The auspicious soils of Yarra Valley can be quite old and weathered, so much so that Cabernet Sauvignon may struggle to develop the solid tannins which are so beloved of Australian enthusiasts. A component of Sangiovese is included to contribute good natural tannin and some savouriness. A dulcet rendition of Melba which will inspire you to sing, Lucia resonates alongside grilled meats, braised rabbit or pasta with porcini e olio di tartufo.

Cabernet Sauvignon from fully mature vines twenty years of age and a component of slightly younger Sangiovese. The Cabernet blocks are cane pruned and shoot thinned to eighteen bunches per vine, the newer Sangiovese to six bunches each. Grapes are hand picked into 8kg buckets and transported to the winery. Fruit is destemmed, partially crushed and tipped into closed fourteen tonnes fermenters. The wine is naturally vinified on skins for a month at a minimum temperature of 25C, pressed upon completion, settled overnight and gravity filled to a selection of new and seasoned oak casks where it matures at 16C for a year or more. Barrels are racked by gravity and assembled into the finished wine.
 
Bright red with purple hues. Fragrant complex bramble fruit bouquets, dark chocolates, tapenade and cherry ripe aromas. Savoury palate with fine integrated tannins, a touch of undergrowth and rustic charm. An excellent food wine with a penchant for flavoursome, old world styles of cuisine.
Melba Mimi Cabernet Sauvignon

De Bortoli retain some of the finest Cabernet vineyards in Yarra Valley. To make the consumate Victorian claret, parcels are assembled with a component of Syrah for suppleness and spice, while the addition of Nebbiolo contributes tannin structure and mouthfilling, old world savouryness. Mimi's Cabernet vines were planted in 1990, the Syrah in 1994, all are cane pruned and shoot thinned to sixteen bunches, the younger Nebbiolo plantings are trimmed to six bunches each. Grapes are hand picked into 8kg buckets and transported to the winery. Fruit is destemmed, crushed and tipped into a mix of open and closed fermenters. The wines are naturally vinified at warmer temperatures of 25C to 30C and remain on skins over the course of a fortnight for optimal extraction. Mimi is pressed, settled overnight and gravity filled to a selection of seasoned and new oak casks where she gracefully reposes at 16C for over a year. Components are then gravity racked from cask and assembled.
 
Bright red, garnet edge. Juicy Cabernet nose with lovely savoury, black cherry notes. Very medium bodied with structure and acidity. Richly textured, long, rustic and fine with good tannin. The Syrah and Nebbiolo are quite gentle on the Cabernet, so there is a lovely little leafy note to the blend and a touch of stylish Italianate bitterness.

A superb accord of elite parcels Cabernet Sauvignon from the oldest De Bortoli blocks in Yarra Valley. Fruit is sourced from two estate vineyards, suitably named Old Hill and Old Back, both established 1971. A beguiling overture of seductive dark Cabernet fragrances and fragrant jube berry flavours over fine integrated tannins. Like her eponymous opera star, Melba is conspicuous for her alluring perfumes, exceptional taste and intense crescendos, before an exquisite, memorable finish.

Vines are cane pruned to twenty bunches each and shoot thinned at the ten to fifteen centimetre stage so that there are no more than fifteen per planting. Grapes are hand picked into 8kg buckets and transported to the Dixon Road wineworks. Fruit is destemmed, crushed and tipped into six tonnes open fermenters. The musts are treated to a natural fermentation on skins at a minimum temperatures of 25C, followed by a spell of three weeks maceration. Batches are pressed, settled overnight and gravity filled to a selection of seasoned and new fine oak casks where they mature for a year or more at a very temperate 16C.
 
Bright crimson red with traces of garnet. Fragrant seductive varietal aromas with a nuance of cigar box and leaf, rich and complex nose, leafiness and blueberry over a background of sweet earth and cedary oak. Full fleshy texture, sweet black and red fruit flavours with complex notes of dusty earth, leaf and dried herbs, fine grain, well integrated tannins before a long harmonious finish. Enjoy alongside roast pork or lamb.

