Pertaringa Undercover Shiraz

Pertaringa are fortuitously positioned at the foothills of Mount Lofty Ranges, the perfect location for grapes, by virtue of a temperate environment and deep clay loam soils. Undercover is a reference to the McLaren Vale tradition in supplying other regions with bespoke parcels of fruit, ultimately to be vinified into some of Australia's most favourite wines. Undercover is an old vine Shiraz, selected from Pertaringa's five decade old vineyard, hand crafted by winemaking supremos Geoff Hardy and Ben Riggs. Undercover is the essence of McLaren Vale Shiraz.

Pertaringa is surrounded by magnificent stands of native gum trees. All vines are pruned to control vigor and crop levels using a combination of regimens. In the summer the vines are topped and trimmed cutting the shoot tips off to encourage lateral growth and make the vines easier to access. Ironically, Pertaringa's Shiraz was initially sold off to Hardy Wines, proprietor Geoff Hardy's family company, to make port and to exchange for other wines as payment. Today Pertaringa's old Shiraz vines make the finest full bodied reds of the region and are highly sought by leading companies for their flagship wines. The most superior parcels of estate fruit are set aside for the Pertaringa label.
 
Deep plum ruby colour. Exuberant fragrances, aromas of dark cherries and blackberry. A complex array of lifted fruit flavours, an inky concentration, the palate delivers waves of vibrant satsuma plum, black cherries and beetroot that interplay with freshly laid asphalt and earth. In archetypal McLaren Vale style, silky, lively mouthfeel, framed by savoury elements. Fine grain French oak tannins keep the wine on course to deliver a persistent finish.

The brilliant maritime climes of McLaren Vale yield a richly styled Cabernet wine of penetrating fruit characters and firm but assuaging tannins. The people behind Pertaringa are amongst the most eminent Australian wine industry identities, viticulture on the Pertaringa vineyards however, remains a very hands on affair. Vines are closely managed for trim harvests of small but intensely flavoured Cabernet grapes, a concentration of berry characters in the juices and a measure of solid yet refined tannins within the skins.

Dark garnet colour. Dense aromas of blackberry and sweet black plum, violets and cassis are complemented by hints of dried herbs and lavender. Exquisitely balanced palate brimming with cassis and dark bramble flavours, dark currants and green varietal herbaceous notes, supported by broad, grippy licorice tannins. A match to slow roasted, rosemary lamb.

Established by industry doyen Len Evans, the Petaluma vineyards are at the very heart of Coonawarra, invaluable winegrowing terroirs which are infused by the mineral rich terra rosa soils and stimulated by the balmy maritime breezes of the Southern Ocean. A fully Certified Organic Shiraz, picked off vines which have been husbanded to a holistic, environmentally sustainable viticulture, spicy, brooding and engagingly aromatic, a long dry red with elegant velvet tannins, peppery plum fruit characters and piquantly perfumed, cool Coonawarra finish.

The nation's most long lived Merlot, a regional beacon of the varietal since since inaugural vintage of 1990. An assemblage of the best parcels from the distinguished Evans and Sharefarmer Vineyards. Both these mature sites yield a precious harvest of the most outstanding fruit. The palate is full, luscious and rich with loads of black fruits and cedar oak. A fully fleshed, immaculately detailed Merlot of satin textures and the most amazingly affable tannins, mesmerisingly perfumed by the heady notes of creme de cassis, Coonawarra violet, eucalypts and mint.

Bunches of grapes are all hand picked, transported to the Petaluma Piccadilly wineworks, destemmed and partially crushed. Juices are inoculated to a choice Petaluma strains of yeast, once a day the ferments are drained off and gently pumped back. After three weeks on skins, batches are drained, the skins are gently pressed and the wine is gravity fed to a selection of new Alliers and Nevers oak barriques. A course of secondery malolactic is followed by two years of rest, regularly rack and returned for clarification, gravity settled and bottled without filtration.

Petaluma employs hand pruning and hand picking, foreign practices in Coonawarra, for an enduring red blend that's now an iconic Australian wine and regional benchmark.

