Cariñena is a Mediterranean heritage varietal which the Torres team resuscitated from the last known enclaves on old vineyards in Chile. The Garnacha Tinta component is grown in a region famous since the time of Roman Emperor Augustus, for producing the finest wines in the Mediterranean. This is a provocative wine for Australian tastes, with gritty tannins, tangy acids and a drying palate in authentic old world styling that's sure to stir lively conversation. A torrid, warming red that goes well with fried sardines, stuffed peppers or Iberian styled pizza.

Mostly Garnacha Tinta grown to the Mas Nerola vineyard in Middle Penedes and the Serra d'Almos in Montsant. A third of Cariñena from one of Torres most famous vineyards, the Les Muralles situated around the Conca de Barberà. This superlative vineyard produces Cariñena of exceptional quality. Cariñena is a rough grape from a broken home with many problems, mostly used for blending, ubiquitously grown around the Mediterrannean where it basks in the dry climate. When cultivated under trying conditions to poor soils, it produces robust wines of high alcohol potential, rich pigment and extract. Two weeks skin contact and aged for six months in a mix of American and French oak barrels.
 
Deep ruby colour with a hint of ochre. Rich complex Mediterranean aromas with exuberant notes of blackberry and spice. The fruit flavours are ample and generous, offering an engaging complexity as they develop into savoury, herbaceous characters. Velvety tannins support expressions of licorice and a concentratation of savoury fruit. Superb with pastas and roasts, casseroles or game, Asian and traditional Mediterranean cuisine.

A partnership between Torzi and Matthews, they stumbled across a small, frost pocketed hollow on beautiful Mt McKenzie in Valley Eden. Torzi Matthews fell in love with the area for its remoteness and diverse thin soils. Attraction to the site was immediate, it was clear that this patch would produce low yields of Shiraz which could translate into the luscious style of dry racked Italian Appassimento wines. There were plenty of detractors and lots of unsolicited advice. The vines went in, frosts came and yields were low, Frost Dodger was born.

A single vineyard wine grown to the chilly surrounds of Mt McKenzie in the Eden Valley, crafted to the ancient Italian tradition of racking grapes to concentrate flavours. Frost Dodger are crafted via non intervention techniques. A diet of composts, native grasses and flora is used for ground cover, low water imput and natural sprays for diseases. Grapes are gently destemmed, a third is included as whole bunches into open fermenters for a warm vinification to indigenous yeasts. Pumped over, hand plunged and basket pressed to oak for completion of ferments. The final wine is matured in a selection of seasoned and new, French and Hungarian puncheons and barriques for twenty months.
 
Deep red purple colour. A big bouquet of concentrated fruit, berries, pepper and plum, remarkable intensity of natural fruit sugar characters from the appassimento technique. Licorice and pepper, an remarkable intensity within a singularity of power, elegance and finesse. Its solid palate, drenched in thick bramble flavours, rejuvenated by splendid, refined acidity, supported by gossamer velvet tannins.

The Torzi Matthews team work to a formula that low yields translate into big, flavoursome wines. They selected a property in one of the most inhospitable parts of Eden Valley, where unending toil and frigid climes realize meagre amounts of parched berries each vintage. From grapes grown to the chilly surrounds of Mount McKenzie, incorporating the undried parcels of fruit earmarked for the estate flagship Frost Dodger, Mathews and Torzi craft an intense yet acessible construct of Eden Valley Shiraz to match bold Mediterrannean cuisine.

The Mt McKenzie site is subject to traditional biological farming, a diet of composts with native grasses and flora as ground cover, low water input and natural sprays to keep disease under control. Vines eighteen years of age are grown to clay loam over a shaley schist rock bed, trained to single wire trellis. A very minimalistic handling includes a component of whole bunch, open top vinification and wild yeast ferments, soft pumpovers, hand plunging and an old fashioned basket press. Components complete their ferments and eighteen months maturation in prior use Frost Dodger barrels and seasoned French Cadus et Radoux oak barriques, before bottling, unfiltered and unfined.
 
Bright scarlet colour. Bursting with deep aromatics, perfumed, floral notes, dark fruits and sweet spice. Vibrant palate of mulberry, rasberries and cherry, espresso and chocolate, festive spice and all things nice, finishing long and complete on a length of fine grained tannins. Expect all that the Torzi Mathews style represents, alongside braised goat or piquant buddhist casserole.
Totara Pinot Noir
The Totara tree is endowed with strength and durability, native to New Zealand, it has long been revered by the Maori, as well as early European settlers for its diverse qualities and usefulness. Totara's enthusiastic team are focused towards producing food friendly wines which express their regionality and are a textbook of varietal definition. Totara Pinot Noir is true to it's Rotorua origins, displaying a full bodied, earthy palate with layers of fruit and ripe tannins, just like the eponymous tree, solidly structured and built for longevity.

Totara employ the most adroit vinification techniques to construct wines of profound varietal and regional expression. The chilling winds of Island South serve to reduce fruit set and limit yields, temperate summers provide ideal conditions for a slow and complete ripening. Small intensely flavoured berries translate into a wine of great colour and concentrated flavour. Grapes are hand harvested and cold soaked up to five days prior to fermentations. The batches are vinified in open vats for an average of seven days, initially treated to a course of daily cap plunges, gradually increasing to three per day at peak of ferment. The completed wines are matured under a mix of tank, oak staves and French oak barrels.
 
Deep ruby/ garnet colour. Dark cherry, wild thyme and spice with a hint of candle smoke to the bouquet. A rich and lively Otago wine with juicy acid and fine tannins. Dark cherry and spice characters are complimented by smoky French oak. Soft and approachable, before leading to a velvety, lingering finish. A gourmande's delight, will gladly accompany roast guinea fowl or seared and caramelized chicken liver bruschetta.
