A fortuitous confluence of vineyard terroir and microclime clime, conspire to achieve harvests of the most superlative Chardonnay and Pinot Noir, choice parcels which can translate into wines displaying refined balance between stately elegance and controlled power. Parcels of Chardonnay and Pinot Noir are all hand picked off superior vines. Fruit is chilled and whole bunch pressed, retaining only the finest free run juices and minimizing phenolics. Components are treated to a variety of vinification techniques for added complexity, structure and richness, malolactic ferments and long term maturation in seasoned French oak barriques. A course of regular, non-oxidative, lees stirring battonage is employed to develop luxurious mouthfeel and texture. An extravagant term of several years repose on yeast lees is followed by the traditional disgorgement, dosage and reseal.

Castelli Empirica Tempranillo

Crafted from parcels of hand picked Tempranillo grapes, grown to the exquisite Mazza Vineyard at Donneybrook, an hour's drive northeast of Margaret River. The greater Geographe region has been an essential component in west coast wines for many vintages, the quality of harvests rival her salubrious neighbours. An eloquent articulation of a splendid terroir and the fruit of closely cossetted vines, its classic old world savouriness, gardeniere complexity and light fresh tannins make Empirica the first choice alongside crackling pork or supple lamb recipes.

Castelli have chosen to fashion their harvest in a manner which highlights the bright berry fruit aromas and showcases the lovely savoury tannins which define Tempranillo. Parcels of hand picked fruit are crushed into small open top fermenters for several days of cold soak maceration. Batches are hand plunged twice daily for gentle extraction of colour, flavour and tannin. Upon completion, ferments are transferred to a selection of two and three year old French oak barriques for fifteen months maturation, integrating the wine while taming the tannins. A minimal influence of oak is essential to the style, seasoned oak achieves balance and structure while preserving the elegance of fruit.

Castelli Empirica Uvaggio GSM
It's no puzzling coincidence that the three noble grapes of Cotes du Rhône have endured as one of the wine world's most engaging, long lived accords. The plump, juicy sweetness of Grenache provides an amenable foil to the rustic tannins and pastoral earthiness of Mourvedre. Add a dash of peppery plum Shiraz and you have achieved a harmonious construct which drinks beautifully while fresh, beguiling and evocative after a term of bottle age.

Harvests of bush vine Grenache and Mourvedre are painstakingly picked by hand at optimal ripeness. Shiraz is vintaged slightly earlier in the season to capture and retain the fragrant spice of youthful berries. Batches are vinified in small open fermenters, Grenache and Shiraz are included with a measure of whole bunches to infuse aromatic lift. Ferments are hand plunged twice daily and pressed off quickly upon completion, transferred to a selection of well seasoned large format oak vats for an extended term of eighteen months maturation.

Fruit is cold soaked for ten days of maceration before being inoculated to Clos and F15 yeasts for a warm vinification at temperatures of 25C to 30C. Ferments are pumped over twice daily, and treated to several rack and returns for gentle tannin extraction and clarification. After three to four weeks of ferments, aimed at achieving optimal tannin development and perfect balance, components are filled to a high proportion of new, predominately Bossuet and D’Aquitaine French oak barriques for a luxurious fifteen months maturation.
 
Deep garnet. Sweet blackberries and cassis, liquorice and dark chocolate nose. Medium to full bodied palate supported by fine layered tannins, a solid core of fruit that's perfectly against bright berry acids and affable vanillan oak. Malbec adds muscularity and flesh, rounding out the tannin backbone. Powerfully structured, with the weight of fruit to match bold beef recipes or rare game meats.

Hand picked parcels of Chardonnay are chilled and whole bunch pressed direct to barrel, the balance is harvested throughout the cool of night to retain vitality. A mix of choice winery cultures and wild indigenous yeasts initiate vinification, batches are fermented to dryness, a component is treated to full malolactic. A couse of regular, nonoxidative lees stirring is employed to infuse palate richnes while developing luxurious mouthfeel and solid structure. A term of maturation, aimed at striking the optimal balance between French oak tannins and expression of fruit, is followed by the assemblage and bottling in December.

The Castelli brothers are highly accomplished international engineers with a no expense spared approach to making great wine. Choice harvests from superlative vineyards at Frankland River and Mount Barker are assembled for an outstanding construct of Shiraz. Frankland River contributes rich mulberry flavours, Mt Barker adds complexity and spiced black pepper characters. An attractive earthy richness is at the core of the fine boned, textural palate, the oak is seamlessly integrated with the layers of fruit, all supported by fine, savoury tannins.