Whole bunches are de stemmed, crushed and chilled into Potter heading down board or 1½ tonne open fermenters. The must is inoculated after three to four days cold soak. Potter fermenters are rack and returned each day, the juices are drained away from skins and pumped back up, refloating the cap. Open fermenters are hand plunged twice daily, ensuring the floating cap does not dry out. The sugar dry batches are drained off, skins gently pressed and the combined wine gravity fed with full lees to a selection of seasoned and new, French oak barriques. Upon completion of malolactic, components are rack and returned for an extended term of maturation, followed by the final cull and assemblage.
 
Deep intense colour. Complex nose expressing blackcurrants and plum alongside cedar, spice, classic leaf characters and graphite. An elegant Coonawarra style, the Shiraz adds a lovely sweet supple middle presence to the palate, important in a young wine. An impressive red wine to decant and to savour, the tannins are soft, sandy and abundant, a big brooding dry red which will sit happily alongside the best Coonawarra vintages.

Exclusively estate grown Cabernet Sauvignon from the Peter Dennis Nindethana vineyard at McLaren Flat on the eastern side of McLaren Vale. The beautifull property is fortuitously situated at the base of Mount Lofty Ranges where the soil, climate and rainfall are a bliss for viticulture. Fruit is vinified in traditional open fermenters followed by an old fashioned basket press and fifteen months oak maturation. An intense Cabernet nose of currant, sweet violets and cassis resolves on a mouth filling McLaren Vale palate, layered with lozenge and dark berry fruit characters.

Peter Dennis Grenache

Egerton Dennis made a major contribution to the establishment of McLaren Vale as an internationally renowned wine region. His son remains a hands on viticulturallist who knows every vine by name. An immensely satisfying Aussie style of Grenache from the Peter Dennis estate vineyard adjacent the preeminent terroirs of Tatachilla and Kangarilla Roads. Fermented on skins for optimal extractions before feeding through a gentle basket press, a year's maturation in Fench and American oak barriques achieves a brightly lit style of lifted cherry fruit and lithe, supple tannins.

Egerton E S Dennis settled on ninety acres of vineyard at McLaren Flat after serving in the RAAF. Ege pioneered the production of Mead and sold his crop of wine grapes to some of Australia's most eminent brands before founding his own label in 1971, with the object of converting the high quality fruit into pure, estate made wines. Since establishment, Dennis Wines have collected hundreds of medals and accolades at national and international taste offs, twice claiming the revered Bushing King awards for best wine at the McLaren Vale Winemakers Exhibition.

Grapes are harvested throughout the cool of early morning and vinified at 24C in open fermenters, treated to a continuous gentle agitation of the cap and twice daily pumpovers. After several days of ferment on skins, juices are run off to a basket press and returned to the free runs. Following completion of malolactic, Peter Dennis is matured for a year in a selection of American and French oak hogsheads.
 
Bright, dark scarlet colour. Luscious nose of coffee, cherries and plum, pepper, tarry earth and baking spice. Big, full bodied and soft to the palate, characterised by fresh fruit flavours of blackberry and plums, laced with black pepper, supported by a lean firm acid/ tannin structure helping to round out the finish. The ideal accompaniment to roast meats, grilled steak and hard cheese.

The Barossa stands amongst the great wine regions of the world, it's finest editions of Shiraz can express a magical diversity in flavour, style and texture. Parcels of fruit collated from mature, low yielding sites in the Stonewell, Light Pass and Vine Vale districts, are vinified and macerated on skins for up to a fortnight, along with some partial barrel ferments. The diversity of terroir is reflected in the finished wine, soils, elevation and vine age vary from one site to the next. After pressing and clarification, Eight Songs is matured in completely new French oak hogsheads for eighteen months, followed by a further period of bottle ageing under the Peter Lehmann cellars before release. Dark cherry colour, garnet rim. Lashings of dark chocolate and black plums with just the first hints of attractive bottle development. The palate shows dark plums, choc/ mocha notes with hints of vanillin undertones. The seamless integration of opulent fruit and velvety tannins creates an elegant expression of Barossa Shiraz at its sensuous best. Eight Songs resonate alongside rare beef or roast game, making sweet music alongside aged cheddar or stilton.
