Ron Angas established the illustrious Mount Edelstone vineyard in 1912, the sacred site was eventually acquired by the Henschke family and has since been the source of the nation's most memorable vintages. Cuttings were taken from Mt Edelstone in the 1960s for replanting on Hutton Vale Farm. Cabernet Sauvignon arrived somewhat later, a single five acre block planted by John Angas to challenging soils which yield less than a tonne per acre. An exquisitely small batch Barossa Cabernet of marvelous intensity and the most profound provenance.

Grapes are all hand picked and destemmed into small open fermenters for a week of vinification, pumped over twice daily for optimal extracts before transfer to a high proportion of new French oak hogsheads for two years maturation.
 
Opaque purple red robes. Barossa blackberry, dark chocolates and mint, sweet tobacco leaf, leather and cigar box notes. Rich blackberry and mints dominate the palate, Eden Valley minerality over a support of gravely, fine grained tannins, balanced by perfectly pitched acidity to resolve on a refined, polished finish.
Hutton Vale Farm Grenache Mataro

A block or two of tough, inhospitable soils on the Hutton Vale property were planted to Grenache in the 1960s. Growing conditions were so disfavourable that many of the vines failed and had to be replaced, a highly opportune setback which turned out to be a windfall, as the recalcitrant parcels were mistakenly planted with Mataro, the stylistic soulmate of Grenache. Fermented on skins for a week, followed by two years in seasoned and new French oak puncheons, loaded with red and black fruits, savouryness and licorice, a fine tannin line, supple and soft.

The auspicious Shiraz vines at Hutton Vale can be proud of the most distinguished lineage, tracing their forebears through the illustrious Mt Edelstone property, back to the original James Busby clones, sired by Yalumba's Samuel Smith in the 1850s. The quality of fruit as it ripens on the vine really needs to be seen to be appreciated, tiny berries with supple leathery skins, open fermented and filled to a luxuriously high proportion of new oak hogsheads for two years maturation. Eden Valley Shiraz of the highest provenance, august yet elegant, resplendent and refined.

A rich cepage of the requisite Bordeaux varietals which have found a new home amongst the silty, alluvial clays and sands between Bibbona and Bolgheri in Tuscany's west. The wine industry press have been unanimous in their enthusiasm for Pino di Biserno, which improves remarkably with each new vintage.

Grapes yielding a mere 1½ bottles are selectively hand picked off vines grown to very special soils, complex silts, alluvial sands, a high percentage of clay and a conglomerate rich in minerals, unique influences of terroir which are recognizable in the finished wines, all very similar to those found in Bordeaux. Berries are further sorted upon arrival to the Biserno wineworks, de-stemmed, gently crushed and vinified for three to four weeks at 28C before being treated to full malolactic in a combination of barrels and fermenters. Matured twelve months in a selection of French oak barriques and vats, before the final assemblage, bottling and a further six months ageing under the Biserno cellars before release. Alcohol 14.5%
 
Deep bright ruby red in colour. Intense nose with ripe berries, dark chocolate and spicy oak. The concentration of fruit is supported by fine, ripe tannins, lending structure and balance for a harmonious wine with a splendid, generous middle palate before along and elegant finish.

Since inaugural release Ingoldby have enjoyed a stunning run of success at national wine shows. Their fruit has been the secret ingredient in many of Australia's most esteemed wines. Cabernet Sauvignon in particular has attracted wide critical acclaim with every release. Grapes are destemmed and crushed, the must is fermented warm in ten and twenty tonne static and rotary fermenters to extract the rich colour from the skins, adding palate weight and softening the tannins. Batches are pressed off, some components are matured in a combination of seasoned American and French oak hogsheads for a year, a parcel is kept unoaked to retain vibrant fruit focus.
 
Deep red with purple hues. Aromas of dried plums and black cherry with subtle integrated oak. The palate of this rich, well balanced, full bodied red wine is long and captivating, offering blackcurrant flavours, liquorice allsorts and spice. The finish shows lovely length with savoury tannins. Magic with rib eye steak or lamb cutlets under red wine jus.

The Ingoldby name has been an essential part of McLaren Vale viticulture for over a century. Choice parcels of Shiraz are sourced from premium McLaren Vale sites, including the Ingoldby family property at McLaren Flat. Fruit is earmarked on the basis of intense flavour and fine tannins. Parcels are vinified separately in a mix of fermenters and pressed off skins upon completion. Some components are matured in seasoned oak barrels to derive complexity, the balance remain unoaked to return vital fruit characters and preserve freshness. Prior to assemblage, each component is assessed to strike the perfect balance of lifted fruit and gentle tannins, supple oak and fine complexity.
 
