A parcel of the most pristine Adelaide Hills Cabernet Sauvignon tips the scales of this ambitious but remarkably integrated cépage, a generous inclusion of Cabernet Franc contributes savouryness and luscious berry fruit, Merlot, Malbec and Shiraz add complexity and flesh to achieve a well rounded, profoundly enjoyable red wine. Reuben represents a germane accord to a diversity of cuisines, the evocative mix of grapes serve to ingratiate each other as they coalesce into an engaging fusion of exuberance and style.

The Adelaide Hills hamlet of Paracombe, settled circa 1840 and now booming with a population of 365, was named after the headwaters of Little Para River. Initially a successful sheep station, the site of Paracombe Vineyard was destroyed by Ash Wednesday's Fire before being established to vine. Hand picked grapes from the Drogemuller property in Adelaide Hill, are vinfied alongside choice parcels harvested by neighbouring, specialist local family growers. Fashioned predominately around a backbone of six different clones Cabernet Sauvignon, the assembled Reuben is matured eighteen months in a selection of seasoned and new French oak hogsheads and barriques.
 
Intense colour, deep ruby tones, bright robes in the glass. Lifted aromas of poached rhubarb and plum, delicate hints of oak, leatherwood and licorice spice. The palate is generous, finely structured with rich, sweet fruit driven flavours, fresh raspberries and loganberry, interspersed by savoury, spicy notes.

Crafted around a backbone of intensely flavoured, estate grown fruit, supported by hand chosen parcels from exceptional vineyards around Redhill. A combination of mature rootstock and meticulous vineyard management are essential to the ultimate quality of wine. Crop thinning to reduce yields while maximizing quality of harvest is central to the viticultural program. Vines are trellised to the Lyre system, which allows them to find their own natural balance. Bunches of Pinot Noir are completely destemmed into traditional, open top, two tonne fermenters, for a decidedly Burgundian style of vinification, followed by a term of eleven months on lees in a high proportion of new French oak barrels.

Complex floral bouquets of dark cherry, spice notes and subtle savoury new oak characters.Powerful dark cherry and black fruit flavours, a well integrated palate seasoned by spicy, savoury French oak. Fine grain tannins provide weight and structure, an elegant Mornington Pinot Noir to decant and breathe before serving alongside the finest gourmandise.
Paringa Estate Shiraz

Within Paringa's superlative Mornington estate property, lie three precious blocks of vine, yielding unique harvests of the most extraordinary Shiraz. Each parcel is picked on the specific day determined by individual ripeness, to be separately vinified in a bespoke manner, aimed at preserving the individual character of terroir. Assembled into a wine of balance, power and restraint, Paringa articulates the cool climate compexity and fragrant cherry spice of Mornington, while offering the substantive structure and chocolate fruit richness of extra fine Shiraz.

Lindsay and Margaret McCall began their incredible journey in 1984, with the purchase of a derelict orchard on Paringa Road at Red Hill. Their requirements included north facing slopes, a permanent running creek and adequate wind protection. The vines were established to a distinctly unique Lyre or U trellis system, employing an elaborate steel frame assembly. The site is now producing harvests of Mornington Peninsula's finest fruit. Bunches of Shiraz are destemmed into traditional, two tonnes open top fermenters. Upon completion, batches are racked to a selection of seasoned and new French oak barriques for eighteen months maturation.
 
Purple scarlet colour. The distinctive cracked black pepper/ spice characters of Shiraz, plums, brambleberry and notes of cassis. On the palate, spicy blackberry and plum fruit flavours are supported by a length of firm yet soft, fine grained tannins. This is one of Mornington's finest renderings of Shiraz, a wine that will continue to evolve, yet can be enjoyed young alongside the finest cuisine.