Choice harvests of Shiraz are crushed and held for several days of cold soak maceration, the musts are inoculated to yeasts RC212 and Clos for a warmer vinification at temperatures between 25C and 30C. Ferments are pumped over twice daily, while treated to a course of rack returns and a regimen of gentle extractions. After three weeks vinification on skins, timed to retain maximum intensity of fruit while brewing the softest tannins, batches are filled to a high proportion of new French oak barriques and puncheons, predominately Sirugue, Saury and Bossuet, for an extravagant term of extended maturation.

The enduring Aussie association of Cabernet and Shiraz, with a fair measure of the amenable Malbec for softness and style, the ultimate realization of the Castelli brothers no expense spared approach to making great wine. Castelli Il Liris Chardonnay

The team at Castelli can call on precious yields of the most exceptional Chardonnay, the goal being to construct a new world wine that's very much in the style of Grand Cru Chablis. Essential to the task is a judicious component of early picked fruit, wild yeasts, battonage and fermentation on full solids in a high proportion of new French oak. A big boned Chardonnay of creamy acidity and the most stately structure, its myriad of undulating flavours and profound complexity intertwine and evolve around the solid core of exuberant, savoury fruit.

Two elite vineyards at Denmark provide the quality of Chardonnay requisite for the Il Liris style, superior sites which can deliver the intense oyster mineral character that's so necessary. A canon of select clones including the eminent Mendoza, are closely husbanded to manage leaf cover and crop load, airflow and light penetration without exposure. Grapes are all hand picked at different levels of ripeness over three separate pickings, chilled to 5C and whole bunch pressed directly to a balance of low toast, seasoned and new tight grain French oak barriques for vinification and regular lees stirring for mouthfeel and structure. Bottled late November as oak and fruit come into perfect balance.

The propitious vines are enthused by the scents of lofty karri tree blossoms, to yield harvests of the ripest, most flavourful grapes, intense with ripe brambleberry characters and redolent with the piquant cologne of local gums. Castelli's strict regimen of close canopy management achieves harvests brimming with fully ripenend flavours. Fruit is crushed and held for a term of cold soak, inoculated to yeast strains F15 and FX10, followed by a rather warm vinification for a fortnight on skins at temperatures of 25C to 30C. Ferments are treated to pump overs twice daily, gentle tannin extractions and a course or two of rack returns. Upon completion, batches are transferred to a selection of seasoned and new French oak barriques for a judicious spell of maturation.

Fruit is harvested throughout the chill of night to prevent oxidation and retain flavour. Some post crushing, cold maceration skin contact is employed to increase flavour extraction. The exclusively pure, free run first pressings are vinified at 12C to 14C with neutral yeasts to enhance all the sublime Mount Barker Riesling characers.

Castelli are all about old world winemaking traditions, applied to the pick of fruit, grown to the finest vineyards across the great viticultural precincts of Western Australia

During a lifetime of annual visits back to his parents homeland, Luca Castelli grew up working in the vineyard alongside his grandfather Nonno Germino. After a career in power engineering and renewable energy, Luca became consumed by a dream of getting his hands dirty again amongst the vines once again. His brother Sam's passion for wine also began on the family farm back in Italy. Sam's extensive career in the engineering and construction sectors lead to the ASX-listed United Group Limited, an internationally active company with an annual turnover of two billion. He always remained keen however of picking grapes and delivering boxes of his homemade wine to customers.

Castelli

In 2004, the Castelli dream of a family owned winery became a reality when, upon the slopes of Mt Shadforth, the Castelli Estate property was purchased, a 120 acre farm which overlooks Wilson's Inlet, Mt. Lindesay and the lush countryside around Denmark. The property was acquired with a semi-complete winery which, with the family's extensive construction and engineering experience, was later completed in 2006. Tudor architecture and heavy masonry walls, grand arches and an extravagant underground barrel room, give the Castelli wineworks beauty to match its functionality.

Careful attention to detail is ensured to capture the maximum varietal and regional characters. Above everything, special emphasis is placed on achieving elegance and balance. The equilibrium of fruit flavour, structure, length and finish are the hallmarks of all Castelli wines. Much of this comes from the vineyard, with careful site selection, fastidious viticultural practices and picking at optimal flavour ripeness. Once the fruit is in the winery however, that same attention to detail is also essential. Castelli concentrate on achieving symmetry in each wine. For white wines the interaction of fruit intensity, acid profile, phenolic extraction and oak (if used) are carefully assessed. Likewise in the reds, there is a delicate balance between tannin structure, fruit definition, alcohol level and oak integration. A capacity of 500 tonnes and the industry's most advanced winemaking equipment culminate to make Castelli Estate a world class winemaking facility. The philosophy has has always been focused towards small batch processing to ensure that every parcel of fruit receives the care and attention it deserves.

Essentially, the philosophy is to produce wines that everyone enjoy enjoys drinking, not specifically to win awards, nor praise from wine writers (although this does tend to be a happy coincidence) but rather something that's worthy of the Castelli name on the bottle.
