$16599each $1991DOZEN EACH DOZEN Grapes for Diana Madeline are grown to the most fastidious biodynamic farming principles, crucial for optimising quality of fruit and intensity of flavour while infusing the wine with velvety structure and ultra high quality tannins. The vines were originally planted to granitic soils in the central Willyabrup subregionb by Di Cullen in 1971, the meagre yields of two tons per acre sublimate into harvests of the most concentrated fruit. Grapes are picked at baumes ranging from 12Ëš to 13.8Ëš, gently handled and sorted with great care. Varietal components are inoculated to natural yeasts and separately vinified. The finished wine was matured fourteen months in a selection of the highest quality French oak barriques.

Very concentrated deep red colour. Already very complex, clean and rich blackcurrant aromas with a touch of blackberry and vanillin oak. The complex amalgam of liquorice, fennel and multi fruit flavours, including plums and mulberry, red currants and blueberry, are backed by just the right amount of clean oak. Long and persistent. Langton's Exceptional Classification. Diana Madeline is one of Australia's great icon wines, crafted from fruit grown to one of Margaret River's earliest sites. The vines, planted in 1971, provide a scant two tons per acre, yielding grapes of amazing concentration. Cullen have returned to the old world practice of basket pressing. To their delight, they have found that this leads to the extraction of only the finest tannins. A stately construct in statuesque Bordeaux styling, deeply coloured, the extraordinary depth of flavour reflects an outstanding quality of fruit.

A patented Mistral® apparatus removes the leaf material and infertile berries from the vineyard, providing cleaner bunches. A luxurious cepage of Cabernet Sauvignon and Franc, Malbec, Merlot and Petit Verdot, the grapes are carefully sorted before fermentation to indigenous yeasts and malolactic bacteria. No acid or cultured yeasts are added, achieving a wine with a sense of place through a completely natural process. Components are separately vinified before being treated to nineteen months maturation in a selection of new and seasoned French oak barriques.

Delicate crimson, garnet ruby hue. Plum, mulberry and blackcurrant aromas cascade out of the glass accompanied by elevated notes of violet and rose. Savoury ironstone and tobacco complete the classic aroma profile of Diana Madeline. Fine grained tannins with uplifting and sustained fruit notes. Defined by altitude, Orange is one of Australia's highest and coolest regions. A capricious grape to grow, Merlot demands a regime of perfect conditions to achieve an even berry set. The growers of Orange have dutifully obliged over many years, painstakingly developing this new but salubrious winegrowing precinct for the realization of world class Merlot. Fruit sets very well and bunch thinning is undertaken to limit the yields. Cumulus will handsomely accompany roasted Mediterranean vegetables with lamb and wild mushroom medley.

$1899each $227DOZEN EACH DOZEN Climbing Merlot is an active reference to the high altitude vineyards whence fruit is sourced. It also defines the Cumulus team's ongoing quest for higher achievement. Parcels of Merlot are harvested and crushed, destemmed and cold soaked for a fortnight. Ferments begin at cooler temperatures and are treated to gentle pumpovers as they peak at 28C. Time spent on skins is managed for optimal tannin extraction, pumpovers are gradually decreased to wetting the cap once daily. Upon completion, batches are treated to an extended soak, pressed off skins into a selection of French oak barriques for a year's maturation, before assembling, fining and filtration into the finished wine.

Medium red colour. Lifted and bright, fragrant with sweet plums, leafiness, hints of dark chocolate and subtle oak tones. A mouthful of ripe dark plums, black cherry and a hint of herbs layer beautifully in a medium bodied, elegantly structured wine. The smooth as silk palate finishes with spiced, earthy notes and dark chocolate.

Cottage Block is well sheltered from the cool north westerly winds of Pipers River, a slightly warmer microclime which produces small yields of intensely flavoured berries. Most of the harvest is destemmed, macerated and hand plunged, racked to a high proportion of new French oak barriques for malolactic and ten months maturation. The best barrels are treated to a further sixteen months before release. Darkly spiced beetroot and rhubarb, a firm tannin framework underpins refined acidity, a conspicuous freshness and vibrant lift to the finish and magnificent length.

Nestled in a cocoon of mixed vegetation and rolling hills, Dalrymple enjoys a unique and seductive aspect shared by only a few boutique vineyards within the Pipers River region. This succulent and fresh, exclusively Pipers Brook Pinot Noir is fashioned from grapes that are chosen for their juicy flavours of ripe red berries, raspberry and plum. A natural ferment is encouraged and Burgundian techniques are applied, culminating in a complex yet harmonious wine that sings of fresh fruit and offers supple, velvety textures, built to be fully approachable while young.

Low bunch numbers and medium bunch weights, a perfect vine balance that translates into perfect fruit. Some blocks are divided into smaller parcels thereby maximising options at assemblage. A number of traditional techniques are employed, hand sorting the fruit, cold soaking, whole bunch inclusion, hand plunging and wild ferments, all designed to create wines that combine fruit intensity with layers of texture and persistent varietal character. The finished Dalrymple is aged for up to a year in a mix of seasoned and new French and American oak barriques.

Vibrant dark rose petal colour. Perfumed nose of rose petals and lavender, fresh strawberries and raspberry complemented by pomegranates and rosewater. The fruit is supported by delicate spice and dried savoury herbs, the oak is balanced and sweet. A warming, vibrant palate offering fleshy red cherry characters and mouth filling textures.
