Pinot Grigio has been one of Preece highest priorities for many years. Regular sampling and close monitoring of flavour development, as the fruit ripens on the vines, is essential to making good wine. A gentle pressing of grapes to avoid any bitterness from the skins and minimal exposure to oxygen throughout the entire process, ensures the retention of natural varietal characters and flavours. Temperature controlled ferments through the action of specialized yeasts enhance the aromaticness of a truly splendid Pinot Grigio.

Fruit is harvested at healthy levels of complete ripeness, brimming with a fine concentration of esters and ideal acidity. Bunches are picked into small packing cases and delivered to the winery, softly pressed and cold settled at cool temperatures to separate juice form gross solids. The musts are vinified at moderate temperatures around 18C over the course of a fortnight, followed by several months maturation.

Straw yellow, greenish hues. Intense floral and fruity aromas, almond and white pommes characters over a background of fine mineral crispness. A lengthy, well structured palate of drying fruit flavours, its astringency kept in check by apple and kernel notes, all supported by balanced acidity and culminating in a long, crystalline, savoury finish.

One of the earliest wine grapes on historical record, a small parcel of Fiano was planted to a lofty hilltop site with breathtaking vistas of the surrounding vineyards at Myrrhee in Valley King. Sandalford Reserve Verdelho
Margaret River
Jack Mann is the patron saint of West Australian viticulture, the creator of Houghton White Burgundy and architect of the state's greatest editions. Jack's son was also a winemaker, he advised Swan Valley based Sandalford to establish vineyards in the nascent Margaret River region. Arguably Western Australia's finest and most enduring Verdelho, Sandalford is crafted from fruit grown primarily to these forty year old, dry grown Wilyabrup vines inspired by Dorham Mann.

Western Australia's first Surveyor General, John Septimus Roe established Sandalford in 1840. The estate formed part of the second land title in all of Western Australia. In 1972 Sandalford developed a major vineyard along Margaret River, now one of the oldest and largest, covering six hundred acres. Verdelho grapes are harvested throughout the cool of night across several different dates. Grapes are immediately crushed, chilled and pressed, only the cleanest free run juices are retained. Following clarification and inoculation to a choice strain of yeast, the wine is treated to a long and slow vinification until dryness, followed by assemblage and stabilization, filtration and early bottling.

Pale honeydew melon hues. Nose of talcum, citrus blossom and musk. Punchy in the mouth with some bracing acidity. Clearly one of the most aromatic Verdelho's ever, a knockout top end premium white and the best from Sandalford in the last two decades. Beautiful and fresh now, serve well chilled alongside seafood salads and pastas, risotto and crustacea.
Santa Cristina Orvieto Secco Campogrande
Orvieto Classico
Available in cartons of six
The D.O.C Orvieto was defined in 1971, it has since become one of the world's most popular Italian white wines and represents three quarters of the D.O.C. production in Umbria. The Orvieto Classico denomination is limited exclusively to the limestone cliffs on which the city of Orvieto is situated. The highly favourable terroirs and mesoclimes which distinguish Valley of the Paglia and the lower Tevere, are at the root of the natural endowments which have for centuries, yielded vintages of the freshest and most quenching white wines.

Good spring temperatures and the availability of water encourage the sprouting of grape. Summer rains maintain vegetative equilibrium throughout the hotter months leading to veraison and ripening. Fluctuations in temperatures between day and night allow grapes to ripen fully, achieving a harvest of healthy fruit in excellent condition. Grapes are destemmed and gently pressed, the must is cooled to 10C for a natural clarification, racked to fermenters and vinified at temperatures below 18C . The wine was then kept at a temperature of 10C until the moment of bottling. This procedure allows the preservation of vibrant, complex characters and overall freshness.

Straw yellow colour, hues of lime green. Bouquet opens with luscious fruity, floral aromas reminiscent of lemon zest, pineapple, banana and white flowers. Soft and well balanced on the palate, full bodied and luscious, soft and fresh, with lingering flavours of fresh citrus on the finish.
