From two priceless blocks of Shiraz, some of the oldest productive vines in the world, a mere ten hectares of gnarled old veterans which yield a precious harvest of tiny, parched berries. Old Hill established 1880 and Old Paddock planted by Mount Pleasant patriarch Maurice O’Shea in 1921. Only ever vintaged in the finest years, fruit is treated to a traditional open top ferment and fifteen months maturation in a high proportion of new French oak barriques. A brooding, complex, multi dimensional Shiraz, brimming with personality and steeped in Hunter Valley history.

Deep purple colour. Perfumes of dark fruit, blackberries and mulberry, seasoned by lovely liqorice notes, spices and plum. Dense and intense palate of amazing effusiveness and length, layered with ripe, juicy fruit characters, a wine of exquisite linearity and refined balance, framed by a supple veneer of cocoa vanilla oak and supported by a cradle of ripe, pliant tannins.

To this day, Mount Pleasant continues to preserve the heritage of labels which played a role in the evolution of Australian wine. Slightly bolder in palate structure than it's regional siblings, Philip is the classic style of Hunter Valley Shiraz, a name that's been relied upon for decades. An affable wine, without excessive tannin or alcohol, exhibiting the complexity and inimitable charm of the Hunter. Generous and smooth, articulating earth and spice, dominated by masculine fruit characters. Every release guarantees a splendid Philip, a Shiraz with a tradition of excellence.

Mount Pleasant is situated on the slopes of Brokenback Ridge in Hunter Valley. Inaugurally released in 1965, Philip Shiraz maintains the tradition of extended oak maturation and bottle age before release. Vinification normally begins around February, fruit is harvested and crushed into a mix of open top and static fermenters for three days of cold soak. The musts are inoculated and batches are treated to a course of ten days plunging and pumpover, extracting optimal flavours, colour and tannin. Components are pressed into a selection of seasoned and new oak barrels for completion of ferments and fifteen months maturation, before assembling into the finished wine.
 
Bright crimson red. Varietal and regional aromas of ripe red and black fruits, black cherries with plum over an earthy, savoury complexity complemented by subtle chocolate oak. The medium bodied, savoury palate shows generous red fruit flavours, plum and blackberries beautifully supported by fine grained tannin, the chocolateyness of it's dashing oak complexity. A sophisticated wine of refinement, subtlety and great length.

When Maurice O'Shea bought the Rosehill property with the support of the McWilliam family in 1946, he was looking for a similar site to that of Mt Pleasant. What he found was a parcel of rich, volcanic loam, idyllic soils which he planted to quality rootstock. Rosehill endures as an articulate and engaging expression of the Hunter Valley style. A beautifully structured Shiraz, showing excellent fruit to oak balance, fine tannins and a persistent, savoury finish, a timeless confirmation that O'Shea got his site selection pretty right.

Rosehill Shiraz can boast a succession of memorable vintages which have claimed multiple trophiess and gold. Grapes are picked off mature vines on the thirty hectare Rosehill Vineyard at one of Pokolbin's highest elevations, berries are gently destemmed without crushing, musts are held for two days cold soak prior to inoculation. Vinification begins at cooler temperatures in headed down fermenters, pumped over twice daily, skins are eventually submerged and temperatures allowed to gradually warm over the course of a fortnight. Upon completion, batches are pressed and transferred to a selection of seasoned and new, French and Hungarian oak barrels for twenty two months maturation.
 
Dense crimson with brick red hues. Rich in plummy fruit aromas, hints of leather and spice. Elegantly perfumed sweet lifted ripe raspberry notes over spicy dark chocolate oak, complimented by earthyness and nut. A savoury palate dominated by red berry fruit and mocha oak flavours. The tongue is enlivened by sweet cherries and black fruits which lead into complex, integrated plum and cedar characters.

