Tio Pepe Fino

Tio Pepe is the world's leading Fino, a very pale and dry style of wine made in the southwest of Spain. Produced since 1844 by the Gonzalez family of Jerez, Tio Pepe has a distinctive aroma and a unique taste. Made from the Palomino grape it is aged five years under a covering of fresh, naturally occurring yeast, giving Tío Pepe its distinctive, bready, lightly nutty dry palate. Its outstanding quality has claimed multiple Gold Medals at conspicuous competitions, the first Fino ever to twice claim Gold Medal at the prestigious International Wine Challenge.

Manuel María González established the González Byass Bodegas in Jerez, circa 1835. Ambitious Manuel was helped by his uncle Jose Angel de la Peña, known to friends and family as Tío Pepe. Together they created a wonderful, unique and delicate style of fortified wine which endures to this day under the moniker Fino. As a tribute to his uncle, Manuel named it Tío Pepe, or Uncle Joe. Situated just an hour or so south of Seville, Jerez is the traditional home of Sherry wine, its main street is named in honour of the founder, the Tio Pepe Bodegas are entwined with the history and culture of Jerez, a highly popular international tourist attraction in their own right. Creamy citrus hues. Drying bready nose, fruity complexity, a pouch of hazelnut, tradespice, cypress and background oak. A palate that's masterfully balanced between ripe, complex fruit and mouthfilling dryness, yeastyness and grilled nut characters, barley, cheesyness and meal, perfect alongside rich foods, the ideal choice to accompany several courses of a stately banquet. A wickedly decadent indulgence, an extravagant gratification for the hedonist within the most wayward Barossa enthusiast, here are Torbreck at their nefarious best. Heinously high in alcohol and not for the feint of heart, a single unique parcel is called upon, only ever in the finest vintage years, hand picked off a precious, sharefarmed block at Moppa. Treated to a meticulous old world vinification techniques, Highland Fling is arrested mid way through fermentation with a fortification of Torbreck brandy, lifting the intensity of palate and infusing evocative perfumes.

Only ever made in exceptional vintage years, Shiraz grapes are all hand picked off a single block of vine at Moppa. Grapes are all destemmed into small fermenters for several days of cold soak and inoculation to wild, indigenous and ambient yeasts. After a course of vinification, pumpover and plunges, ferments are brought to a halt by the addition of a well aged, oak barrel brandy, which preserves palate sweetness and retains a higher measure of alcohol. Batches are gently basket pressed directly into seasoned French oak barriques for a term of eighteen months maturation, to be bottled without fining or filtration.
 
Inky black, intense hue. Fruit driven, lifted aromatics of dark blackberries and cassis are blissfully complemented by the wonderful scents of oak aged brandy spirit. Full bodied, concentrated and silky smooth, layered with dark bramble flavours and aromaticly spiced choco plum notes, Highland Fling is the perfect accompaniment to good beef or the very finest cheese.

Medium Dry Amontilllado, made slightly toothsome by the inclusion of younger wines Pedro Ximénez, fashioned for the sweeter palates of the Americas. Palomino grapes are harvested off the illustrious Inocente vineyard at Pago Macharnudo, oak fermented and treated to a term of eight years under a cap of flor yeasts before transfer to the Tio Diego Solera for a further eight years and ritual top ups. A richly complex style, off dry, elegant and exquisitely balanced with a distinctive nose of walnuts, creamy white oak and toffeed autumn leaf.

Single vineyard Jerez, exclusively Palomino grapes from the prestigious Inocente block in the eminent D.O. Jerez y Manzanilla-Sanlúcar de Barrameda at Pago Macharnudo. Fruit is vinified in American oak butts and and matured under a veil of flor yeasts for over eight years, as the ageing barrels are topped up and conveyed to the laborious criaderas and solera tradition. Finished to an alcohol of 15%, refined and sophisticatedly dry on the palate, its exquiiste balance and revitalizing freshness make Inocente Fino one of the finest marques in all Jerez.
