Valdespino are the oldest Bodega in Jerez, proud of a tradition which dates back to the thirteenth century. By appointment to the royal courts of Europe for generations, the wines of Valdespino are unique for their richness and complexity, refinement and enduring appeal to discerning enthusiasts. Manzanilla is a dry style of Sherry, a touch sweeter than Amontillado, vinified and aged very near Jerez, at Sanlucar de Barrameda, its extended ageing and indigenous yeasts impart aromatically clean chamomile characters to the wine.

At the very south of Spain, just a short boat ride from Gibraltar in the province of Andalusia, a unique confluence of geography and clime, conspire to yield a timeless range of multi dimensional, refined old world wines. Valdespino hold a very special provenance, sourced off the very vineyard ceded to Alfonso Valdespino in 1264. Harvests off Palomino Fino grapes from Sanlucar de Barrameda, are vinified at an ancient wineworks on the estuary of Guadalquivir River, to be followed by three or more years in seasoned oak barrels, topped up and racked according to the peculiar Solera system. A thick cap of yeasts protects the wine as it ages, achieving a fresh yet mellow bouquet and palate. Alcohol 15.0%
 
Pale, golden cream yellow hue. Highly fragrant of chamomile and lemon herb teas, custard apples and toast, lanolin and freshly peeled nuts. Deliciously fresh palate, biscuits and yeastyness, pear notes and meal. A rich yet elegant wine which can be served chilled as aperitif or at room temperature alongside, soups, cheesed and traditional European faire.

Valdespino is one of the most treasured Sherries. El Candado is made from Pedro Ximenez grapes which are left out in the sunshine for at least a fortnight after harvest. The grapes slowly dehydrate, absorbing the unique and discernible characters of the Mediterranean as they turn into raisins. The sugar levels rise and the fruit is crafted into a wine showing an intense mahogany colour and alluring bouquet of aged rancio fruit. The palate is velvety rich, endowed with layers of complexity, remarkably smooth with a long and clean, exquisite aftertaste.

Valdespino are as old as Sherry itself, they still source fruit from from the first estate vineyard, established in the thirteenth century by Alfonso Valdespino. Generations of winemakers at Valdespino have made major contributions to the art of Sherry making. Valdespino employs the ancient Solera system, rackings and progressive elevation of the barrels to higher tiers, as the wines slowly age under a film of protective flor yeasts, ensuring consistency and quality in a fortified which is an assemblage of vintages. The Sherry cases are stacked in rows, the older ones are classed into ascending ages of Criadera, replenished as they mature with stocks of younger wine. Alcohol 18.0%

Still sourcing fruit from the original estate vineyard, established circa 1300, generations of winemakers at Bodegas Valdespino have made major contributions to the refined art of crafting fine old Sherry. Some of the antique barrels which hold stocks of maturing Valdespino, are up to a hundred years of age, they are cherished as an invaluable endowment and repaired at the estate cooperage, time and time again. A film of indigenous winery flora yeasts serve to keep the wine stable as it ages, imparting and infusing wonderful characters into the Sherry as it evolves over the course of many years.
 
Very dark in colour, often referred to as black Sherry, a green tinge from extended barrel age. Bouquet of rancio and sultana, almonds and marzipan, developed cumquat notes. A solid weight of fruit on the palate, raisin and rancio, coffee syrup and liquorice, almond and salted caramel. Immeasurably long finish, a clean and lingering aftertaste, complex, luscious and unforgettable.

Drawn from stocks of Very Old Sherries, dating back to the nineteenth century, assembled to an average minimum age of twenty five years. Fruit is sourced from the Oloroso designated, chalky soil vineyards of Pago Carrascal and treated to the ancient Solera system, elevated through tiers of maturing barrels and topped up with younger wines as they angels take their share. The resut is a concentration of opaque, nutty flavours, marmalade and vanilla, rich, elegant and beautifully balanced with barely a hint of sweetness.

Vasse Felix make a cane cut dessert style Semillon by slashing the shoots at the base, essentially detaching fruit from the vine. Bunches are then allowed to hang for several weeks, during which time the berries desiccate, concentrating the sugar, flavours and acid. Cane Cut Semillon is all about timing and precision, exercising care in the vineyard to create fruit which can ultimately translate into a wine of purity and elegance. Being an early ripening grape, Semillon finds the growing conditions in Margaret River idyllic. Vines will usually compensate for cooler conditions by reducing yield so that every chance is given to obtain optimum ripeness. Given the amount of shrivel in a cane cut grape, yields are precious and extraction rates are very low for this style of wine. Following harvest and the crush, juices are inoculated to select yeasts before vinification in a combination of fermenters, folowed by a judicious term of lees stirring in a mix of French oak barriques. Alcohol 11.0%
 
Medium straw hues. Intensely fragrant with barley sugar and spice, lovely citrus marmalade notes, gingernut and meringue are seasoned by toasty French oak notes of vanilla and spice. Preserved lemon, tangerine and grapefruit flavours burst onto the palate, a fresh tangy acidity perfectly balancing the rich luscious sweetness. A lovely viscous, silky, creamed honey mouthfeel provides medium bodied richness and texture, finely focused mineral acidity and long luscious finish.