Parcels of Pinot Noir are sourced from superior vineyards throughout Marlborough's Wairau Valley, including Mount Riley's very own, splendid Seventeen Valley vineyard. Diversity of terroirs and clonal material achieves a complex and complete wine with great fruit character and depth of flavour. The backbone of grapes comes from vines planted to stony unfertile blocks, perfect for the production of intensely flavoured Pinot Noir. A spectrum of clones is included, UCD 5 and 6, 10/5 and Dijon clones 115, 118, 375 and 777. Bunches are cold soaked, fermented in small individual batches on skins and treated to several months maturation in a selection of fine French oak barriques. Alcohol 13.0%
 
Mid red colour, garnet/ ruby hues. Dark cherry and red berry fruit aromas are supported by hints of spice and earthiness. An approachable, elegant wine with soft tannins, delicious ripe red fruit flavours and concentration. Drinking well upon release, alongside salmon steak, escalope of veal or nicely dressed duck.
Mountadam Eden Valley Cabernet Sauvignon

A collation of parcels grown to good vineyards in the Eden and Barossa Valleys. The elegance of Cabernet picked off estate vines on the cooler ripening elevated aspects of Valley Eden, coalesce handsomely with the richness of parcels harvested from lower elevations. Open canopy management and moderate yields translate into a generously flavoured wine with lovely fragrances and sleek tannins. Mountadam were amongst the first to recognize Eden Valley as a superior mesoclime for Cabernet Sauvignon, now fully mature, they are now the finest cool climate vines in the land.

Parcels of Cabernet Sauvignon are vinified for a fortnight in open top fermenters while being gently pumped over to treat the fermenting juices back into the skins, extracting flavour and just the right amount of tannins. Upon completion, components are matured in a selection of fine oak barrels to integrate fruit characters and tame the firm Cabernet tannins.
 
Purple coloured with darker hues. Currants, strawberries and plum seasoned by varietal green leaf characters behind the deep blue berry fragrances. A well integrated palate of lively varietal fruit flavours, black cherry, cassis, cocoa and plums supported by subtle hints of vanillin, tobacco and fennel. A dry, lingering finish with fine cleansing acidity makes Mountadam the perfect match to braised beef and wide ribbon tomato pasta.
Mountadam Eden Valley Shiraz

Mountadam vineyard was planted to a rocky escarpment at the highest, most elevated, southeast edge of the Barossa. Importantly, the aspects which cling to the hillsides and high valleys have been chosen for their true continental climate. Most enjoy warm sunny days and cool evenings. An assemblage of Shiraz from the estate's home vineyard with parcels of fruit grown to good sites lower down the Barossa Valley floor. A rich, soft, drink now expression of Shiraz, Mountadam shows the elegance of the cooler Eden Valley and the traditional richness of Barossa.

The Mountadam site was selected by founder Adam Wynn for it's myriad of interesting meso climates and geological formations. The two vineyards from the Barossa floor at Greenock Creek and Nuriootpa have had a long association with Mountadam. They are both over forty years old, family owned and have always been hand tended. Fermented over the course of two or three weeks, juices are drained from skins daily and recombined to assist in extracting colour and flavour. Each component is vinified separately and assessed to create a wine which shows a balance of fruit and tannin, alcohol and length of flavour. Mountadam is aged for a year or more in a combination of new and prior use French oak barriques.
 
A deep red colour with vibrant purple tinges. The primary aromas are of cracked pepper and dark ripe plums with subtle spicy smokiness. Flavours are of cherry, dark chocolate and vanilla, tantalizingly sweet, creamy characters from the oak polishing out the spice, a firm tannin structure and persistent length of flavour.

A feast of fruit in rich Medoc styling, Cabernet Sauvignon and Franc, Merlot for measure, treated to a fortnight of ferments and several weeks of maceration for structure and complexity, followed by eighteen months in the finest, new French oak barriques. The poise and refinement of high Eden Valley fruit is at the core of this opulent accord, black currants and fleshy black plum, varietal capsicum and herbaceousness over the warmth of delicately perfumed cedar oak. A medley of persistence, seamlessness and statuesque grace.
