At an altitude of 420 metres, the close planted, low yielding vines are grown to sandy loam soils over red yellow clay with some shale. M3 is an assemblage of the respected I10V1 clone and the exciting new Bernard clones from Burgundy. Grapes are hand picked and whole bunch pressed prior to barrel fermentation and maturation in French oak. Wild indigenous yeasts ferment batches to dry, followed by partial malolactic, nine months maturation and sedimentery lees battonage.

Paler hues than most Chardonnay. M3 opens slightly austere, offering restrained fruit and a hint of honeysuckle before revealing a palate of great length. White stone fruit flavours and savoury, toasted nuts complexity around a solid core of fruit, the oak is beautifully handled. Elegantly structured with a long and fine, bone dry finish. One of the Yarra Valley's original vineyards dating back to 1862, St Huberts currently operates four blocks of distinguished Chardonnay vines. Planted on a gentle slope of well drained grey loamy soils, the fruit from these parcels provides the backbone to one of Victoria's most stately Chardonnay wines. The princely berries translate into a beautifully aromatic bouquet and rich palate, slightly citrus, set against a background of grapefruit, apple and melon flavours all bound together by suggestions of cool climate mineral and French vanilla oak.

Careful management using three trellis systems ensures that each block of vines fully ripens, but also adds complexity to the finished wine. Chardonnay is sourced from the St Hubert property and mature mature Yarra Valley vineyards. A high solids juice, extracted from the pressing of whole bunches and destemmed grapes, is fermented in a mix of new and seasoned French oak. Minimal handling ensures that the fresh varietal fruit and integrated oak characters remain in balance. Batches are treated to maturation on yeast lees, a small component completes malolactic to add texture and palate weight.

Light to medium straw, hues of green. Nutty barrel ferment aromas with lifted notes of peach and pear, given complexity by hints of citrus peel and toasty, nougat oak. Generous and rich on the palate, stonefruits, honeysuckle and spicy oak, even and restrained. The finish is tight, with lingering citrus and creme caramel notes.

Each location must add to the stature and integrity of the finished wine. A collation of harvests, mostly hand picked Chardonnay, including Gin Gin, American and Burgundian clones, grown to the southern precincts of Margaret River. Batches are whole bunch pressed for optimal extraction of free run juices into a selection of seasoned and new Burgundy coopered barrels. Ferments are kept at 25C to 26C, stirred regularly until completion of malolactic. Components are assembled after a year in oak and assembled for six months prior to fining and filtration.

Limpid white gold hue. Aromas of stonefruits and cashew, white flowers and honey, creme brulee and hay. The palate is savoury and deep, gently viscous with a soft round mouthfeel showing nutty figgy flavours over a citrus twist. Perfectly integrated fine grained oak, natural acidity is fine and on point, soft mineral acidity to finish, making Stella Bella an accompaniement to marron or salmon, smoked duck or brie.

Sticks is a vibrant Chardonnay with exemplary integration of oak, sourced from premium vineyards operated by some of the Yarra Valley's finest growers. With access to the best Yarra Valley Chardonnay, Dolan's role as winemaker is very straightforward, to craft a wine that allows the outstanding quality of fruit to speak for itself.

Hand picked grapes showing outstanding acid balance and varietal character are the basis for the wine, harvested on the very day they achieve maximum ripeness. Fruit is whole bunch pressed, juices are treated to a day of cold soak, followed by racking into a selection of seasoned and new 300L French oak hogsheads, 500L French oak puncheons and controlled fermenters. Batches are vinified on gross solids to infuse savouryness and complexity. Upon completion, components are aged nine months on sedimentery lees before assemblage into the finished wine.

Pale lemon with green hues. A very attractive wine offering a panoply of white peach and citrus, brioche and light oak caramel cashew oak inflenced aromatics. Flavours of stonefruit, nectarine and peach, limes, crisp apple and grapefruit are complimented by toastyness stemming from the judicious time spent in oak.

Bridgeland is one of the most picturesque properties on Margaret River. Originally prime farmland, it boasts one of the largest dams in the region, approximately a kilometre in length and covering eighteen hectares. Bridgeland is endowed with a unique confluence of terroir and clime, a longer, cooler growing season and slower ripening period to produce wines of the highest quality. Barrel fermented in a high proportion of new French oak barriques, battonaged throughout the maturation to infuse opulent textures and extraordinary complexity.

$2049each $245DOZEN EACH DOZEN Established 1982, Scotchmans Hill has become a producer of some of Victoria's most perennially loved, elegant and consistent wines. Swan Bay Chardonnay is an assemblage of cool climate wines from good vineyards around Geelong and the Strathbogie Ranges. Most of the juices, approximately two thirds, are treated to a lavish oak barrel vinification to enhance the finished wine with creamy characters and fine cashew complexity, the balance is sent to fermenters for the retention of zippy Bellarine acidity and vitally fresh fruit characters. The barrel ferment component is treated to six months maturation in a selection of fine French oak barriques.

Pale gold with green hues. Nectarine and white peach with citrus fruits dominating the bouquet. This is complimented by creamy overtones, spice and cedar oak. Up-front fruit flavours of nectarine, white peach, melon and lemon citrus with a mineral edge throughout the palate. A generous Chardonnay mouthfeel, creamy and nutty oak characters round out the wine, which has a long, lingering back palate.