The merit of Otima was to show Port's versatility as an all year round, anytime drink, appealing to both women and men, dispelling many of the myths attached to Tawny Old Port. A blend of traditional Portuguese varietals from the Douro Valley, Touriga Nacional and Touriga Franca, Tinta Barroca, Tinta Roriz and Tinto Cão. Fruit is vinified at 24�C to 28�C by the action of natural yeasts. Once the must has achieved desired degree of sweetness, usually within forty eight hours, the wine is fortified by the addition of a 77% grape brandy, a balance of 80% must and 20% brandy.
 
Rich tawny colour. Excellent nose of nuts and hints of mature fruit. On the palate light and delicate, beautifully rounded, with hints of dried fruits and long elegant finish. Decanting is not required, Otima is ready to drink on release and will maintain its quality within the bottle. Serve slightly chilled or at at room temperature, superb with cheese, nuts or dried fruit after a meal or on its own.

A fine blend of 20 Year Old Tawnys, another important breakthrough for the Port trade, broadening the perceived image of Port in its traditional markets. An outstanding wine that epitomises everything that is great about a superbly balanced 20 Year Old Tawny. Traditional Portuguese grape varietals from the Douro Valley, Touriga Nacional and Touriga Franca, Tinta Barroca, Tinta Roriz and Tinto Cão. Fruit is treated to vinification through natural yeasts at temperatures between 24C and 28C. Once the must has fermented to the desired degree of sweetness, usually within forty eight hours, fortification takes place with the addition of a 77% grape brandy, a balance of 80% must and 20% brandy.
 
A translucent copper tone. Beautiful soft nutty aromas gained by a full twenty years ageing in seasoned oak casks. Otima is rich and delicate, but never cloying, the tannins and acidity ensure balance and perfect length.

The late ripening cycle of Quinta da Cavadinha dictates the style of it's Ports. They are fresh, elegant and have very fine aromas. Old vines make up a very high proportion of the vineyard, consequently these wines are dark and concentrated, but the south easterly aspect and higher altitude contributes a very elegant style. The wines from the lower vineyards that border Pinhão River are tannic, dark purple red and concentrated, with superb aromas of violet and tea rose. Vintage 1996 ran extremely smoothly with an ideal amount of grapes being received per day. This allowed for good winemaking practices, which is apparent in the wines excellent quality.
 
Concentrated red and black fruit with hints of Esteva. On the palate, a potent structure in harmony with the fruit, followed by a long elegant finish. Showing great depth of structure, Cavadinha 1996 will undoubtedly be a wine to age for many years. With age, the Cavadinha wines develop even more elegance and balance. The nose can give aromas of very fine old burgundy after some years in bottle.

Warres Vintage Port 1.5L MAGNUM

Three great estates, Quinta da Cavadinha, Quinta do Retiro Antigo and Quinta da Telhada, are operated by families who have been working the harvests for generations. All fruit is hand picked, hand sorted and to a great extent, tread by foot in the traditional old world way. Ferments are arrested by the addition of aguardente, a pure grape spirit of 77% alcohol, followed by extended ageing in an heirloom of large wooden casks. The noble old Warres vines, decades of age, often yield less than a half litre of fermentable juice per vintage.

The structure, style and superb quality of Warre's Ports are defined by its vineyards. The mainstay of Warre's Ports is provided by three great estates, Quinta da Cavadinha, Quinta do Retiro Antigo and Quinta da Telhada. The latter was acquired by Warre's in 2006 and this riverside property now makes a significant contribution. Further to these, Warre's are able to draw on the production of a collection of other sites with long associations. Quinta do Retiro Antigo is one of the finest vineyards in Rio Torto. A historical landmark with spectacular 18th century stone terraces, most of which grow just one row. These ancient vines produce superb grapes that perfectly complement fruit from Cavadinha.
 
Inky and concentrated, an opaque colour given by the famous old vines of Retiro Antigo. This concentration combines perfectly with the freshness imparted by wines from the higher lying Cavadinha vineyards to produce lovely fresh flavours of blackberry fruit. A wine of enormous elegance, combining vibrant lifted fruit with power and long lasting flavours. Vintage 2007 is much enhanced by the exuberance of Telhada Touriga Franca grapes.

The complexity, elegance and balance of Warre's Vintage Ports are a synergy of the great Quintas, da Cavadinha in Pinhão Valley and do Retiro in the Rio Torto. Warre also continue to make much of their Port by treading in stone lagares or shallow treading tanks. The Upper Douro is one of the last places in the world where traditional treading is still practised. This is not done to entertain visitors but because it continues to produce the best Port. Always the innovators, Warre have further developed a unique robotic lagar, a low and square tank fitted with mechanical treading pistons whose gentle movements replicate the action of the human foot by actually treading the grapes against the floor.
 
Dark ruby colour. The elegant nose exudes a characteristic Warre flowery nose. Tremendous backbone and a rich complexity of balanced fruit on the palate. It's solid structure indicates a long lasting Vintage.