The Abbey Vineyard at Tarrawarra, on the corner of Old Healesville Rd and Houghtons Lane, is a specialized, low yielding site which delivers a harvest of the most exquisite Pinot Noir. The choice clone MV6 was planted here in 1993 to highly mineral Humevale silt stones, which contribute to the generosity and balance within the fruit, ultimately the character of the final wine. A stately Yarra Valley Pinot noir of elegance, poise and finesse, endowed with sophisticated perfumes, power and control.

De Bortoli are all about a more sustainable approach to viticulture, essentially to produce wines with a sense of place. The focus is on a move towards biological farming. There's also an increasing focus on single vineyard wines. The gentle northeast facing slope across the road from Tarrawarra Abbey is a wonderful, early ripening site, though markedly cooler than much of Yarra Valley, it sires an exquisitely aromatic wine. Grapes are all hand picked and hand sorted to ensure that only the finest fruit is included. Batches are treated to plunges and remontage throughout three wekks of ferment, followed by ten months maturation on fine lees in a mix of seasoned and new oak casks.
 
Bright scarlet with darker robes. Very pretty black cherry fruit, complex, slightly rustic nose, mocha and spice with hints of strawberry and clove. The palate is powerful with spice, earth and red fruit flavours that build in texture, followed by an elegant finish with with fine powdery tannins.
Riorret Lusatia Park Chardonnay

Established to deep red basalt soils by family Shelmerdine in 1985, Lusatia Park at Woori Yallock in the upper reaches of Yarra Valley, is a very demanding site. Vines are all closely planted and require a lot of work but the quality of harvest is spectacular, consistently yielding vintages of urbane, mineral infused Chardonnay. Fruit is all hand picked and whole bunch pressed, treated to full malolactic and battonage. Its voluble palate of oatmeal, almonds and brioche, is tightly structured, taintless and refined, defined by its crystal elegance and briny, lingering finish.

Riorret Lusatia Park Pinot Noir

Outstanding quality fruit makes exceptional wine, it remains essential however for the process to work with nature and to allow the wine to evolve at its own pace. Vinoque Art Martin Sangiovese

The ultimate quality of wine is the goal at De Bortoli but sustainable environmental management is non negotiable, clean soils and a holistic old world approach, really do make great Sangiovese. Always the visionaries, they established a block of Sangiovese with cuttings transplanted from the illustrious Brunello vineyards of Tuscany. Sangiovese likes the warmth and vines were sown to a north south axis for optimal exposure to the sun. Bright red fruit bouquets, charcuterie, dried herbs and spice, intense red and dark fruits, bucolic and textural, savoury and deliciously dry.

The Vinoque range makes use of single vineyard fruit and classic regional styles, it affords the dedicated De Bortoli winemaking team a chance to experiment with artisanal vinification techniques and to employ a selection of varietal clones, mainly in development stage. Chardonnay can be a style of myriad interpretations, the Yarra Valley grows its own unique quality of fruit and Chardonnay is well suited to the region's cooler clime, undulating vineyards. State of the art viticulture and good old fashioned hand picking is followed by a course of whole bunch pressing and fermentations in seasoned French oak, to achieve a generously proportioned wine that's beautifully balanced and quite fine in structure.
 
Light straw hue. Stonefruits and mealy nose, apple fruit characters, notes of savoury, kernel and meal. Dry on the palate, minerally and edgy, crisp fruit flavours supported by savoury acidity and a measure of finesse. There aren't many better matches in the world of gastronomy than Vinoque and pan fried Dory fillets.

Shiraz offers a myriad of interpretations, Heathcote grows its own unique style, renowned throughout the world of wine for its magnificent structure, substantive tannins and weight of fruit. Parcels for a gentler Heathcote style are sourced by the De Bortoli team from vines grown to rich, red volcanic soils. Bunches are destemmed and crushed, fermented for a fortnight on skins, pressed and racked for a term of age. A forward drinking style of ripe dark fruit bouquets, spiceyness, blackberries and plum over a length of gentle tannins and supple cedar oak.

