Isolation Ridge are part of a larger wool growing enterprise. The decision to diversify the farm and plant vines came after a tour of French vineyards and two vintages worked at Bordeaux's Chateau Senejac. The Isolation Ridge vineyard is managed to organic viticultural practices which is reflected in the depth and concentration and palate weight of the finished wine. An elegant, tightly knit Shiraz wine that unfolds to reveal opulent flavours and savoury stylishness, the fruit of meticulous care in the vineyard and winery.

Shiraz is sourced from mature vines planted to the Isolation Ridge vineyard. The property sits on an undulating north and east facing slope on ancient duplex soils of gravel and loam over clay sub soil. Vines are trained to Scott Henry trellis, enhancing sunlight penetration of the canopy for optimal ripening. Fruit is vinified as long and as slow as possible, at temperatures not exceeding 30C in open pot fermentation tanks, allowing the cap to be worked by plunging and gentle pump overs. An extended maceration is employed for optimal extractions. The finished wine is aged in 500 litre French oak puncheons, contributing textural complexity without compromising the opulent natural fruit flavours.
 
Bright red plum. Concentrated aromas of plum and red pepper, an earthy dusty ironstone character. Intense flavours of red cherries, chocolates and plum, complemented by savoury complexity and structure with subtle oak integration supporting the long and fine palate. Fraser Gallop have successfully tamed the assertive tannins of sanguine Margaret River Cabernet with the inherent palate richness of the gentler Merlot. From unirrigated blocks yielding concentrated fruit, treated to the latest Turbo pigeur technologie from France, a lavish process which can pump whole intact grapes without grinding pulp and skins, leading to better homogenisation and extraction, translating into a wine of great vigor. Hand picked fruit is destemmed with minimal crushing to keep the berries whole. Chilled to 8C for cold soaking into closed fermenters, designed with a one-to-one ratio of height and length, just great for colour and flavour extraction. The ferments are pumped over daily using a turbopiguer. On skins for ten days, tasted regularly to monitor tannin, before pressing off skins through an airbag tank press. Pumped to French oak barriques from a number of Bordeaux cooperages for malolactic, barrels are racked twice over ten months maturation and development. Treated to fining trials for essessment of the final balance, Fraser Gallop is bottled unfined after a cross flow filtration.
 
Bright crimson, ruby hues. A nose of red fruits and plum, mulberry and cranberry, floral notes and violet, the trademark Wilyabrup Cabernet dustiness over subtle oak adds complexity. The palate is soft and approachable with juicy plum and pomegranate flavours. Consistent, grainy tannins not unlike the astringency of cranberry juice. Background oak allows the fruit to shine, acidity and alcohol levels are in balance.

Inspired by the great Crus of Bordeaux, the aim is to build complexity within a single vineyard wine, to allow the fruit to shine, as complemented by the finest oak, a Cabernet of profound structure, polish and finesse. The inclusion of small portions Merlot and Malbec, Petit Verdot and Cabernet Franc, are treated to a regimen of cutting edge and old world vinification techniques. Fraser Gallop's superlative Cabernet vines are the highly regarded Houghton clone, sourced off unirrigated blocks yielding fruit with a massive concentration of flavours.

Fruit is hand picked, destemmed with minimal crushing and chilled to 8C for three days cold soak in closed fermenters. The wine was pumped over daily using a turbopiguer, allowing better homogenisation and extraction without damaging the berries. One batch is pressed off skins early to complete fermentation in oak, another is pressed off just after fermentation, a further component is pressed off just after fermentation and treated to macro oxidation for five days, another is left on skins for thirty five days. Each technique contributes something unique. The wines are transferred to French oak for malolactic and racked twice over the next year and a half, topped up every four weeks before assemblage.
 
Deep crimson colour with rich hues. Fraser Gallop shows a remarkable complex array of aromas of black cherry, dark fruits, bitter chocolate, forest floor earthiness and pomegranate molasses richness. Layers and layers of flavour provide for a seamless palate. Tannins are quite fine and chalky, providing great structure for aging. A wine of richness and elegance.
Freycinet Cabernet Merlot

Freycinet Vineyard is situated on Tasmania's sunny eastern coast, approximately halfway between Launceston and Hobart. The philosophy is to keep things simple, to make a wine as big and as beautiful as possible, to allow the fruit of the vineyard to express itself with little human influence. Vines were established 1980 and yield limited harvests of the most intense fruit. Cabernet Sauvignon, Merlot and Franc are treated to the extravagance of eighteen months French oak, for a succulent Medoc style, redolent of black currant and bramble, olives, herb and cedar perfumes.

Freycinet Louis Pinot Noir

Such are the favourable microclimes around Tasmania for the production of world class Pinot Noir, that they have attracted the interest and investment of some of the great Maisons of Burgundy. The soils that lay beneath the vines at Freycinet are terre extraordinaire, it works closely with the low altitudes, idyllic conditions and refreshing maritime winds, to encourage the vines into yielding the most extraordinary harvests of Pinot Noir. Louis brims with splendid cool climate characters, impressive for it's burgundian styling, while being unambiguously Tasmanian.

Optimally ripe, exclusively estate grown Pinot Noir, clones G5V15, 114, 115 and 777, are hand harvested off fully mature vines and treated to inoculation in rotary fermenters. A pure yeast culture is added and temperatures are allowed to peak at a very warm 32C. The musts are pressed after a week of ferments, whereupon Louis is transferred to a combination of new and prior use French oak barriques for a year's maturation.
 
Deep red in colour. Bouquet reveals ripe plum and red berry fruits with earth, truffle and perfumed cedar. The palate is full of spicy berry and plum flavours in combination with soft toasty oak and fine tannins. Thoroughly enjoyable whilst young, with the structure and concentration of fruit to mature gracefully.
Freycinet Pinot Noir

Freycinet Vineyard lies on a namesake peninsula in northeast Tasmania. Situated on the 42nd latitude, the property enjoys a unique microclimate. The long growing season extends into May, combining much sunshine and warm days, winter rains with no frosts, ideal for the production of excellent quality cool climate fruit. The vineyard sits a hundred metres above sea level, at a distance of twenty kilometres from the coast, the climes here are very maritime. At harvest the grapes are bursting with flavour.
