There are six Te Kairanga vineyards, each with its own distinctive characteristics, suited to different varietal grapes, clones and viticultural management. The focus is always on maintaining a sustainable environment, employing holistic techniques to return the largesse of farming to the land, fauna and flora. Nine different clones Pinot Noir are all hand picked and separately handled, cold soaked and inoculated for a temperature controlled vinification. Upon completion, components are treated to ten months maturation in a selection of seasoned and new French oak barrels.

Light purple around a scarlet core. A fragrant bouquet of cherry, florals and spice, rhubarb, cocoa and thyme. A soft palate that's full of red fruit characters, currants and freshly grated beetroot, cranberries and spice. $8199each $983DOZEN EACH DOZEN Bullnose Vineyard is named after the pre-1928 horseless carriage owned by proprietor Morris Cowley, nicknamed Bullnose due to its distinctive radiator. Always a single vineyard wine, over time its make up has evolved from the original single clone of Shiraz to an assemblage of several. All the parcels are hand picked, kept separate and handled in a traditional manner. Bunches are destemmed and crushed, treated to a warm, hand plunged vinification with a course of extended skin maceration before pressing and completion of secondary malolactic ferments. The individual wines are run to a mixture of new and seasoned French oak barrels for fifteen months maturation, egg white fining and assemblage.

Dark crimson colour. Complex aromas of boysenberry, raspberry, red plum, red roses and allspice. The palate is full and even with great balance and purity of varietal expression. Powdery tannins provide structure and a long, elegant finish. Te Mata will continue to evolve rich harmonies and complexity, a gourmande's accompaniement to eastern spiced lamb or rosemary venison bangers.

The wines remain on the property from picking to bottling under exclusive control of the dedicated team. Temple Bruer has long held to the philosophy that responsible farmers, of which winegrowers are merely one example, should aim to minimize chemical inputs into the environment. Additives-free vinification is applied to Cabernet Sauvignon, Merlot and a component of Cabernet Franc grown to the Temple Bruer estate vineyard. Treated to an open fermentation, gentle pressing and maturation in French oak casks. At bottling, Temple Bruer was filtered to ensure long lived quality.

Deep red colour. Opens with sweet bouquets of cassis, gumleaf and cocoa, mulberries, red forest berries and mint, regional characters of earth and musk. The palate is full of flavour, beautifully balanced and well supported by fine, mouth coating tannins. Temple Bruer finishes dry on a note of lingering earth and cedar characters.

Bright ruby red colour. Bouquet of maraschino, red cherries and fraises des bois, wet barnyard and curls of bark. Vibrant palate layered with wild strawberry and jelly fruit flavours, red apple aspic, cherries and fresh mint, its length of delicate tannins in support, framed by the coconut and vanilla of supple background oak.

Treated to the good old fashioned vinification process of open ferments and frquent pumpovers, completion of malolactic and a term in American oak to soften the palate and tame the tannins, without the addition of sulphur or preservatives. Piero Antinori, the icon vintner who created the concept of super Tuscans in the 1970s, was inspired by unique soils along the Upper Maremma to plant Biserno's specialty, the esoteric Cabernet Franc.

$37999each $4559DOZEN EACH DOZEN Grapes yielding a mere 1½ bottles are selectively hand picked off vines grown to complex silts, alluvial sands, a high percentage of clay and a conglomerate rich in minerals, all very similar to those found in Bordeaux. Berries are further sorted upon arrival to the wineworks, de-stemmed, gently crushed and vinified for three to four weeks at 28C before being treated to full malolactic in a combination of barrels and fermenters. Matured fifteen months in a selection of French oak barriques before assemblage, bottled and treated to another year of ageing under the Biserno cellars before release. Alcohol 14.5%