Vinoque Little Art Favorita

Favorita is a very close relative of Vermentino, grown to a lower section of the Art Martin Vineyard at Dixons Creek, a closely planted, north facing fertile block which yields finely structured, delicately textural wines. Grapes are all hand picked and gently pressed directly to large oak casks for a natural yeast ferment, gently stirred for creaminess and texture, followed by six months maturation. Gently aromatic with racy notes of citrus over a crisp mineral palate, Favorita is the wine of choice to match alongside cheese inspired recipes, welsh rarebit and fondue.

De Bortoli is an exciting, innovative family owned wine company, having enjoyed spectacular success throughout it's entire range of wines

The winemaking team is overseen by third generation winemaker Darren De Bortoli and his brother-in-law Steve Webber who is married to Leanne De Bortoli. The dynamic duo has been responsible for many winemaking innovations and developments. Darren De Bortoli is the creator of the world acclaimed Noble One. Steve Webber, recently awarded Gourmet Traveller WINE's 2007 Winemaker of the Year, established the Yarra Valley winery, the King Valley vineyards and oversees the Hunter Valley winery and vineyards.

The winemaking philosophy is that great wine begins in the vineyard and that the winemaker should use minimal handling and interference in the winery. Wine should have a sense of regionality and be an expression of the soil in which it is grown. Our winemakers strive to create wines that they find interesting and exciting - wines that may be quirky or unusual but wines that above all have provenance and a sense of place.

De Bortoli has wineries in diverse wine growing regions, each with its own regional style, as well as vineyards in the King Valley. The Bilbul winery in the Riverina, famous for the iconic dessert wine Noble One, also produces world class fortified wines and premium varietal and sparkling wines. The region enjoys a warm Mediterranean climate with winter dominant rainfall. The sandy loam soils vary in colour and structure from red sandy earths to brown clay loams. Bilbul plays a leading role in sustainability with a detailed action plan in place addressing water recycling, waste control, greenhouse gas emissions and other key environmental issues.

In 1987 the De Bortoli family purchased a winery and vineyard in the prestigious, cool-climate Yarra Valley region to establish a premium wine brand for the company. Leanne De Bortoli and her husband winemaker Steve Webber moved to the Valley in 1989 and built the Winery & Restaurant complex that launched the new De Bortoli Yarra Valley label in 1990. From a crush of just 35 tonnes in 1989, De Bortoli crushed 4214 tonnes in 2004 – 1987 tonnes of white grapes and 2226 tonnes of red grapes.

The De Bortoli Yarra Valley Chardonnay has won 19 Trophies and 45 Gold Medals since 1990 including Best Chardonnay at the International Wine & Spirit Competition in 2000 and has flown in First and Business Class on some of the world's great airlines. The Yarra Valley Pinot Noir is also making waves and has twice won the Trophy for Best Pinot Noir at the Sydney Wine Show. The Gulf Station and Windy Peak Pinot Noirs are widely regarded as representing outstanding quality and value. In 1997, De Bortoli won Australia's most prestigious award the Jimmy Watson Trophy for Yarra Valley Shiraz and in 2002, Gulf Station Riesling won three trophies at the Melbourne Wine Show. These are just a few of many highlights for De Bortoli Yarra Valley.

In 2002 the De Bortoli family added a Hunter Valley vineyard and winery to its ever-expanding portfolio. This was a strategic move to enable De Bortoli to produce premium wine from the renowned winemaking region, and increase the company's profile in Sydney and overseas markets. The Hunter Valley has deep historical significance being Australia's oldest wine growing region producing wines of a distinctive character and personality that complement the wines grown at De Bortoli's Yarra Valley and King Valley vineyards. The focus will be on the winestyles the Hunter has made famous, its unique Semillon and Shiraz that develop gracefully in the bottle as well as Chardonnay, Verdelho and Merlot.

The 26-hectare property includes an 800 tonne capacity winery and produces the De Bortoli Hunter Valley and Individual Vineyard series. The existing vineyard plantings of 19 hectares are in the process of being reorganised with some varieties not suited to the region being removed and replaced with more suitable varieties including classic Hunter stalwarts Semillon and Shiraz. De Bortoli purchased the adjoining 100 acre block with the view to future plantings and also another nearby vineyard with mature Semillon vines planted back in the 1960s.
