and pressed into French oak for a luxurious course of barrel ferments, enhancing intensity of fruit while achieving a more complex flavour profile. Upon completion, most batches are racked, a third of the wine remains in barrel. Come September, components are racked and assembled for filtration and bottling.

While the wood treatment in Wynns Chardonnay has gradually been reduced over the years, the style of oak is refined and plays an important but subtle role, enhancing the varietal characters through the use of techniques which ensure complexity. As a young wine it displays vital expressions of fresh cut melon, figs and citrus fruit finely balanced by vanillin oak. Hints of butterscotch and roasted nuts evolve as the wine ages. The enduring tradition continues at Wynns, a highly attractive Chardonnay that's immediately enjoyable yet ages magnificently.

As a pioneer of the region, they also retain the oldest vines. Wynns Chardonnay has consistently upheld a reputation for superior quality and value. The estate's Coonawarra resources make available parcels of fruit that can be fashioned into wines of classic varietal character and longevity. Grapes are crushed and inoculated in temperature controlled fermenters to retain the vitality and essence of Coonawarra Chardonnay. Components are matured for several months in a selection of French oak barrels to develop complexity.
