What Spinifex choose to do best is discover isolate parcels of old vine, sometimes overlooked or underloved, at the Cotes du Rhône end of the varietal spectrum. This is no flight of fancy, as the background of the husband and wife team includes many growing seasons in France. Papillon is bottled towards the end of vintage year. Crafted from very old material Grenache, Cinsualt and Mataro, Spinifex hand select the vines and pick grapes, vinifying the parcels with an aim of creating a wine that's all about freshness, fruit and spice, a wine that's bright and alive.

Spinifex make small quantities of unique hand crafted regional wines from the Barossa and Eden Valleys. Spinifex wines are fashioned into a more complete and complex, unique and characterful wine, always assembled from components that are the result of an interaction between variety, soil and mesoclime. Peter Schell vinifies everything at his estate wineworks in Bethany, Tanunda, where he also runs his own winemaking consultancy company. Over many years, Schell and his girl Magali Gely have worked for prominent Barossa brands, including tours of duty at the highly distinguished Mountadam and Turkey Flat, whilst also finding the time to work vintages in the south of France.
 
Bright and brilliant, ruby red. Very aromatic and bright, lifted cherry, red currant and spicy raspberry fruit are overlaid by pot pouri and exotic herb. With time in the glass reveals subtle warm earthy notes of beetroot, subtle white pepper and caraway spice. Distinctly medium weight on the palate with a lovely line of acidity and light, slightly sappy, fresh tannin dryness. Savoury spice and dried herbs building towards the end of palate.

An inspiring varietal mix of Shiraz and Grenache with Touriga Nacional, the traditional vintage port grape. A suite of yeast strains, each suited to a different parcel of fruit, serves to highlight the fresh berry, floral, spicy, earthy aromas contributed by Touriga and Grenache, while the richness and pepper spice of Shiraz builds palate weight and structure. Completely unoaked, Gamekeeper embraces the spectrum of ripe and savoury Barossa fruit, delivering a wine which is so much greater than the sum of parts.

Shiraz primarily from elevated well drained vineyard sites around the cooler southern and central sections of the Barossa. The Grenache from low vielding west and north western areas of Gomersal and Greenock where the vines truly struggle to survive, producing intensely flavoured low yielding crops. St Hallett have carried out extensive trial work to find yeast strains that suit this wine. The aim is to highlight the fresh berry, floral, spicy, earthy aromas contributed by the Grenache and Touriga, while the richness and pepper spice of the Shiraz builds palate weight and structure. Contact with yeast lees post ferment, gives the wine an appealing texture and earthiness, completely fruit driven.
 
Vibrant cherry red colour. Highly floral bouquets. A pot pourri of lively cherry and raspberry with a spicy rose petal-like infusion from the Touriga Nacional makes this a kaleidoscopic sensory experience. Old world European subtle savoury earthiness meets the new world vibrant fresh array of raspberry cherry fruits. Finishing with soft yet sanguine tannins, a very food friendly wine.

A pure Tempranillo wine by one of Australia's most passionate protagonists of the style. A native of arid Italianate climes, Tempranillo achieves complete ripeness in the ferrous soils of Heathcote. Challenging Terra rosas and moderate seasons reduce vine vigor to yield limited parcels of intensely flavoured fruit. The talented team at Roses & Tar share a passion for the torrid Spanish varietals, closely managing their Heathcote sites to yield the finest possible Tempranillo. Match with spicy pork and fennel sausages.

From Don Lewis and Narelle King's Heathcote property, vinified alongside a component from a second choice Heathcote site. An early ripener, fruit is picked over the course of several days according to parcel ripeness and treated as a single batch once brought to the winery. Grapes are crushed and de-stemmed into a vinimatic fermenter and spun twice daily. Temperature and acid levels are constantly monitored throughout the vinification, upon completion the wine is treated to an air bag press. Racked off gross lees and transferred to barrel for a course of malolactic and maturation in a combination of new French oak and older barriques for a year.
 
Brilliant deep cherry red colour. Rich raspberries and cream bouquet with nutmeg and minerally notes. A fresh sweet palate, black cherries and a touch of tartness nicely balanced by chalky tannin, fruits burst over classic chalky tannin, well balanced by rhubarb astringency. Lingering prune plum flavours and great palate weight extend all the way to the finish.
Teusner Dog Strangler Mataro

In the wonderful wide world of wine, you will find over sixty aliases for Mataro. Mourvedre from the Cotes du Rhône and the Spanish Monastrell are amongst the most familiar, as well as lesser known pseudonyms such as Balzac and Esparte. Custodians of the finest parcels of Barossa Mataro, the house of Teusner are Australia's most accomplished purveyors of this complex and engaging, esoteric varietal. Teusner's favourite by far is the French construct known as estrangle chien, the dog strangler, due to its bestial tannins.

