A pure Tempranillo wine by one of Australia's most passionate protagonists of the style. A native of arid Italianate climes, Tempranillo achieves complete ripeness in the ferrous soils of Heathcote. Challenging Terra rosas and moderate seasons reduce vine vigor to yield limited parcels of intensely flavoured fruit. The talented team at Roses & Tar share a passion for the torrid Spanish varietals, closely managing their Heathcote sites to yield the finest possible Tempranillo. Match with spicy pork and fennel sausages.

From Don Lewis and Narelle King's Heathcote property, vinified alongside a component from a second choice Heathcote site. An early ripener, fruit is picked over the course of several days according to parcel ripeness and treated as a single batch once brought to the winery. Grapes are crushed and de-stemmed into a vinimatic fermenter and spun twice daily. Temperature and acid levels are constantly monitored throughout the vinification, upon completion the wine is treated to an air bag press. Racked off gross lees and transferred to barrel for a course of malolactic and maturation in a combination of new French oak and older barriques for a year.
 
Brilliant deep cherry red colour. Rich raspberries and cream bouquet with nutmeg and minerally notes. A fresh sweet palate, black cherries and a touch of tartness nicely balanced by chalky tannin, fruits burst over classic chalky tannin, well balanced by rhubarb astringency. Lingering prune plum flavours and great palate weight extend all the way to the finish.

Trentham Estate was once part of a large sheep station called Trentham Cliffs, settled in the 1930s by the Chanter family. Grazing and viticulture have always been a close fit, the property eventually made the transition to agriculture and the inaugural edition of Trentham Estate was vintaged by the Mildura Murphys in 1984. Trentham retain a superior site of Shiraz in the very heat of the Heathcote region, for the creation of a generously proportioned wine, characterized by a seamlessly layered palate of piquantly spiced berry flavours and stylish, velvet tannins.

The Trentham team know that good wines are made in the vineyard, quality of fruit is paramount, the highest standards of viticulture are essential, hard work among the vines is rewarded with the finest harvests. Shiraz is harvested throughout the cool of night and promptly delivered to the estate wineworks. Grapes are crushed and destemmed into fermenters for several days vinification at warmer temperatures. Juices are pumped over twice daily to ensure balanced ferments and optimal extraction of colour and tannin. Upon completion, batches are pressed to a selection of French oak for eighteen months maturation, followed by racking and the final assemblage. Alcohol 14.5%
 
Dense red colour. Rich nose exuding lifted aromas of pepper and plums, chocolates and dark cherry. The palate is long and generous with a sweetness of fruit balanced by fine oak tannins. Licorice and coffee notes weave through the dark berry flavours, lingering nicely on the fine grained, chewy plum finish.

Tyrrells Lunatiq Shiraz

Tyrrell made a major contribution to the development of Heathcote as a world class winegrowing region. One of the earliest pioneers, they sowed the seeds and established the vines which launched the second gold rush into Heathcote Shiraz. Lunatiq is minimally handled to encourage the eloquence of terroir to speak, dark chocolate tannins support a mouthfilling palate of red currant flavours and piquant spice, followed by a lingering, well balanced finish, a titillatingly enigmatic fragrant mineral lift.

Sourced from a block of superb vines planted to the highly prized, deep red Cambrian soils on the eastern slope of Mount Carmel range, thirty kilometres north of Heathcote township. The oldest blocks are picked and transported back to Hunter Valley for vinification. Three days of cold soak are followed by a fortnight of open ferments at 25C, gently pumped over to maximize flavour and colour without over extraction of tannin. Batches are filled to a selection of high quality, tight grain French oak barriques for completion of malolactic and a year's maturation, the best barrels are assembled into the finished wine.
 
Bright red/ purple in colour. A great lift of mulberry, plum fruit and brooding, spicy chocolate oak. The palate is rich and robust, dark plum and currant fruit flavours are framed and enhanced by layers of soft fruit tannin, a tight mineral texture whilst maintaining the finesse and elegance which defines Heathcote Shiraz.
Tyrrells Rufus Stone Heathcote Shiraz

Tyrrell's planted their Heathcote vineyard in 1994, on the ancient russet red Cambrian soil, at the foot of Mt Camel along the southern end of the Colbinabbin Range. This narrow strip with its unique topography, gives the wine its rich, yet refined flavours that typify Heathcote wines, especially Shiraz. The climate is warm, dry and reliable from year to year. Vines are relatively low yielding, producing grapes which are renowned for their ability to ripen to complete flavour development, yet still retain excellent levels of natural acidity and tranquil, fine grained tannins.

Heathcote is one of Australia's most exciting red wine regions. Spotting this potential some years ago, Bruce Tyrrell recognized the significance of the region for Shiraz very early on, placing a priority on locating and developing the best possible site for inclusion into the estate's portfolio. Tyrrell secured over eighty acres of prime land which today produces wines with an extreme weight of fruit. Parcels of Heathcote Shiraz are gently destemmed and separately vinified in a combination of open and closed fermenters, an inclusion of Viognier adds opulence and lift. Batches are matured two years in predominately French oak barriques, racked several times before assessing and determining the final assemblage.
 
Dense red/purple colour. A great lift of mulberry and plum fruit to the bouquet, soft, integrated, spicy, chocolate oak. The palate is rich and robust whilst maintaining the finesse of Heathcote. The intense, berry fruit flavours, richness and mouthfilling appeal makes it a fine accompaniment to lamb, beef and game.

Shiraz offers a myriad of interpretations, Heathcote grows its own unique style, renowned throughout the world of wine for its magnificent structure, substantive tannins and weight of fruit. Parcels for a gentler Heathcote style are sourced by the De Bortoli team from vines grown to rich, red volcanic soils. Bunches are destemmed and crushed, fermented for a fortnight on skins, pressed and racked for a term of age. A forward drinking style of ripe dark fruit bouquets, spiceyness, blackberries and plum over a length of gentle tannins and supple cedar oak.
