Yalumba Octavius Old Vine Shiraz
Barossa Eden
Outstanding Langtons Classification. Octavius has established a reputation as one of Australia's Shiraz icons. In addition to being sourced from a number of very old Barossa vineyards, Octavius is treated to an extended period in American oak octaves of ninety litres capacity, the only red wine in the world to be matured in such small barrels. The secret of the wine not becoming overpowered by oak lies in the wood itself, which is open air seasoned at Yalumba's own cooperage for eight years before the octaves are coopered and put to use.

Grapes are all hand picked from heirloom vineyards, bush vines planted between late 19th and early 20th century, the oldest dates back to 1854. Fruit is crushed into eight or six tonnes fermenters, the wild yeasts present on grape skins initiate fermentation. Vinification and cap skin management in open and static potter fermenters is controlled by the Yalumba designed cap plunger. The result is a wine with excellent depth of colour, richness and complexity. Matured twenty months in a high proportion of new French, American and Hungarian oak hogsheads, octaves and barriques. Yalumba are one of the few wineries in the world who retain their own coopers practising the ancient craft of barrel making.

Deep bold red purple. Exotic fig and plum sauce, mocha and black liquorice notes on the bouquet. Dense and brooding, showing sweet Shiraz fruit concentration and fine seamless tannins. Long and lush through the finish, exhibiting great integration, elegance and style. Wild ferments and small format oak contribute to the individual complexities of the wine, contributing richness and fine textures.

A highly traditional, minimalist approach to winemaking preserves the character of the good vineyard fruit and expression of terroir. Harvests of intensely flavoured Shiraz grapes are treated to an extended maceration, open fermentations, manual pumpovers and basket pressing, followed by maturation in a selection of predominantly older French oak barrels for a year. Big Bertha remains unfined and is bottled with minimal sulphur addition to maximise fruit expression.

Deep red in colour. Expansive nose of fragrant dark cherries and fruit, flowers, pepper and meats. The palate is a showcase of pure unforced Barossa Shiraz, medium to full bodied with dark berry flavours, a seductive fruit sweetness and soft savoury tannins. Offering excellent freshness and superb length, the charming and characterful, fruit driven Bertha is immensely satisfying immediately upon release.

The conspicuously low yields of some great old Barossa vineyards makes their fruit unviable for commercial brands. Only the most skilled and knowledgeable small batch winemakers have the dedication to handle such precious parcels of old vines fruit. Shiraz is picked off a single site in the Angaston foothills, planted to sand over clay soils, growing at an elevation of 275 metres. Fruit is crushed into traditional open top fermenters and treated to a course of manual pumpovers, twice daily throughout the vinification. Upon completion, batches are basket pressed and racked into a selection of seasoned oak barrels for an extended term of twelve to eighteen months, to be bottled without fining or filtration.

Dark crimson colour. Aromas of intense and brightly perfumed primary red fruits dominate the nose, a herbaceous edge adding complexity. Plenty of richness on the palate, supple flavours of cherry and raspberry supported by hints of chocolate, balanced acidity and silky tannins. A simply brilliant construct of approachable, single vineyard Barossa Shiraz.