Kym Teusner is an enthusiastic winemaker, graduate of Oenology at Adelaide. He was always focused upon returning to the Barossa and experimenting with the Rhone varieties that grow so well there. This drive led him to work with several high profile producers of Rhone style wines whilst working on the launch of his own label. The Dogs outnumber the humans at Teusner, and these four legged friends are in no peril whatsoever, but the name tells something about the wine, and Teusner are sure you'll love it. Parcels of Mataro are sourced from rare, precious sites scattered all over the Barossa, Vine Vale and Greenock, Moppa and Ebenezer, to craft a wine that's complex and a joy to drink.
 
Deep ruby red with purple flashes. Earthy and deeply spiced, saturated with deep, ripe black and dark berry fruits, plums, blackberry and mulberry with a dash of blueberry lift and hints of earth, leather, five spice, violets and schezuan pepper. The palate is well weighted and rich with broody dark and black berry fruits. Earthy and intense, with plenty of exotic spice, a touch of floral lift and savoury, ripe Mataro tannins on the lingering finish.
Tim Adams The Fergus

The Tim Adams label was born out of a venture to make small oak casks and limited amounts of wine. After three decades of consistently superb vintage releases, Adams is counted as one of the leading winemakers in Valley Clare. Fergus was a neighbour who was kind enough to sell his Grenache to Tim in 1993 during a desperate shortage. Tim quickly realized that what had been achieved through a serendipity of logistics was to have real potential as a full bodied, soft style with immediate approachability and splendid compatibility to good food.

A collation of harvests Tempranillo and Grenache, sourced from the Ladera, Sheoak and Mahons vineyards in Valley Clare, a choice parcel of Malbec is added for complexity. Grenache remains on the vine until fully mature, grapes are harvested late and crushed on to batches of drained Tempranillo skins for a week of vinification. The fermenters are topped and closed for another week prior to pressing. Components are racked several times before filtration and transfer to seasoned French and American oak hogsheads for an extravagant two years. Components are assembled and bottled without cold stabilizing, which may forn a harmless crystalline deposit.
 
Dark scarlet purple hue. Ripe berry and cherry fragrances, licorice and garden spearmint over spiced oak notes. Lifted red berry flavours, complexed by Grenache spice and given extra back palate astringency by virtue of the other more tannic grapes. A mouth filling wine that will go nicely with turkey and duck, gamey meats and lamb.

The torrid Tempranillo is the basis of Coronas, blended with a small proportion of Cabernet Sauvignon. Tempranillo is a traditional Spanish grape, known locally around Catalonia as UII de Llebre, the hare's eye. Tempranillo produces a wine rich in alcohol, with moderate acids, and attractive aromatics of black plum, cherries and raspberry. It ages well and gracefully. A complex and flavoursome red with alluring scents and a complex, fruit driven palate, well suited to grilled meats and spicey meatballs, paella, biting cheese and designer pizza.

Torres has been associated with innovative vineyard management and quality driven winemaking for decades. Since they became the first in Spain to use stainless steel equipment, Torres have produced outstanding old world wines from the traditional Spanish varietals. Great significance is placed on selection of site, the altitude and microclimate of the vineyards. A mostly Tempranillo wine with a smaller portion of Cabernet Sauvignon. Cultivated in Central Penedes, inland Catalonia and many other parts of Spain, the Tempranillo berries are moderately sized, with good dark colour and a hard skin. Torres was treated to maturation in Americano 300 litros quercas barriques para doces meses!
 
An opaque ruby red colour. Generous and intense varietal aromas, hints of blackcurrant and vegemite, bay leaf, curant and olive. The lingering bouquet offers up a complexity of red fruits, tobacco and sour cherry. Some florals appear over a background of blackberry and scorched earth, coffee and thyme. A lingering, fruity finish with lively acid structure and affable tannins, in a wine that would blissfully suit a standing rib roast.

Cariñena is a Mediterranean heritage varietal which the Torres team resuscitated from the last known enclaves on old vineyards in Chile. The Garnacha Tinta component is grown in a region famous since the time of Roman Emperor Augustus, for producing the finest wines in the Mediterranean. This is a provocative wine for Australian tastes, with gritty tannins, tangy acids and a drying palate in authentic old world styling that's sure to stir lively conversation. A torrid, warming red that goes well with fried sardines, stuffed peppers or Iberian styled pizza.

Mostly Garnacha Tinta grown to the Mas Nerola vineyard in Middle Penedes and the Serra d'Almos in Montsant. A third of Cariñena from one of Torres most famous vineyards, the Les Muralles situated around the Conca de Barberà. This superlative vineyard produces Cariñena of exceptional quality. Cariñena is a rough grape from a broken home with many problems, mostly used for blending, ubiquitously grown around the Mediterrannean where it basks in the dry climate. When cultivated under trying conditions to poor soils, it produces robust wines of high alcohol potential, rich pigment and extract. Two weeks skin contact and aged for six months in a mix of American and French oak barrels.
 
Deep ruby colour with a hint of ochre. Rich complex Mediterranean aromas with exuberant notes of blackberry and spice. The fruit flavours are ample and generous, offering an engaging complexity as they develop into savoury, herbaceous characters. Velvety tannins support expressions of licorice and a concentratation of savoury fruit. Superb with pastas and roasts, casseroles or game, Asian and traditional Mediterranean cuisine.