Deep purple/ red colour. An enticing nose redolent of dark summer berry compote with hints of chocolate. Subtle oak lets the fruit do the talking and plays a supportive, integrated role. The palate is rich and round with purple fruits, dense but supple tannins contributing power with finesse, balance and good length.
Innocent Bystander Pinot Noir

For those who like their Pinot Noir to be long, savoury and lean, with oodles of fruit to wax lyrical about. A collation of harvests from the Sexton and Tarraford vineyards, with contributions from a fraternity of superior local growers. The uncrushed grapes are wild yeast fermented and treated to a light carbonic maceration in the manner of a Beaujolais, achieving a vigorously fruit driven Pinot Noir with crisp acids and stirring aromas. Enjoy alongside both versions of rare breast or crisp skinned duck, the perfect match to tapas and Al fresco faire.

Innocent Bystander seek Pinot Noir grapes with perfect ripeness and sugar balance. Vineyards are selected for their high diurnal temperature range, to achieve wines with high natural acidity and low pH. All grapes are hand picked, a large portion of the fruit is included as whole bunches, uncrushed and unstemmed into open top fermenters. A term of cold soak at lower temperatures is followed by inoculation, mainly through the action of wild, indigenous yeasts. Variations of pigeage and remontage are applied. The major part is treated to malolactic and several months in French oak barriques to enhance complexity while infusing mouthfeel and texture.
 
Medium purple hues. Nose of dark cocoa and poached cherry, hints of truffle oil and tobacco leaves, wet earth and berries of the forest. Ripe cherry and mixed fruit compotes, bramble with a hint of tar and seasoned grilled meats. A round fresh palate showing rhubarb and radicchio over the twang of chalky tannins before a slippery, rich and slightly tart finish.
Innocent Bystander Syrah

Very much in the style of a Rhône Syrah, aromatic, elegantly structured and suave, offering violet and white pepper notes, blueberries and soy over fine cherry tannins. Just a dash of Viognier imparts ethereal, teasing perfumes of honeysuckle and turkish delight. Fruit is hand picked from choice vineyards in the Pyrenees and Yarra Valley, treated to a course of old world style, whole berry ferments. Syrah is a great food wine, match with capsicum recipes and wild rice, the innocent bystander loves to feed!

The team at Innocent Bystander work with like minded growers to assemble the finest fruit. Components from great Victorian vineyards are determined each year to create a consistent style from one vintage to the next. Grapes are destemmed into small open fermenters, a deliberately small portion is incorporated as whole bunches. Treated to a cold maceration before a mainly wild vinification, ferments are plunged and drained regularly, while some experience a post ferment maceration to soften tannins. The wine is pressed, settled and gravity drained to a selection of exclusively French oak barriques and puncheons for malolactic and extended maturation.
 
Bright garnet red. A nose of orange zest and five spice, juniper and campari, cherry ripe, red summer berries, dark chocolates and cocoa. Firm bright tannins in support of brooding textures, wild blackberries and raspberry, a long savoury finish. Yarra fruit delivers spice and backbone while the Pyrenees contributes spiced plum and chocolate characters.
Insoglio del Cinghiale IGT
Tuscany

From fruit grown to three different plots, west of the road that joins Bibbona to Bolgheri. Soils are sandier and climes slightly warmer during the summer months, conditions which are ideal for growing Syrah, which accounts for a third of Insoglio del Cinghiale. An intense ruby red colour, the nose is powerfully fruit driven with hints of liquorice and spiced oak. The palate is exquisitely balanced, harmonious, richness of fruit supported ripe, round tannins. Its peppery character makes it perfect with game, such as the local wild boar after which it is named.

The entry level wine from Campo di Sasso at Bibbona, part of the greater Tenuta di Biserno estate which stretches between Bibbona and Bolgheri in Tuscany's west. All harvesting is selectively done by hand into small 15 kg crates. Grapes are strictly sorted again upon arrival to the Biserna wineworks, de-stemmed and gently crushed. The musts are vinified over a course of three weeks at 28C. A tenth of the batches are treated to malolactic in oak barrels, the remainder in fermenters. Components are matured four months in a selection of new and second use French oak barriques, followed by the final assemblage, botttling and a further three months ageing before release.
